Ancho chilies, sweet potatoes, and honey come together to create a sweet potato puree with rich, complex Southwestern flavors. This sweet potato puree recipe is an excellent choice when you're looking for a side dish with interesting flavors and textures. The smokey Southwestern flavor from the dried chilies and the complex notes from the honey compliment the sweet potato's flavor and texture. The flavors in this dish come from cooking the sweet potatoes with the dried chilies; the chilies infuse the sweet potatoes without adding too much heat.

1 1/2 lbs sweet potatoes (3 good sized potatoes)
1 Ancho chilies (dried)
1 Cascabel chilies (dried)
2 tbsp butter
1/2 cup milk
2 tbsp honey
1 tsp salt
1/2 tsp pepper

Steps:

  • Peel and cut the sweet potatoes up into large chunks. Remove the stems from the peppers and cut them into large pieces. For more heat, keep the seeds from the peppers, for less heat discard the seeds.
  • Place the sweet potatoes and peppers in a pot of cold water, turn the heat on high, and cook the potatoes until they are fork tender. This usually takes around 25 minutes.
  • Once the potatoes have finished cooking, drain the liquid and add the milk, honey, butter, salt, and pepper.
  • Using a stick blender puree everything until the potatoes are smooth.

5 pounds sweet potatoes (about 6 large)
3 or 4 dried ancho chiles (about 1 1/2 ounces)
3/4 cup heavy cream
2 teaspoons salt
2 tablespoons unsalted butter, or to taste

Steps:

  • Preheat oven to 450°F. and line a baking sheet with foil.
  • Prick sweet potatoes in several places with a fork and bake on baking sheet in middle of oven until tender, about 1 hour. Cool potatoes until they can be handled.
  • Wearing rubber gloves, stem and seed chiles and tear into 1-inch pieces. In a small saucepan bring chiles and cream to a boil. In a blender purée mixture until smooth (use caution when blending hot liquids).
  • Scoop flesh from potatoes into a food processor, discarding skins, and purée with cream mixture, salt, and 2 tablespoons butter. Purée may be made up to this point 1 day ahead and cooled before being chilled, covered.
  • Transfer purée to a large saucepan and heat over moderate heat, stirring, until hot, stirring in more salt and butter if desired.

We like our sweets with a little ancho, for its earthy flavor. But it's that topping that crazy bread crumb topping that makes this casserole a hit.

1½ cups panko bread crumbs
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons ancho chile powder
¼ cup extra virgin olive oil
Kosher salt
Freshly ground black pepper
2 tablespoons, plus 1 teaspoon ancho chile powder
2 teaspoons ground cumin
1 teaspoon ground coriander
2 to 3 tablespoons extra virgin olive oil
2 large sweet potatoes, scrubbed, but not peeled, and sliced thinly into rounds
1 large red onion, thinly sliced
4 garlic cloves, minced
2 cups chicken or vegetable broth
Kosher salt
Freshly ground black pepper

Steps:

  • Bread Crumb Topping: 1. Mix panko, garlic powder, onion powder, ancho chile powder and evoo together in a small bowl. Season with salt and pepper. Set aside. Sweet Potatoes: 1. Preheat oven to 350°F. Grease a 9- x 13-inch casserole dish. 2. Whisk 2 tablespoons of ancho chile powder, cumin, and coriander together in a small bowl. Set aside. 3. Toss to coat sweet potato slices with evoo, salt, and pepper.Layer sweet potatoes in the prepared pan. Sprinkle ½ teaspoon of ancho chile powder over potatoes. Add half of the sliced onion and garlic. Continue layering remaining potatoes, seasoning, onion, and garlic until all potatoes are used. 4. Pour chicken broth into casserole and tightly wrap with foil.Bake at 350°F for 30 minutes. Uncover, sprinkle bread crumb topping over potatoes, and continue baking for 30 minutes more, or until all chicken broth has been absorbed and the bread crumb topping has browned.

Sweet Potatoes with Ancho Chile Butter image

6 medium-sized sweet potatoes
1/2 cup firmly packed brown sugar
1/2 cup honey
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
9-ounces butter, melted
4-ounces apple cider
4-ounces butter, softened
2-ounces maple syrup
1 tablespoon ancho chile powder, toasted
Salt and Pepper

Steps:

  • Slice sweet potatoes into 1/4 inch round slices. Arrange potatoes in a lightly greased baking dish.
  • Mix brown sugar, cinnamon, nutmeg, ginger, melted butter and cider in a bowl. Sprinkle each layer of potatoes with the mixture.
  • Cover with foil and bake at 325 degrees F for about 35 minutes or until almost soft.
  • In another bowl whisk in the soft butter, maple syrup, chile powder and salt and pepper. Remove the foil, and pour in the chile butter mixture and continue baking for another 15 minutes until golden color. Keep warm.

1 dried ancho chili
1 medium-size butternut squash, peeled and cut into 1/2-inch cubes
1/4 teaspoon ground cumin
1 teaspoon salt, plus more to taste
Scant pinch cayenne (optional)

Steps:

  • Place the ancho chili in a small saucepan and cover with water. Bring to a boil. Reduce heat and simmer until chili is soft, about 10 minutes. Remove the chili from the liquid. When cool enough to handle, stem the chili, split it open and scrape out the seeds.
  • Meanwhile, place the squash in a saucepan and cover with water. Bring to a boil over medium-high heat. Reduce heat and simmer until squash is tender, about 10 minutes. Drain well and place the squash in a food processor. Add the chili and the cumin and process until smooth, stopping to scrape down the sides of the bowl. Season with the salt and cayenne, if desired. Divide among 4 plates and serve immediately.

BASIC ANCHO CHILE PUREE

I was preparing recipe #227325 posted by chef #296027 and found this recipe/technique online for the ancho chile puree called for. Apparently, the Food Network's Bobby Flay uses this puree in several recipes. Prep time does not include the 1 hour required to soak the dried chiles. (Just a note: my mesh strainer was more on the small side...so I ended up spreading and pushing with the spatula and then having to sort of 'shave' the puree from the bottom of the strainer with a knife!! It worked....and I think I ended up with a finer puree, but it made the process more cumbersome. So DO use the larger meshed strainer if you have one. It should make the process much quicker and easier.)

3 ounces dried ancho chiles
water

Steps:

  • Soak the dried chiles in hot water for about 1 hour.
  • Drain (but reserve a little of the soaking water), then pull the stem ends off and discard. The seeds can be discarded or blended with the chiles, depending on how spicy you want the purée to be. (I found it helpful to go ahead and chop/cut the chiles into smaller pieces prior to grinding/blending.).
  • Blend the chiles in a food processor until smooth, adding a small amount of their soaking water if necessary (no more than 1/4 cup).
  • Press the purée through a medium mesh strainer with a rubber spatula, leaving the leftover large pieces in the strainer. Discard large pieces.
  • This will give you more chile puree than is needed for most recipes. Leftovers can be stored in the refrigerator for several weeks or the freezer for up to 3 months. Freeze the puree in ice cube trays for easy measuring and future use.
