250g (8oz) smoked chorizo sausage, casing removed
1 onion, peeled and chopped
2 sticks celery, chopped
1 red pepper, deseeded and sliced
1-2 cloves garlic, peeled and chopped
150ml (¼ pint) dry white wine
400g can plum tomatoes
Salt and freshly ground black pepper
410g can cannellini beans or chickpeas
Fresh parsley, to garnish
Crusty bread, to serve

Steps:

  • Fry the chorizo in a large frying pan, until it releases its oil. Add the onion, celery, red pepper and garlic, and cook until softened.
  • Stir in the wine, plum tomatoes and seasoning and simmer for 15 mins stirring occasionally to break up the tomatoes, until the sauce thickens.
  • Add the beans or chickpeas and simmer for a further 5 mins. Sprinkle generously with parsley and serve hot, or just warm.

3 cups dried chickpeas (about 1 ½ pounds), picked over, soaked in cold water overnight, and drained
1 ½ pounds oxtails
½ pound jamón serrano, inexpensive domestic prosciutto, or slab Canadian or Irish bacon, cubed
1 ham bone or one ¾-pound beef shank bone
5 cups water
1 garlic clove, peeled
4 black peppercorns
Pinch of saffron threads, crumbled
½ teaspoon cumin seeds
2 ripe plum tomatoes, peeled and seeded, 1 whole and 1 finely chopped
½ pound green beans, ends trimmed and chopped
4 chicken legs (about 1 pound)
1 pound Spanish-style chorizo sausage (see Note below), sliced
1 boiling potato (about ½ pound), such as Yukon gold, red or white, peeled and diced
Salt to taste

Steps:

  • Put the chickpeas, oxtail, jamón serrano (or bacon or prosciutto), and ham bone or beef shank in a large stew pot with 4 cups of the cold water. Bring to a simmer slowly, about 30 minutes, then cook for 1 hour, skimming the foam off the surface occasionally.
  • Meanwhile, in a mortar pound the garlic, peppercorns, saffron, and cumin together until mushy. Add the whole tomato and continue pounding until the mixture is homogeneous. This step can also be done in a blender or food processor.
  • Add the green beans, chicken legs, chorizo, potato, and the chopped tomato to the stew pot along with the remaining cup cold water. Carefully stir the stew and salt lightly. Add the spice mixture to the pot and stir carefully to blend well.
  • Cook over very low heat for 2 to 4 hours, checking doneness occasionally after 2 hours. The cocido is done when the meat is falling off the chicken legs and the potato has lost its crunch, but before it begins to fall apart. Taste and correct the seasoning.
  • Note: A Spanish chorizo sausage is not as hot as the Mexican sausage of the same name. It is best to substitute it with a Portuguese chouriço sausage, a Polish kielbasa, or a mild Italian sausage.

crusty bread, to serve

Steps:

  • Heat the oil in a large lidded saucepan over a medium-low heat. Add the chorizo and cook until the oil starts to run from the chorizo.
  • Add the onion and garlic and cover with the lid. Cook, stirring from time to time, until soft.
  • Add the tomatoes and beans, stir well and cover, simmer for 10 minutes. Add a little water if the stew is too thick.
  • Add the parsley, season to taste with salt and pepper and stir well.
  • Serve in soup bowls, with crusty bread.

1 jar garbanzo beans (chickpeas)
10 ounces fresh spinach (washed. (One large bag or around 300 grams/10 ounces).)
2 thick slices of day old bread (sourdough works well with crusts removed and cut into cubes)
15 blanched unsalted Marcona almonds
1/4 cup tomato sauce ((60ml))
3 garlic cloves (chopped)
Extra virgin olive oil
2 tbsp Sherry vinegar (or red wine vinegar if sherry vinegar is hard to come by)
1 tsp ground cumin
Ground cayenne pepper (to taste)
1 tsp Salt ((more to taste))
Black pepper (to taste)
1 tsp Smoked Spanish paprika (I use pimentón dulce, but you could also use pimentón picante)

Steps:

  • Coat a large saucepan with extra virgin olive oil (approx. 2 tbsp) and heat to medium high
  • Before the oil gets too hot, add the spinach (in batches if necessary)
  • Sauté the spinach until just wilted and remove to strain in a colander
  • Re-coat the pan with olive oil and add in the bread cubes and raw almonds. Fry until the bread and almonds are browned and crispy on each side
  • Add the chopped garlic, cumin, cayenne and black pepper and sauté for a couple of minutes, until the garlic is fragrant and turning brown
  • Transfer the ingredients to a blender/food processor and add the sherry vinegar
  • Blend the ingredients together until you have a thick paste (you can add a few tablespoons of water if needed to blend easier, but don't over blend and make it gooey)
  • Return the paste to the saucepan and add your garbanzo beans and tomato sauce
  • Stir gently until the chickpeas are fully coated by the sauce and add a bit of water to thin things out
  • Add the spinach and stir gently until it is evenly incorporated and hot
  • Season with salt and pepper
  • Once plated, drizzle a swirl of extra virgin olive oil on top of each dish, then sprinkle a small amount of smoked Spanish paprika on top

