PENNSYLVANIA DUTCH HOT BACON DRESSING



Pennsylvania Dutch Hot Bacon Dressing image

Sweet and sour bacon laced cooked dressing for greens.

Number Of Ingredients 7

2 large eggs, well beaten
1/2 cup granulated sugar
1/4 cup white distilled vinegar
1/4 cup water
1/2 teaspoon salt or to taste depending on how salty your bacon is
4 strips good quality bacon, cut into 1/2-inch pieces
1 finely diced or thinly sliced hard boiled egg for garnish (optional)

Steps:

  • Beat the sugar into the eggs. Add the vinegar, water and salt; whisk together well.
  • Meanwhile, brown the bacon in a medium fry pan until crispy.
  • Add the egg mixture to the bacon mixture very slowly, whisking constantly. Cook over medium heat until thickened, stirring constantly.
  • Pour hot dressing over your choice of greens and mix/toss. This will wilt the greens.

Number Of Ingredients 6

5 slices bacon (cut up and fried. Set aside to cool , save bacon drippings from pan.)
3 eggs
salt and pepper to taste
1/2 cup sugar
1/2 cup white vinegar or apple cider vinegar
3/4 cup water

Steps:

  • Whisk eggs,salt, pepper and sugar together. Add vinegar and water and whisk till well combined. Put this mixture into a pan, add the bacon and bacon drippings. While whisking , heat over medium heat till the mixture comes to a boil. Reduce the heat and simmer until the dressing is the thickness you desire. Serve over lettuce, dandelion greens, spinach, mixed greens or boiled potatoes.

It's a perfect example of the "sweet/sour" recipes that the PA Dutch are known for. This dressing can be used on iceberg lettuce or as a dressing to make German style potato...

1 large head iceberg lettuce, torn into bite size pieces or
3-4 lb cooked, diced potatoes (if making potato salad)
1/2 lb bacon, cooked and crumbled
1 egg, beaten
2/3 c sugar
2 Tbsp flour
2/3 c water
2/3 c apple cider vinegar
1/4 tsp salt
1/4 tsp fresh ground black pepper

Steps:

  • 1. In a large serving bowl, tear lettuce into bite size pieces. Set aside.
  • 2. Cook the bacon in a 10-inch non-stick skillet. Remove bacon from skillet when cooked and set aside. Do not discard bacon fat. You will be using it to complete the cooked dressing.
  • 3. In a medium bowl, combine the egg, sugar, flour, water, vinegar, salt and pepper. Mix well and add to skillet with bacon fat. Cook, stirring constantly, for about 4-5 minutes or until dressing thickens and is hot and bubbly. Crumble bacon and add to skillet. Mix well.
  • 4. Pour hot dressing over lettuce and toss to coat.
  • 5. Please note: this dressing can be used to make German Potato Salad as well. Just substitute 3 pounds of cooked, diced potatoes for the lettuce. Add 1 stalk of celery, diced and 1 small onion, diced and you have another PA Dutch style salad!!

AMISH ENDIVE OR SPINACH SALAD

To make sure the greens are wilted before eating(covering the greens with a hot dressing only partially accomplishes this), drop them into a pot of boiling water. Let tand for 5 - 10 minutes. Then drain leaves, pouring off juice.

1 quart endive or 1 quart spinach
3 hard-boiled eggs
4 slices bacon
1/2 cup sugar
2 tablespoons flour
1 egg, beaten
1 teaspoon salt
1/2 cup vinegar
1 1/2 cups water

Steps:

  • Salad: Wash carefully, Endive or spinach leaves, then chop or tear into 1 inch long pieces.
  • Top with sliced eggs.
  • Cover with hot bacon dressing and serve.
  • Hot Bacon Salad Dressing: Brown bacon; remove from drippings and crumble.
  • Combine sugar and flour.
  • Add egg, salt, vinegar and water and mix until smooth.
  • Pour into bacon drippings and heat stirring constantly, until mixture thickens.
  • Add crumbled bacon.

1 ½ cups white sugar
3 teaspoons cornstarch

¼ cup water

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
  • In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.
