Steps:
- In a small mixing bowl, combine tomatoes, onion, garlic, basil, oregano, and salt and pepper. Mix well, cover, and refrigerate.
- Preheat oven to 375 degrees F (190 degrees C).
- Cut the loaf of French bread into 12 slices on the diagonal. Arrange the bread on a baking sheet and toast in the oven for 5 minutes, or until golden brown. Reduce the oven's temperature to 250 degrees F (120 degrees C).
- Spoon equal amounts of the tomato mixture onto the toasted slices of bread. Top with slices of mozzarella. Place the pan of bread back into the oven until the cheese has melted just slightly and is oozing over the tomatoes, approximately 2 minutes. Serve immediately.

BEST EVER BRUSCHETTA
I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

Steps:
- In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
- Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
- Slice the bread into individual pieces and spoon the mixture on top.

Steps:
- Mix tomatoes, basil, garlic and cheese until each bite has a sufficient amount of each. Add more if necessary. Toss in salt and pepper,red wine vinegar and stir. Add olive oil. Should be nice and shiny. Let sit in refrigerator to allow flavors to mingle. Enjoy!
- To make bruschetta bread, hollow out a loaf of french bread. Spoon in the bruschetta and top with an extra 1/2 cup of shredded parmesan cheese. Bake in a 450 degree oven for about 10 minutes, until cheese is melted and bread is toasted. Cut and enjoy.
- For pasta, prepare noodles according to package (I like angel hair pasta). Grill chicken with salt and pepper. Slice into thin strips. Heat bruschetta in microwave for about 2-3 minutes, until warmed. Serve over warm pasta with chicken strips and extra parmesan cheese. Enjoy!

- For Angel Food Cupcakes: Preheat oven to 350 degrees F.
- In a food processor, pulse sugar until very fine, 1-2 minutes*.
- Sift together half of the sugar, cake flour and salt into a medium bowl.
- In a large mixing bowl, whisk together egg whites, water, cream of tartar and extract until well combined. With a handheld or standing mixer, whip mixture on medium speed while slowly adding remaining sugar, until medium peaks form. In batches, sift flour mixture over top of egg white mixture and fold in with a rubber spatula. Continue until all of the flour mixture has been incorporated.
- Evenly divide batter among paper-lined muffin cups, filling each cup nearly full. Bake for 18-20 minutes, until golden and a toothpick inserted into the center comes out clean
- Allow to cool completely before frosting. Top with fresh berries or your choice of fruit.
- For the Cream Cheese Whipped Cream Frosting: In a large mixing bowl, whip heavy cream until soft peaks form. In a separate mixing bowl, whip cream cheese until light and fluffy. Add cream cheese to whipped cream along with powdered sugar and whip until stiff peaks form. Store in refrigerator until ready to frost cupcakes.
