EASY MAPLE-PROOFED PIZZA DOUGH FOR ONE
This makes one yummy 10" crust and it has a little sweetness to it from proofing with maple syrup rather than honey or sugar. For a 12" crust, simply add 25% more of each ingredient. NOTE: Actual baking time not accounted for here, cooking time is just the rising time, I have a suggested one posted but you can bake however you like.

Steps:
- Put the maple syrup in the water in a large bowl and dissolve the yeast in it. Let it proof for 10-15 minutes or until nice and foamy.
- Add the oil and salt.
- Knead the flours in until nice and elasticy, about 5 minutes.
- Loosely cover with parchment paper or a dish towel and let rise for 20-30 minutes.
- Simply roll out into a 10" pie plate greased with cooking spray or a little olive oil. I suggest poking some holes into the dough with a fork after rolling out, then baking for 7-8 minutes at 400°F Then add your sauce, cheese, toppings, etc. and bake for another 10-20 minutes depending on how much you put on it, then turn on the broiler for 5 minutes for a nice crispy crust and top.

Steps:
- Combine the fresh yeast and the sugar and stir with a teaspoon. The yeast will dissolve turning the mixture quite runny as you stir. Pour yeast mixture into the lukewarm water and stir to combine.
- Add the water mixture to the flour and start stirring with a wooden spoon or rubber spatula. As the dough is starting to come together, add the salt and the olive oil, keep stirring until the water has been absorbed into the flour, then tip onto a slightly floured and knead for about 2 minutes.
- Form the kneaded dough into a ball and place it back into the bowl. Cover with a towel or cling film and let rest for one hour at room temperature. After one hour, the dough will have grown. Take it out of the bowl, punch out the air and stretch it into a circle to make your pizza. Add your favourite toppings and bake!

Steps:
- Preheat oven to 450 degrees F. Grease a pizza pan or large jelly roll pan and set aside.
- Put warm water into a large mixing bowl.
- Add sugar and yeast and stir to combine.
- Let mixture sit for 5 minutes, or until it becomes frothy and bubbles form.
- Add olive oil and gently stir to combine.
- Add 2 cups of flour and salt and mix with a spatula until a ball begins to form (dough will still be slightly sticky). Add more flour as needed to form a dough ball.
- Transfer to a floured surface and knead into a smooth dough, adding up to ½ cup extra flour if needed.
- Roll dough into your desired shape and gently transfer to your prepared pan. (Or bake on a pizza stone, see instructions in the notes).
- To ensure the dough doesn't form air pockets, use a fork to prick to the dough all around (gently so you do not poke holes all the way through the crust).
- Bake on the lower rack of your preheated oven for 5 minutes and remove from your oven. (this is just to very slightly prebake the dough). If you notice air bubbles forming, poke them with a fork to let the air out.
- Add pizza sauce and toppings of choice!
- Bake on the lower rack of your oven for around 15-20 minutes until the crust looks crispy and lightly browned.
- Let cool, cut and serve.
