Steps:

  • Cook pasta according to package directions; drain., Meanwhile, in a large skillet, cook and crumble beef with onion and garlic over medium-high heat until no longer pink, 5-7 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until flavors are blended, 10-15 minutes., Stir in pasta; heat through.

This creamy and cheesy Beef and Shells pasta recipe is the ultimate family comfort food!

1 lb lean ground beef ((I normally use 93/7 for this recipe))
12 oz dried medium pasta shells
1 Tbsp olive oil
4 cloves garlic (minced)
1 small white or yellow onion (diced)
2 tsp dried Italian seasoning
1/2 tsp kosher salt
1/2 tsp black pepper
1/4 tsp red pepper flakes ((optional))
1 Tbsp all purpose flour
15 oz can tomato sauce
1/2 cup heavy cream
2 - 3 oz cream cheese (softened to room temperature)
1/4 cup sour cream
1 - 2 cups shredded cheddar cheese

Steps:

  • Bring a large pot of salted water to a boil. Boil pasta to al dente, according to package directions. Drain and set aside. Toss with a little oil to prevent too much sticking.
  • Add oil to a large skillet and heat over MED HIGH heat until hot. Add beef, onion, and garlic and cook for 5-7 minutes, breaking up the meat as it cooks.
  • If lean beef was used, and there's not much grease in the skillet, you can just continue cooking to simmer that grease away. If there's a lot of grease, you'll want to drain it.
  • Add in Italian seasoning, salt, pepper, red pepper flakes, and flour, stirring well to combine. Cook, stirring often, for 2 minutes.
  • Add tomato sauce and stir. Add heavy cream, cream cheese and sour cream and stir well. Simmer a few minutes, stirring often, to really incorporate the cream cheese into the sauce.
  • Add cheese and cooked pasta, stirring well to combine.
  • Serve hot, garnished with fresh parsley if desired.

1 medium onion, chopped (1/2 cup)
1 clove garlic, finely chopped
1 lb ground beef
1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained

1 box (12 oz) jumbo pasta shells
2 cups ricotta cheese
2 cups shredded mozzarella cheese (8 oz)
1 egg
2 tablespoons chopped fresh basil leaves
Additional chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 2-quart saucepan, heat oil over medium heat. Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until softened. Add beef. Cook 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked. Stir in tomatoes. Season with salt and pepper. Reduce heat to low; cook uncovered about 20 minutes until liquid is reduced.
  • Meanwhile, cook and drain pasta shells as directed on box, using minimum cook time. Rinse with cold water to cool; drain.
  • In medium bowl, mix ricotta cheese, 1 cup of the mozzarella cheese, the egg and 2 tablespoons basil.
  • Spoon about 2 cups meat sauce into baking dish. Using small spoon, carefully fill each pasta shell with about 2 tablespoons cheese mixture (do not overfill). Invert shells and place on sauce in baking dish. Spoon remaining meat sauce over shells. Sprinkle with remaining 1 cup mozzarella cheese.
  • Bake uncovered about 30 minutes until sauce is bubbly and cheese is melted. Garnish with additional basil.

Steps:

  • Cook shells in a large pot of boiling salted water, stirring occasionally, until very al dente, about 9 minutes; drain. Run under cold water to stop the cooking; drain again.
  • Meanwhile, heat oil in a large skillet over high. Add mushrooms and cook, stirring occasionally, until they release juices, then are dry again and nicely browned, 5-6 minutes; season with black pepper and 1 tsp. salt. Reduce heat to medium, add wine, and cook, stirring, until reduced by half, 1-2 minutes. Add spinach, cover, and cook until beginning to wilt, 1-2 minutes. Uncover and continue to cook, stirring occasionally, until spinach is completely wilted and most of the liquid is evaporated, 2-4 minutes more.   • While sauce cooks, add ricotta, 3 oz. Parmesan, 2 Tbsp. oregano, and remaining 1/2 tsp. salt to mushroom mixture and stir to combine. Spoon about 2 Tbsp. ricotta mixture into each shell. The shell should be filled to capacity but not overstuffed.
  • Nestle stuffed shells into hot sauce in skillet. Cover and cook over medium heat until shells are warmed through, 4-6 minutes. Remove from heat and let sit 5 minutes. Sprinkle with Parmesan and remaining 1 Tbsp. oregano.

