EASY ANISE COOKIES

Easy and delicious cookies. They have a nice crunchy outside and are chewy on the inside.

3 eggs, beaten well
3 cups brown sugar
2 tablespoons anise seed
½ teaspoon salt
1 teaspoon baking soda
2 tablespoons hot water
4 ½ cups all-purpose flour
½ cup white sugar, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  • Beat eggs and brown sugar together in a large bowl until smooth. Stir anise seed and salt into the egg mixture.
  • Dissolve baking soda in hot water; stir into the egg mixture. Add flour and mix into a dough. Form into 36 small balls.
  • Spread white sugar into a wide, shallow dish. Roll the cookie dough balls in the sugar to coat. Arrange onto prepared baking sheets about 1 inch apart.
  • Bake in preheated oven until edges are crispy, about 10 minutes.

ARABIAN GULF SHORTBREAD COOKIES (GHIRAYBAH)



Arabian Gulf Shortbread Cookies (Ghiraybah) image

Very nice little Middle Eastern shortbread cookies. I like to give these as gifts or make them for tea time. I also make them often for my FIL's diwaniya (men's gathering) to enjoy with their Arabic coffee or tea. Recipe from The Complete Middle East Cookbook by Tess Mallos.

1 cup clarified butter (samneh, I have always used just sweet butter without clarifying)
1 cup icing sugar, sifted
2 1/2 cups all-purpose flour
blanched slivered almond, to garnish (loz)
additional icing sugar, for dusting

Steps:

  • First of all, sifting is an important part which must not be left out or the cookies will not turn out the right texture so be sure you have a sieve.
  • If need be, chill samneh or butter in refrigerator if too soft. (It should be somewhat soft just not very soft)
  • Put samneh in mixing bowl and beat until light. Gradually add sifted icing sugar, beating until very creamy and light.
  • Preheat oven to 325°F.
  • Sift flour and fold into butter mixture. Knead lightly until smooth. (Don't overdo it) If kitchen is hot, chill dough in refrigerator for 1-2 hours.
  • Roll pieces of dough into balls the size of a walnut and place on ungreased baking sheets. Flatten slightly. Flour hand lightly if necessary. Top half or all with a slivered almond. (I like to do half with the nuts and half with the dusting of icing sugar after cooled).
  • Bake in the preheated moderately slow oven for 20-25 minutes until very lightly coloured. Cool on baking sheets. Dust the other half without the almond slivers with icing sugar. (Makes for a pretty presentation of the mixed biscuits on a platter) then remove. These are very delicate biscuits and must be handled carefully.
  • Enjoy!

2 cups butter, softened
1 cup powdered sugar
1 cup granulated sugar
4 cups all-purpose flour
2 cups blanched almond halves
1 teaspoon clear almond extract

Steps:

  • Preheat oven to 300 degrees.
  • Beat butter in mixing bowl, for 5 minutes, or until fluffy.
  • Cream in sugars.
  • Add almond extract.
  • Slowly add in flour -- If you do not have a heavy duty stand mixer, add half of the flour with mixer, the other half with a spoon.
  • Chill dough in the refrigerator for up to one hour.
  • Roll out dough onto a floured surface, into a rope that is 1 1/2 - 2 inches thick.
  • Cut diagonally into diamond shapes.
  • Place on ungreased cookie sheet.
  • Place one almond in the center of each cookie.
  • Bake for 12 minutes. Remove and cool on cooling racks.

These delightful cookies, which are adapted from "Casablanca: My Moroccan Food" by Nargisse Benkabbou (Firefly, 2018), are like a cracked and caky rose lukum, a jelly candy often referred to as Turkish delight. Ghriba is a specific type of cookie that Moroccans bake all year long. Recipes vary depending on the region or the family, but they all have one thing in common: They are cracked on the outside and chewy on the inside. When it comes to ghriba, the flavoring possibilities are endless. The most popular varieties are almond, coconut and walnut.

2/3 cup/100 grams confectioners' sugar, for coating
2 3/4 cups/300 grams ground almonds
1/3 cup plus 1 tablespoon/80 grams granulated sugar
2 large eggs
2 tablespoons unsalted butter, softened
1 heaped teaspoon baking powder
1 teaspoon rose water
1/2 teaspoon kosher salt

Steps:

  • Heat the oven to 350 degrees. Line a cookie sheet with parchment paper. Place confectioners' sugar in a small bowl.
  • Place all of the remaining ingredients in a large bowl and use your hands or a large spatula to mix them together until you have a smooth and slightly sticky dough. Scoop the dough in heaping single tablespoonfuls (about 30 grams each) and roll each into a ball, then roll each ball in confectioners' sugar until completely coated.
  • Transfer the coated dough balls to the lined cookie sheet and lightly press each with the palm of your hand, but don't flatten them completely.
  • Immediately bake for 15 to 18 minutes until the cookies are cracked and firm on the outside. Remove from the oven and let the cookies cool on the cookie sheet for 10 minutes before transferring them to a wire rack to cool completely. Store the cookies in an airtight container to prevent them from drying out. They will keep for up to seven days.

MOROCCAN SEMOLINA AND ALMOND COOKIES



Moroccan Semolina and Almond Cookies image

Semolina flour gives these rather plain-looking but delicious cookies, adapted from "Dorie's Cookies" by Dorie Greenspan, a delightfully sandy texture. Almond flour makes them moist and rich, adding a gentle flavor and scent. If you don't have almond flour, make your own by pulsing blanched almond slices in a food processor until they're finely ground. Just don't over-process, or you'll wind up with almond butter. And if you're not a fan of orange blossom water, you can leave it out, or substitute rose water.

1 3/4 cup plus 2 tablespoons/294 grams semolina flour
2 cups/200 grams almond flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine sea salt
3/4 cup/150 grams granulated sugar
1 lemon
2 large eggs, at room temperature
1/4 cup/60 milliliters flavorless oil, such as canola
1 teaspoon pure vanilla extract
1 teaspoon orange blossom water (optional)
Confectioners' sugar, for dredging

Steps:

  • Position racks to divide the oven into thirds, and heat it to 350 degrees. Line two baking sheets with parchment paper.
  • In a bowl, whisk together semolina, almond flour, baking powder and salt.
  • Put sugar in bowl of a stand mixer fit with a paddle attachment, or in a large bowl in which you can use a hand mixer. Finely grate lemon zest over sugar, then rub them together with your fingertips until sugar is moist and fragrant. Add eggs and beat on medium speed for 3 minutes. With mixer running, pour oil down side of the bowl and beat for another 3 minutes. Beat in vanilla and orange blossom water, if using. Turn off mixer, add half the dry ingredients and mix them in on low speed, then add the rest, mixing only until dry ingredients disappear into the dough, which will be thick.
  • Sift some confectioners' sugar into a small bowl. For each cookie, spoon out a level tablespoon of dough, roll it between your palms to form a ball and dredge in sugar. Place balls 2 inches apart on the lined baking sheets, then use your thumb to push down the center of each cookie, pressing firmly enough to make an indentation and to cause the edges to crack.
  • Bake for 14 to 16 minutes, rotating pans top to bottom and front to back after 8 minutes, or until cookies are ever so lightly colored: They will be golden on the bottom, puffed, dramatically cracked and just firm to the touch. Carefully lift the cookies off sheets and onto racks. Cookies will keep for about 4 days in a covered container at room temperature.
