Steps:

  • Cook pasta according to package directions. Drain. Keep warm.
  • Place garlic into 10-inch nonstick skillet. Cook over medium heat 1 minute. Add tomatoes and basil. Continue cooking, stirring occasionally, 1-2 minutes or until heated through.
  • Toss together hot pasta, tomato mixture and Butter with Canola Oil in serving bowl. Sprinkle with cheese, if desired.

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

1 pound large shrimp - peeled and deveined

Steps:

  • Bring a large pot of water to a boil, and add 1 tablespoon oil. Cook pasta in boiling water until al dente. Place pasta in a colander, and give it a quick rinse with cold water.
  • Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
  • Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. 1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

Steps:

  • Put a large pot of water over high heat and bring to a boil.
  • In a low, wide salad bowl or pasta-serving bowl, combine garlic, red-wine vinegar and 3 tablespoons olive oil. Add a good pinch of salt, black pepper and red-pepper flakes.
  • Add sweet peppers and cherry tomatoes, season well with salt and toss to coat with dressing. (You may do this up to an hour before cooking the pasta.)

1 garlic clove
1 teaspoon sugar
¼ cup extra-virgin olive oil
1 pound angel hair pasta

  • 1. Bring a large pot of water to a boil and generously salt it.
  • 2. Cut a slit in the stem end of each tomato. Gently lower the tomatoes into the boiling water. Boil until the skin peels back from the slits, about 30 seconds. With a slotted spoon, transfer to a large bowl. Keep the water boiling.
  • 3. While the tomatoes cool, on a cutting board, finely mince the garlic with the sugar into a paste. Peel off and discard the tomato skins, then transfer the tomatoes to a large bowl. 3 tablespoons extra-virgin olive oil
4 large cloves garlic, grated
Kosher salt
1/3 cup tomato paste
1 pint cherry tomatoes, halved
1 cup heavy cream
10 ounces angel hair pasta
1/2 cup finely grated pecorino

Steps:

  • In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
  • In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
  • Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.

1/2 cup fresh basil, chopped
1/2 cup parmesan cheese, freshly grated
2 tablespoons extra virgin olive oil

2 1/2 cups vine-ripe tomatoes, seeded and diced medium

  • Cook the pasta in several quarts of salted water (keep an eye on it - angel hair cooks a lot faster than other pasta and you don't want it mushy). Place it in a large serving bowl, add the basil and Parmesan cheese and toss to mix.
  • While the pasta is cooking, heat the olive oil in a large skillet and saute the garlic for a minute or so until it *just* begins to change color. 1 lemon, juice of
1 tomatoes, diced

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
  • Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. This came from a store ad a while back for their new sea food department. I cut it out and tried it, and it's definitely a keeper. Great flavor--if you want compliments, make this for dinner.

1/4 cup extra virgin olive oil
5 garlic cloves, minced
1 lb bay scallop, drained well
2 (14 1/2 ounce) cans hunts diced tomatoes with balsamic vinegar basil and oil, slightly drained
2 cups fresh basil leaves, cut into thin strips
8 ounces angel hair pasta, cooked al dente
salt, to taste
pepper, to taste
Italian spices, to taste

Steps:

  • Place a large heavy skillet over medium heat, allow pan to heat up.
  • Add oil and heat 1 minute.
  • Add garlic and sauté 2 minutes, stirring constantly.
  • Add scallops, season with salt, pepper, and seasonings to taste, and cook for 3 minutes or until opaque.
  • Add tomatoes and basil and heat until throughly warmed, about 3 minutes, stirring constantly.
  • Remove from heat, taste and adjust seasonings per your preference.
  • Add pasta to the pan, toss to combine well, and enjoy.
