RAISIN-NUT BARS
These cinnamon-scented bar cookies laced with chewy raisins and crunchy walnuts make a scrumptious dessert or snack.

Steps:
- Mix flour, cereal, baking powder and cinnamon in small bowl; set aside.
- Beat brown sugar and margarine in medium bowl with electric mixer on medium speed until creamy. Beat in eggs until smooth. Stir in flour mixture until blended. Add 1/2 cup of the chopped walnuts and raisins. Spread mixture in lightly greased 13x9-inch baking pan. Sprinkle with remaining 1/2 cup chopped walnuts.
- Bake at 350°F for 20-25 minutes or until golden brown. Cool completely in pan on wire rack. Drizzle with Powdered Sugar Glaze. Cut into bars.

BAKED RAISIN BRAN (BARS)
I created these raisin bran bars in hopes of getting my family started with something healthy in the morning. Good anytime! I try not to use refined sugar so I made with splenda. You may have to adjust amount of sweetner, depend on how sweet the cereal is to start out with. I used regular splenda, not the one for baking. If using splenda for baking or splenda brown sugar, be sure to cut in half.

- In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. Gradually add to the coffee mixture until blended. Stir in raisins and pecans., Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-20 minutes or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. Cool on a wire rack for 5 minutes., Meanwhile for icing, in a small bowl, combine the confectioners' sugar, vanilla and enough water to achieve spreading consistency. Spread over warm bars.

- Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting cookies out of pan).
- Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
- Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.
- Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing. Cut into rectangular bars to serve.

- In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in raisins. Cool to room temperature without stirring., Meanwhile, in a large bowl, combine the flour, oats, brown sugar, baking soda and salt. - Put the raisins in a jug with the egg whites and vanilla and blitz with a hand blender until the raisins are finely chopped. Stir in the oats, hemp powder, ground almonds and nut butter and mix well to make a soft dough.

RAISIN-WALNUT BARS
So Very Good !! The filling is chewy, moist and delicious. Kind of reminds me of Pecan Pie, not the taste, but the texture.

Steps:
- 1. Blend one cup flour, butter, 1/4 cup brown sugar and 1/4 teaspoon salt with a pastry blender or 2 knives until mixture is evenly combined. Pat into bottom of a 13" x 9" baking pan. Bake at 325 degrees for 15 minutes or until golden.
- 2. Mix remaining brown sugar, eggs, remaining flour, vanilla, baking powder, ginger or cinnamon and remaining salt in a medium bowl. Stir in walnuts and raisins. Pour raisin mixture over hot crust.
- 3. Bake an additional 20 to 25 minutes until top is golden and set. Cool completely and cut into bars.
CHEWY COCONUT RAISIN BARS
Although I haven't tried this yet, the recipe looks too good not to pass along. I found it on the back of a Baker's Angel Flake Coconut package.

- Beat butter till light and fluffy. Gradually beat in powdered sugar. Stir in 1 cup flour and 2/3 cup of the coconut.
- Press into ungreased 9 inch square pan and bake at 350F for 20 minutes, or till golden brown.
- Beat eggs and vanilla. Gradually beat in brown sugar. Stir in 2 tbsp flour and the baking powder. Stir in raisins and 1 c of the coconut.
- Pour over crust in pan and bake @ 15 minutes longer. Sprinkle with chips.
- Cover with foil 2-3 minutes until chips soften. Carefully spread to frost.
- Sprinkle with remaining coconut.
- Cool and cut into bars. Garnish with additional raisins.
