3 hard-cooked eggs, chopped
1 small onion, chopped
3 stalks celery, chopped
1 small red bell pepper, seeded and chopped
2 tablespoons dill pickle relish
2 cups creamy salad dressing (e.g. Miracle Whip)
3 tablespoons prepared yellow mustard
3/4 cup white sugar
2 1/4 teaspoons white vinegar
1/4 teaspoon salt
3/4 teaspoon celery seed

Steps:

  • Bring a pot of lightly salted water to a boil.
  • Add macaroni, and cook for 8 to 10 minutes, until tender.
  • Drain, and set aside to cool.
  • In a large bowl, stir together the eggs, onion, celery, red pepper, and relish.
  • In a small bowl, stir together the salad dressing, mustard, white sugar, vinegar, salt and celery seed.
  • Pour over the vegetables, and stir in macaroni until well blended.
  • Cover and chill for at least 1 hour before serving.

I went on a search for a good sweet(ish) Macaroni salad. I realize I am not capable of leaving a recipe alone so this is my version. I also do not love eggs but the fam does so they say that the eggs must be added!

1 lb salad macaroni
4 hard-boiled eggs (chopped)
1 small onion, finely diced
3 celery ribs, diced small
1 small sweet pepper, seeded and diced small (red or orange)
2 cups light mayonnaise (do not use Miracle Whip)
1/2 cup sugar
1/8 cup yellow mustard
2 tablespoons dill pickle relish (mine had tabasco in it for a kick)
1 tablespoon white vinegar or 1 tablespoon apple cider vinegar
3/4 teaspoon celery seed
1/4 teaspoon salt
paprika (to garnish)

Steps:

  • Cook the macaroni according to directions, drain well.
  • While pasta is cooking mix up all the dressing ingredients till well blended and set aside.
  • Chop up all the veggies.
  • When macaroni has cooled and drained well mix in the dressing (add all of it if you like very creamy salad.if you don't like a lot of dressing leave out about 1/2-3/4 c of the dressing. Remember that as it sets it will soak up some of the dressing.
  • Refrigerate for at least one hour, the longer you let it set the better the flavor. Overnight is not to long! Servings are approximately Does not include cook time or the chill time.

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain. Rinse with cold water until cool; drain.
  • Chop egg whites; toss in a bowl with the macaroni, celery, sweet onion, and shredded carrot.
  • Blend egg yolks, mayonnaise, mustard, vinegar, milk, sugar, and salt in a blender until smooth; pour over the macaroni mixture and stir to coat.

I really love Amish Macaroni Salad, and this is my favorite recipe for it. Amish Macaroni Salad is somewhat on the sweet side, so if you don't mind your salads sweet, I think you'll like it too. It's even better the next day, so if you can, let it sit overnight. I got the recipe from a Berk's County website a while back. NOTE: It does make a lot of salad, so if you wanted a smaller amount, it halves easily. Just use the 3 eggs chopped up and just garnish with paprika. Time does not including cooking the macaroni.

1 lb macaroni (or small shells)
1/2 cup finely chopped celery
1/2 cup finely grated carrot
1/4 cup finely chopped onion (more if desired)
1/4 cup chopped green pepper (optional, see note at end)
6 hard-boiled eggs (reserve 1 to slice for garnish, and chop the remaining 5)
paprika, for garnish
2 cups Miracle Whip
1/4 cup vinegar

  • Cook macaroni as directed on package; Drain& cool.
  • In a bowl, whisk together the dressing ingredients so they are well-combined and smooth.

  • Fold the dressing gently into the macaroni salad mixture.
  • Place into your serving bowl and garnish with the reserved slice egg and paprika.
  • Let sit overnight for the best results.
  • NOTE: It was not in the original recipe, but I sometimes add 1/4 to 1/2 cup chopped green pepper if I have it around.

3 hard boiled eggs, chopped
1/2 c. finely chopped onion
1/2 c. chopped celery (about 2 stalks)

1 ½ c. Miracle Whip salad dressing
3 T. yellow mustard
1/2 c. granulated sugar
1 T. white vinegar
1/4 tsp. salt
3/4 tsp. celery seed

Steps:

  • Cook macaroni in boiling salted water according to package directions. Drain and set aside to cool while preparing the rest of the ingredients.
  • In a large bowl, combine chopped eggs, onion, celery, red pepper, and relish.
  • In a separate smaller bowl, whisk together Miracle Whip, mustard, sugar, vinegar, salt, and celery seed. Pour over the chopped egg mixture. Add macaroni and stir until well combined.
  • Cover and chill for at least an hour before serving. I like to let it chill overnight before serving to allow the flavors to fully meld.
  • I use less sugar than what's called for in most Amish Macaroni Salad recipes. If you'd like an even sweeter dressing, increase the sugar to 3/4 cup.
  • Some recipes call for up to 2 cups of Miracle Whip. So if you'd like a little "wetter" salad, add up to 1/2 cup more.
  • Use basic yellow or white onion, or Vidalia onions when they're in season.

