My whole family loves this recipe, even my husbands family loves it! This came from an Amish family in Indiana.

Number Of Ingredients 8

3/4 cup white sugar
1/8 teaspoon salt
2 cups half-and-half cream
1/2 cup whipping cream
1/4 cup brown sugar
1/4 cup cornstarch
1/2 cup margarine or 1/2 cup real butter
1 teaspoon vanilla

Steps:

  • In sauce pan combine, white sugar, salt, half-and-half and whipping cream.
  • Bring to a boil.
  • In another sauce pan, combine Br.sugar & cornstarch.
  • Gradually whisk in hot mixture into br.sugar mixture.
  • Add margarine/or butter (to me this makes it even better.).
  • Cook over med. heat, whisk constantly, 5 min or until thick.
  • Simmer 1 minute and stir in van.
  • Pour into uncooked pie shell and sprinkle w/cinnamon and nutmeg.
  • Bake at 375°F for 25 minutes.

An authentic Amish recipe that I brought home from northern Indiana. I've included the traditional filling recipe as well as the modern version. Enjoy!

CHOCOLATE COOKIE/CAKE PART
2 cups sugar
1 cup oil
2 eggs
4 cups flour
1 cup dry cocoa (dutch process cocoa, if you can find it.)
1 tsp. salt
1 cup sour milk or buttermilk
2 tsp. vanilla
2 tsp. baking soda
1 cup hot water
TRADITIONAL FILLING
2 egg whites, beaten
4 cups confectioners sugar, divided
1 tsp. vanilla
1 1/2 cups crisco
MODERN FILLING (VERY GOOD, BUT IS NOT QUITE THE SAME AS THE TRADITIONAL FILLING, FOR THOSE WHO DO NOT WANT TO USE EGG WHITE AND/OR CRISCO.)
1 cup butter, softened
2 1/2 cups confectioners sugar
4 cups marshmallow fluff
2 tsp. vanilla

Steps:

  • 1. Chocolate Cake/Cookie Part- Combine sugar, oil and eggs in large mixing bowl. Beat until creamy. Sift together flour, dry cocoa and salt. Add dry ingredients to creamed mixture alternately with sour milk or buttermilk. Stir in vanilla.
  • 2. In separate bowl, whisk baking soda and hot water together until soda is dissolved. Stir into batter until thoroughly mixed.
  • 3. Drop by rounded spoonfuls of desired size onto well greased baking sheets. Bake at 350 degrees for 8-10 minutes, or until top springs back when touched. (For moist Whoopie Pies, avoid over baking.)
  • 4. Remove from sheets and allow to cool completely. Spread filling on flat side of one cookie and top with another. Wrap completed Whoopie Pies individually in Saran Wrap.
  • 5. Traditional Filling- Mix together egg whites, 2 cups of sugar and vanilla. Beat in Crisco and remaining sugar.
  • 6. Modern Filling- Beat together butter, confectioners sugar, marshmallow fluff and vanilla until smooth, approx. 3 minutes. Fill cookies as above.

2 large apples, peeled, cored, and diced
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons cider
1 teaspoon cornstarch
2 cups flour, sifted
4 Tablespoons butter
2 egg yolks
1/3 cup HOT milk
1/4 teaspoon salt
1 teaspoon vanilla
2 Tablespoons milk
1 cup powdered sugar
Vegetable or canola oil, for frying

Steps:

  • To make the filling, combine the apples, brown sugar, cinnamon, and vanilla in a small sauce pan. Cook on medium heat until juices start to form, about 3 minutes. Make a slurry by whisking together the cider and cornstarch. Stir this into the pan, turn the heat up to high, and cook, stirring constantly, until mixture is thickened, about 3 minutes longer. Remove from heat and set aside.
  • For the dough, cut the butter into cubes then use a pastry cutter to work it into the flour. Continue to cut in the butter until it's in small pea-sized lumps. In a small mixing bowl, beat the egg yolks and salt together. Slowly pour in hot milk, stirring constantly. Pour the milk mixture into the flour mixture. Stir together until a dough begins to form. Turn the dough out onto parchment or wax paper, and knead it until it smooths out, about 1 minute.
  • Divide the dough into 6 equal sized pieces and roll them each into a ball. Use a rolling pin to roll them out to about 6 inch circles. Fill each circle with 2 Tablespoons of apple mixture. Fold the dough in half over the filling and pinch the edges together to seal. You can flute the edges or use a fork to crimp them. If the edges aren't sealing properly, wet them with a little water.
  • Heat the oil in a deep sauce pan to 350 degrees. You can test to see if the oil is ready by sticking a wooden spoon into the center of the pot. If small bubbles form around the handle, you're ready to go.
  • Place the pies in the hot oil one at a time and fry until golden brown on both sides, about 2-3 minutes per side. Remove from the oil with a slotted spoon and place on paper towels to dry.
  • Repeat with remaining pies.
  • While the pies fry, make the glaze. In a small bowl, whisk together the powdered sugar, vanilla, and milk until smooth. It's best to glaze the pies while they're still warm. I use a pastry brush to brush the glaze on one side then let it dry, flip them over, and glaze the other side. You can put two coats of glaze on for extra sweetness if you like, but wait for the glaze to harden in between coats.
  • Pies can be stored uncovered for 2-3 days. If you want the glaze to remain hard, do not place the pies in a plastic bag or sealed container. Just leave them on a wire rack or pan.

This pie is opaque, quivery and spicy and the taste of vinegar is not overly pronounced. If you did not know it contained vinegar. I don't think you would guess. I love to serve this pie to guests and watch the look on their face when I mention the ingredients.

3 large egg yolks
4 tablespoons all-purpose flour
1 cup brown sugar, packed
1/8 teaspoon salt
1 teaspoon ground allspice
1/4 teaspoon mace
1/4 cup cider vinegar
2 cups warm water
1/4 cup butter, softened
1 (9 inch) baked pie crusts
3 large egg whites
1/4 teaspoon salt
1 teaspoon cider vinegar
6 tablespoons granulated sugar
1 1/2 teaspoons cornstarch

Steps:

  • In the top of a double boiler, beat the egg yolks, well.
  • Combine the flour, sugar, salt and spices and blend into the egg yolks.
  • Add the vinegar and mix and then add the warm water.
  • Simmer over boiling water for 25 minutes or until the mixture is thickened -- the water should just reach the bottom of the top pan.
  • Stir in the butter and cool slightly, about 15-20 minutes, without stirring.
  • Pour the warm filling into the baked shell.set aside to cool.
  • Preheat the oven to 325°F.
  • In a large mixing bowl, beat together the egg whites, salt and vinegar until soft peaks form.
  • Gradually add the sugar, 1 tbsp at a time, continue beating until stiff peaks form.
  • Sprinkle in the cornstarch just before the beating is completed. The peaks should not topple over when the beater is raised.
  • Spread the meringue over the filling all the way to the edge of the pastry.
  • Bake for 5-8 minutes, or until the meringue is golden brown.
  • Cool the pie completely and then refrigerate.