1 pound chuck roast
1 pound russet potato
1/2 pound carrots
1/2 cup onion (chopped)
1 tsp chopped garlic (Add more if you want!)
2 Tablespoons olive oil
2 Tablespoons cornstarch
1-2 teaspoon Italian seasoning
1 teaspoon salt
2-4 cups beef broth

Steps:

  • Place cubed stew meat into a large bowl. Add 2 Tablespoons of cornstarch, 1 to 2 teaspoons of Italian seasoning, and 1 teaspoon of salt. Mix until all the beef is covered.
  • Allow meat and cornstarch mix to sit on the counter for an hour.
  • Heat your heavy bottomed pot on the stove over medium heat. Add 2 Tablespoons of light or extra virgin olive oil to the pot.
  • Once oil is warm, add the beef cubes to the pot. Cook until they start to brown, then flip. Brown on each side.
  • Remove the browned meat from the pot and set aside on a plate until you are ready to add it back to the stew.
  • Add the chopped onions to the beef drippings in the pot. Stir them over medium low heat for about five minutes until they are soft.
  • Add the chopped garlic to the pot and stir for one minute.
  • Add the meat back to the pot. Add about 2 cups of the beef broth to the pot so that the meat is covered.
  • Bring the meat mixture to a low simmer, cover, and cook for an hour.
  • At the hour point, peel your potato and carrots. Chop them into uniform size pieces.
  • Add the potatoes to the meat mixture. Add more broth if necessary, so that the potatoes and meat are covered. Bring back to a simmer.
  • In a small saucepan, add the carrots and about ½ cup of water. Bring to a simmer and cook for about half an hour or until the carrots are cooked through.
  • Check to see if potatoes are cooked through. When they are, add the cooked carrots to the beef stew. Salt and pepper to taste. Enjoy!

1 large onion (white or yellow)
3 Tbsp. olive oil (split)
1/2 cup gluten free flour blend (or AP flour if not gluten free)
1 - 1.5 lb. beef chuck roast
4-5 large carrots (yields 3 cups)
4-6 red potatoes (yields 3 cups)
1/2 cup red wine
4 cups gluten free beef broth (or regular beef broth if not GF)
3 Tbsp. tomato paste
2 tsp. Italian seasoning
1/2 tsp. kosher salt (split)
1/2 tsp. pepper (split)

Steps:

  • Mince 6 cloves of garlic and 1 large onion (white or yellow).
  • Wash, scrub, and dry 4-5 carrots and 4-6 red potatoes. Cut the carrots into slices and cut the potatoes into cubes.
  • Using a separate cutting board cut 1 - 1.5 lbs. of beef chuck roast into bite-size cubes. Pour 1/2 cup of gluten free flour (or regular AP flour if not GF) over the meat and toss until completely coated.
  • Heat a cast iron Dutch oven or heavy-bottom soup pan to medium-high and add 1 Tbsp. olive oil. Once heated, add half of the cubed meat and cook for 2-3 minutes on each side. Add 1/4 tsp. kosher salt and pepper. Once the meat is seared on all sides remove and set aside. Repeat this process with second batch of meat. Set seared meat aside.
  • Add another 1 Tbsp. of olive oil to pan and then add the minced garlic and onions. Saute for 4-5 minutes, scraping up the brown bits as they cook.
  • Add 1/2 cup red wine to pan and saute for 4-5 minutes or until wine reduces.
  • Add the sliced carrots to pan and saute for 5 minutes, stirring frequently.
  • Add 3 cups of beef broth and the seared meat to the Dutch oven. Bring the stew to a boil, reduce to a low-medium boil, cover, and cook for 20 minutes.
  • Add 1 more cup beef broth and the diced potatoes to the pan. Cover again and cook for another 20 minutes or until the potatoes are tender.
  • Remove cover and add 3 Tbsp. tomato paste and 2 tsp. Italian seasoning. Stir together until completely incorporated and cook for another 2 minutes or until the stew has thickened to desired consistency. Adjust salt and pepper levels to taste and serve.

  • Cook the macaroni according to package directions. Drain, but reserve the water.
  • While pasta cooks, place large sauce pot over Medium heat on stove top.

  • Add the diced onion.
  • Add salt.
  • Add black pepper.
  • Stir and cook until onions are translucent.

1 (24 ounce) jar pasta sauce
3 cups water
1 cup grated Parmesan cheese
1 cup half and half
4 ounces cream cheese (softened)
fresh parsley, for garnish

Steps:

  • Add olive oil to the inner pot of the Instant Pot and turn on SAUTE mode.
  • Add diced onion to the Instant Pot and sauté for a few minutes until onion starts to soften.
  • Add ground beef to the pot, break into small pieces, and cook until browned; drain excess grease and turn off the Instant Pot.
  • Add Italian seasoning, garlic powder, salt, pepper and tomato paste to the beef mixture; stir to combine.
  • Pour uncooked pasta shells on top of the ground beef mixture, then pour pasta sauce and water on top. Don't stir the pasta and sauce together.

  • In a large bowl, mix soy sauce, red wine and mustard. Add the beef and 3 sliced onions, mix with your hands making sure the beef is coated in the marinade. Cover with plastic wrap and set in the fridge to marinate for 2-3 hours. Remove from the fridge 30 minutes before cooking, discard the onions and the liquid.