3 tablespoons olive oil
1 carrot, chopped
1 onion, chopped
1 green bell pepper, chopped

2 teaspoons dried thyme
1/2 cup chopped parsley (you can also use celery

Steps:

  • Prepare the beans: From the previous night, soak the dried beans in a large bowl filled with water and 1 tablespoon salt. Rinse them well and boil them in a pot filled with water until soft and tender (the time will depend on the type, age, and quality of the beans). Rinse well and set aside.
  • Make the stew: Transfer the olive oil, the carrot, the onion, the bell peppers, and the chorizo to a large skillet and cook over medium/high heat until the vegetables are soft (about 10-15 minutes). Add the paprika, the thyme, the parsley, the diced tomatoes, the chicken stock, the beans, the salt and the pepper. When it starts to boil reduce heat to low and simmer for 15-20 minutes or until the sauce has thickened.

Steps:

  • Start by taking the skin off the chorizo sausage and then chop it into small cubes.
  • Fry the chorizo in a little olive oil until it begins to release its own beautiful red oils into the pan. The meat should crumble until it resembles mince meat.
  • Add the onion, garlic and red pepper to the pan and fry gently until soft and sweet. Add more olive oil if the onion begins to take on colour.
  • Turn up the heat and pour in the glass of wine. Allow to reduce by a third and then turn the heat back down.
  • Remove the tomatoes from the tin, retaining as much of the juice as possible. Squish each tomato between your fingers and then add to the pan.
  • Stir in the paprika, chilli and then season with salt to taste. Cook over a low heat for ten minutes and then add the beans. Simmer gently for a further fifteen minutes or until the sauce is thick.

2 tablespoons canola oil
1 large yellow onion, finely chopped
3 celery ribs, finely chopped

4 cups beef broth or 4 cups chicken broth
2 teaspoons red wine vinegar

cooked white rice, for serving

Steps:

  • Place the beans in a large bowl with cold water to cover and soak for at least 4 hours or overnight; drain and rinse the beans.
  • In a large, heavy frying pan, heat the oil over med-high heat.
  • Add the onions, celery, and bell pepper and saute until softened and just beginning to brown, about 6 minutes.
  • Add the garlic, season with salt and pepper, and cook for 1 minute.
  • Pour in 1 cup of the broth and stir to scrape up any browned bits on the pan bottom.
  • Transfer the contents of the pan to a slow cooker and stir in the drained beans, remaining 3 cups broth, the vinegar, pepper flakes to taste, bay leaves, and chorizo.
  • Cover and cook on LOW setting for 6-8 hours, stirring once or twice.
  • The beans should be very tender.
  • Discard the bay leaves; season with salt, pepper, and Tabasco.
  • If desired, using the back of a spoon, mash some of the beans against the inside of the cooker to thicken the stew.
  • Spoon rice into shallow bowls, top with the stew and serve.

  • Fish and seafood. While much of Andalucía is situated on the coast, fish and seafood make up much of the staple diet of this region. The southern coast of Spain produces some of the best quality fish in the whole of Europe and much of it is kept in the region and enjoyed by residents and visitors alike.
  • Fruit. The Arabs brought the orange and lemon with them – and lots of them at that. With hot summers and mild winters, the region is ideal for cultivating most fruits, and you will also find an abundance of strawberries, melon, pomegranates and figs growing there.
  • Jamón serrano. One of the most typical Andalusian food is jamón serrano. Some of the best jamón serrano (cured ham) comes from the mountainous areas of Andalucía.
  • Olives and olive oil. Olives come in all shapes and sizes in Andalucía and are present at every meal in some shape or form. Olive oil is used in most dishes of the Andalusian cuisine and extra virgin olive oil is drizzled over the morning ‘tostada’ at the first meal of the day.
  • Tapas. One cannot discuss Andalusian food without mentioning the tapa. The tradition of serving small portions of fish, meat or salad dishes on a small plate to go with a cold drink is now popular all across the country and is what Spain is known for in culinary terms.
  • Gazpacho. This is probably the most well-known dish to originate in the south of Spain and is served across the country, mainly in hot weather. Gazpacho is a delicious, chilled, raw soup, served as a starter, made from tomatoes, cucumber, peppers, olive oil and vinegar.
  • Fritura de pescado. This is also another popular Andalusian food that is predominantly served in coastal regions where fish and seafood are aplenty. It basically consists of various white fish and seafood, such as prawns and squid, which are deep-fried in batter or flour and served on a platter with a lemon wedge and garlic mayonnaise as a dip.
  • Habas a la rondeña. This dish basically consists of broad beans and jamón serrano. The dish has extended all over the country and is typically referred to as “Spanish-style” beans, yet habas a la rodeña originated in the town of Ronda.
  • Rabo de toro. The rabo del toro is the tail of the bull, and this dish is better known as braised oxtail stew. It is actually one of the most delicious and popular dishes to originate from Andalucía, and more concretely, from Córdoba, and is one of the most typical dishes of Spain, funnily enough.
  • Pescado a la sal. This is a typical Spanish dish that involves baking a whole fish, such as sea bass or sea bream, whilst it is covered in a thick coat of salt.
