The apple and chicken sausage pizza is full of great fall flavors - and has a fun macaroni and cheese surprise waiting in the stuffed crust!

1 tablespoon extra virgin olive oil, plus extra for the pan
2 fully cooked chicken sausages, thinly sliced (6 ounces) - see notes
1 small red onion, thinly sliced into half-moons
1 batch pizza dough
1 1/2 cups prepared macaroni and cheese
1/2 to 1 small apple, cored and thinly sliced
3/4 cup to 1 cup grated good quality sharp cheddar cheese

Steps:

  • Preheat oven to 450*F. Rub a large sheet pan with a light coating of olive oil (about a teaspoon).
  • In a medium sauté pan, heat olive oil over medium heat. Sauté onion and sausage with olive oil about 4-5 minutes or until onions soften and sausage starts to brown.
  • Meanwhile, roll out crust to a size slightly larger than your sheet pan. Place onto sheet pan with dough overhanging edges slightly.
  • With a small spoon, spoon macaroni and cheese onto edges of the crust, about an inch in. Go all the way around - a small amount is sufficient. Then, fold the crust over the macaroni and cheese to form a stuffed crust.
  • Layer on the sausage and onions, followed by the sliced apples and the grated cheddar cheese.
  • Bake for 10-13 minutes, or until golden brown and cheese is bubbly.
  • Let cool 1-2 minutes before cutting and serving.

I have been meaning to give this elegant sounding chicken dish for years and have decided to share it here even though I haven't tried it yet. I originally clipped this from a magazine years ago and thought it would be a lovely choice for a romantic dinner.

2 boneless skinless chicken breast halves (pounded to a 1/4-inch thickness with a mallet)
1/2 cup cooking apple (Golden Delicious or Granny Smith recommended)
2 tablespoons sharp cheddar cheese
1 tablespoon fine dry breadcrumb
1 tablespoon unsalted butter
1/4 cup dry white wine or 1/4 cup apple cider
water, as needed
1 1/2 teaspoons cornstarch
fresh parsley, chopped, garnish
salt, to taste
pepper, to taste

Steps:

  • If you haven't already pounded your chicken breast halves, do so now- they should be 1/4" thin; season with salt and pepper to taste on both sides. Peel your apples unless you prefer them to have the skin on.
  • Combine apple chunks,cheese, and bread crumbs in a small bowl.
  • Divide the apple mixture into two portions and place one portion on top of each piece of chicken.
  • Roll up chicken into a bundle, using toothpicks to secure if needed.
  • Melt butter in a skillet, then brown the chicken briefly on both sides in the butter- just a few minutes each side to brown but not cook all the way through yet.
  • Once browned, add wine and 1/4 cup of water.
  • Cover pan and let simmer 15-20 minutes on medium-low heat- until chicken is no longer pink and completely cooked through.
  • Remove cooked chicken from the pan using a slotted spoon and set on two plates.
  • Remove toothpicks.
  • Whisk together 1 Tbsp of water and the cornstarch well and add to the pan juices.
  • Whisk until blended and cook and stir until thickened slightly (you may need to raise the heat a bit); test for seasoning and add more salt and pepper if needed.
  • Ladle over chicken and sprinkle parsley over tops as a garnish.

6 ounces macaroni
1/4 cup unsalted butter
3 tablespoons all-purpose flour
1 1/4 cups milk
7 ounces white cheddar cheese, shredded
1/2 ounce asiago cheese, shredded
1/8 teaspoon garlic powder
1/4 teaspoon cayenne pepper
salt
1 (16 ounce) store-bought pizza dough
1 ounce mozzarella cheese, shredded
1 tablespoon olive oil
1/2 cup store-bought pizza sauce
8 -10 bocconcini
8 -10 slices pepperoni
1/4 cup fresh basil leaf

Steps:

  • For the mac and cheese:.
  • Cook the macaroni in a medium pot of boiling water, according to the directions on the package. Once cooked, drain and set aside.
  • Melt the butter in a medium pot over a medium heat. Once melted, add the flour and cook, stirring constantly for 2 minutes to toast the flour. Turn the heat down to low and gradually whisk in the milk until all the milk has been added and the mixture is smooth. Keep cooking over a low heat, stirring until thickened. Stir in the white cheddar and asagio cheese with the garlic powder and cayenne. Season with salt, to taste.
  • Remove from the heat and stir in the cooked macaroni. Set aside.
  • For the pizza:.
  • Preheat the oven to 400 degrees F.
  • Place the dough on a large piece of parchment paper, dust lightly with flour, then use a rolling pin to roll it out into an 18 inch circle. Lift this onto a baking sheet or pizza pan - don't worry if the dough overhangs as you're going to fold the crust inwards in a second.
  • Pipe or spoon a ring of mac & cheese around the edge of the pizza dough circle, leaving an outer border of about 2 inches. Sprinkle the shredded mozzarella over the mac & cheese. Fold the outer edges of the circle over the mac & cheese and press down firmly to seal - this forms the crust with the pasta sealed within.
  • Spread the olive oil, and then the pizza sauce, in the centre of the pizza in an even layer. Top with the bocconcini and pepperoni. Bake for 20-30 minutes until the crust is golden and the cheese is starting to brown.
  • Sprinkle the hot pizza with some basil and serve.
