- Bring a large pot of salted water to a boil. Boil pasta to al dente, according to package directions. Drain and set aside. Toss with a little oil to prevent too much sticking.
- Add oil to a large skillet and heat over MED HIGH heat until hot. Add beef, onion, and garlic and cook for 5-7 minutes, breaking up the meat as it cooks.
- If lean beef was used, and there's not much grease in the skillet, you can just continue cooking to simmer that grease away. If there's a lot of grease, you'll want to drain it.
- Add in Italian seasoning, salt, pepper, red pepper flakes, and flour, stirring well to combine. Cook, stirring often, for 2 minutes.
- Add tomato sauce and stir. Add heavy cream, cream cheese and sour cream and stir well. Simmer a few minutes, stirring often, to really incorporate the cream cheese into the sauce.
- Add cheese and cooked pasta, stirring well to combine.
- Serve hot, garnished with fresh parsley if desired.

- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Set aside. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic and Italian seasoning until fragrant, about 1 minute. - Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 2-quart saucepan, heat oil over medium heat. Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until softened. Add beef. Cook 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked. Stir in tomatoes. Season with salt and pepper. Reduce heat to low; cook uncovered about 20 minutes until liquid is reduced.

- Nestle stuffed shells into hot sauce in skillet. Cover and cook over medium heat until shells are warmed through, 4-6 minutes. Remove from heat and let sit 5 minutes. Sprinkle with Parmesan and remaining 1 Tbsp. oregano.

- Place cubed stew meat into a large bowl. Add 2 Tablespoons of cornstarch, 1 to 2 teaspoons of Italian seasoning, and 1 teaspoon of salt. Mix until all the beef is covered.
- Allow meat and cornstarch mix to sit on the counter for an hour.
- Heat your heavy bottomed pot on the stove over medium heat. Add 2 Tablespoons of light or extra virgin olive oil to the pot.
- Once oil is warm, add the beef cubes to the pot. Cook until they start to brown, then flip. Brown on each side.
- Remove the browned meat from the pot and set aside on a plate until you are ready to add it back to the stew.
- Add the chopped onions to the beef drippings in the pot. Stir them over medium low heat for about five minutes until they are soft.
- Add the chopped garlic to the pot and stir for one minute.
- Add the meat back to the pot. Add about 2 cups of the beef broth to the pot so that the meat is covered.
- Bring the meat mixture to a low simmer, cover, and cook for an hour.
- At the hour point, peel your potato and carrots. Chop them into uniform size pieces.
- Add the potatoes to the meat mixture. Add more broth if necessary, so that the potatoes and meat are covered. Bring back to a simmer.
- In a small saucepan, add the carrots and about ½ cup of water. Bring to a simmer and cook for about half an hour or until the carrots are cooked through.
- Check to see if potatoes are cooked through. When they are, add the cooked carrots to the beef stew. Salt and pepper to taste. Enjoy!

- Mince 6 cloves of garlic and 1 large onion (white or yellow).
- Wash, scrub, and dry 4-5 carrots and 4-6 red potatoes. Cut the carrots into slices and cut the potatoes into cubes.
- Using a separate cutting board cut 1 - 1.5 lbs. of beef chuck roast into bite-size cubes. Pour 1/2 cup of gluten free flour (or regular AP flour if not GF) over the meat and toss until completely coated.
- Heat a cast iron Dutch oven or heavy-bottom soup pan to medium-high and add 1 Tbsp. olive oil. Once heated, add half of the cubed meat and cook for 2-3 minutes on each side. Add 1/4 tsp. kosher salt and pepper. Once the meat is seared on all sides remove and set aside. Repeat this process with second batch of meat. Set seared meat aside.
- Add another 1 Tbsp. of olive oil to pan and then add the minced garlic and onions. Saute for 4-5 minutes, scraping up the brown bits as they cook.
- Add 1/2 cup red wine to pan and saute for 4-5 minutes or until wine reduces.
- Add the sliced carrots to pan and saute for 5 minutes, stirring frequently.
- Add 3 cups of beef broth and the seared meat to the Dutch oven. Bring the stew to a boil, reduce to a low-medium boil, cover, and cook for 20 minutes.
- Add 1 more cup beef broth and the diced potatoes to the pan. Cover again and cook for another 20 minutes or until the potatoes are tender.
- Remove cover and add 3 Tbsp. tomato paste and 2 tsp. Italian seasoning. Stir together until completely incorporated and cook for another 2 minutes or until the stew has thickened to desired consistency. Adjust salt and pepper levels to taste and serve.

- Add olive oil to the inner pot of the Instant Pot and turn on SAUTE mode.
- Add diced onion to the Instant Pot and sauté for a few minutes until onion starts to soften.
- Add ground beef to the pot, break into small pieces, and cook until browned; drain excess grease and turn off the Instant Pot.