2 C mayo
⅓ C sugar
3 Tbsp yellow mustard
2 Tbsp sweet relish
2 tsp white vinegar
1 tsp celery seed
½ tsp salt
4 finely chopped hard boiled eggs plus 2 more for slicing as garnish if desired.
1 Tbsp white vinegar (for cooking eggs)
1 lb box elbow macaroni*
1 Tbsp salt
⅔ C finely chopped sweet onion
⅔ C finely chopped celery
⅔ C finely chopped sweet bell pepper
⅔ C finely chopped green bell pepper

Steps:

  • Place 4-6 eggs in a pot of cold water. Bring to a boil over high heat. Once boiling, turn off the water, cover the pot, and allow the eggs to sit in the hot water for 11 minutes, then place the eggs in an ice bath or rinse with cold water until they are cool. Refrigerate until you are ready to use.
  • While the eggs are cooking mix together all of the dressing ingredients in a large bowl until smooth and then set it aside.
  • Bring 4-6 quarts of water to a boil in a large pot. Add 1 Tbsp of salt and then add the pasta to the water. Boil the pasta according to the package instructions until it is al dente (approximately 7 minutes). Drain the pasta and lightly rinse it with cold water. Allow the pasta to come to room temperature before incorporating it into your salad.
  • While the pasta water is heating and the pasta is cooking, chop all of the vegetables.
  • Fold the cooked and cooled pasta into the dressing. Next, fold in the vegetables. Finely chop the eggs and fold them in. Serve immediately, but it is best served chilled. Store in the refrigerator for up to five days.

4 egg yolks (hard boiled)

  • Cook macaroni according to package directions. Right before draining, take a measuring cup and scoop out about a cup of that hot pasta water. Drain and let cool for a few minutes.

KINDA AMISH MACARONI SALAD

Why only "kinda" Amish? Good question - shows you're paying attention. While the recipe from which this was adapted proudly proclaimed to be Amish Macaroni Salad, I found it to be much too sweet and not eggy enough for our tastes. After playing a bit with proportions and trying different types of vinegar and mustard, this is what resulted -- and although it's only Kinda Amish, it is, indeed, Very Deelish. You may save one hard cooked egg and slice it to arrange on the top, then sprinkle with paprika. Or you can just put all of the eggs in the salad and mix in some paprika too, and garnish with a few little tufts of fresh parsley. Or, for the presentationally-impaired like myself, just use all the eggs right in the salad, and forget the paprika and parsley. Parsley's always a little bit suspicious in my book anyway - once I got some parsley from a salad bar and it was plastic. Yeah, it was part of the decoration, but you know, they could warn people. "Attention Restaurant Patrons: Salad Bar Decorations Are Non-Edible. Everything Else Is Okay To Eat. No, Really. We Mean It." Oh, by the way, you'll want to prepare this a day ahead, and chill overnight in a padlocked refrigerator. Otherwise, it'll vanish long before you planned to serve it.

4 cups macaroni (cooked and cooled (about 2 cups dry))
3 hard boiled eggs (chopped)
1/2 cup celery (diced )
1/2 cup red bell pepper (diced )
1/2 cup white onion (diced)
2 tablespoons sweet relish
3 tablespoons prepared yellow mustard
1 cup real mayonnaise
1/3 cup white sugar
1/2 teaspoon salt
1/2 teaspoon corriander

Steps:

  • Boil 4 cups of macaroni noodles. Drain and rinse with cold water. Make sure to shake off as much extra water as possible before moving on. Set macaroni noodles aside.
  • In a bowl, add cut up hard boiled eggs, chopped celery, diced red pepper, diced onion and sweet relish to a large mixing bowl.
  • Mix all ingredients well.
  • Measure and stir in mustard, mayonnaise, sugar, salt and coriander and mix well. Make sure all ingredients are fully incorporated.
  • Dump in cooled and boiled macaroni noodles. Stir all ingredients together very well.
  • This salad does best if you can cover and refrigerate overnight so the sugar can dissolve, however, it is fine to eat immediately if necessary. As with all macaroni salads, serve chilled.
  • If time in fridge, give it a good stir before serving to pull up any settling of mayo and mustard dressing.

Amish Macaroni Salad is a potluck classic! This pasta salad combines cooked macaroni, hard boiled eggs, crispy veggies and a creamy dressing for a side dish your friends will ask for again and again.

2 1/2 cups uncooked elbow macaroni
2 cups Miracle Whip
2 tablespoons dill pickle relish
3 tablespoons yellow mustard
⅓ cup granulated sugar
2 teaspoons white vinegar
1/4 teaspoon salt
¼ teaspoon black pepper
3/4 teaspoon celery seed
3 hard boiled eggs, chopped
¼ diced cup sweet onion
3 stalks celery, diced
1 large red bell pepper, seeded and diced

Steps:

  • Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool.
  • In a medium bowl, whisk together the Miracle Whip, relish, mustard, sugar, vinegar, salt, pepper, and celery seed.
  • In a large bowl mix together the cooked and cooled macaroni with the dressing. Gently fold in eggs, onion, celery and bell pepper.
  • Cover and cool for at least 3 hours before serving.

1 egg (beaten)
3 tablespoons sugar
1 tablespoon gluten free flour
1/2 cup water
1/2 cup white vinegar
1/4 teaspoon Himalayan sea salt
1/4 teaspoon freshly ground Tellicherry Black Pepper
2 tablespoons butter
2 carrots (diced)
2 stalks celery (chopped)
2 tablespoons grated onion
1 cup peas
1/2 cup fresh parsley

Steps:

  • Cook macaroni according to package instructions. Drain, and set aside in a large bowl to cool.
  • In a saucepan, add the egg, sugar, flour, water, vinegar, salt, pepper, and butter. Whisk together and cook over low heat until the dressing begins to thicken.
  • Add the carrots, celery, onion, and peas to the macaroni. Mix well.
  • Once dressing has cooled, pour over the cooled macaroni noodles and vegetables. Toss well to coat the noodles and vegetables in the dressing. Top with fresh chopped parsley and enjoy!
