Caramel pudding was always a favorite in the family when I was growing up, now I enjoy making it for my family. My grandmother often cooked "from scratch", and she still does. As you can see from this recipe, it uses a good many "on-the-farm" products, which made this tasty treat even more enjoyable-we'd get to eat the fruits of our labor!

6 cups milk
3 large eggs
1-1/2 cups packed brown sugar
1/2 cup sugar
3/4 cup all-purpose flour
2 teaspoons vanilla extract
2 tablespoons butter

Steps:

  • In a large saucepan, scald milk. Meanwhile, in a bowl, beat eggs until creamy. Add sugars, flour and 1-1/2 cups of the scaled milk; slowly pour into saucepan with remaining milk. Cook and stir over medium heat until pudding thickens, about 15-20 minutes. Remove from the heat; add vanilla and butter. Stir well. Continue to stir pudding every 10 minutes until cooled.

This recipe comes from an Amish family who package this treat for gifts to friends and neighbors every Christmas. It is truly the tastiest, easiest, and most foolproof caramel corn recipe you'll ever find!

7 quarts plain popped popcorn
2 cups dry roasted peanuts
2 cups brown sugar
½ cup light corn syrup
1 teaspoon salt
1 cup margarine
½ teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
  • Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
  • Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes. Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces. Allow to cool completely, then store in airtight containers or resealable bags.

2 cups milk, or more as needed
2 cups white sugar
⅓ cup cocoa powder
4 tablespoons all-purpose flour
4 egg yolks
1 teaspoon vanilla extract

Steps:

  • Combine milk, sugar, cocoa, and flour in a saucepan over medium-low heat, stirring constantly. Add egg yolks and turn heat up to medium-high, continuing to stir, until thick, about 15 minutes. Remove from heat and stir in vanilla extract. Serve warm or chilled.

1/2 cup warm water
2 tablespoons yeast
2 tablespoons sugar
3 1/2 ounces vanilla instant pudding
2 cups milk
1/2 cup butter (, melted)
2 eggs
1 teaspoon salt
6 cups bread flour
6 tablespoons butter
1 1/4 cup brown sugar
1 tablespoon sugar
3/4 cup butter
1 1/2 cups brown sugar
1/2 teaspoon salt
1 teaspoon caramel flavoring or vanilla teaspoon caramel flavoring or vanilla
6 tablespoons milk
powdered sugar

Steps:

  • Combine first three ingredients.
  • Mix pudding with milk and add to yeast mixture.
  • Stir in melted butter, beaten eggs and salt.
  • Add flour, mix well. Roll dough on floured surface.
  • Spread with 6 tablespoons melted butter, 1 1/4 cup brown sugar and 1 tablespoon cinnamon.
  • Roll up and slice 1 inch thick.
  • Place on a greased cake pan.
  • Let rise until double.
  • Bake at 350 for 20 minutes or until done. Cool. Frost with caramel icing.

1 pint cream or 1 pint milk
4 eggs
1/4 teaspoon cinnamon
1/2 teaspoon vanilla

  • Soak torn bread in cream.
  • Add sugar and butter, beaten eggs, cinnamon, salt and vanilla, stirring to blend.
  • Put into a buttered baking dish.
  • May add a little chopped citron, chopped raisins or dates if you wish.
  • Bake approximately 40 minutes in a 375 oven.

4 cups milk
1 cup sugar
4 eggs
1 dash salt
1 teaspoon vanilla
4 cups bread, cut in cubes (1inch or smaller)
1/2 cup raisins
cinnamon (optional)
light cream (half & half) or milk

Steps:

  • Preheat oven to 350°F
  • Grease the smaller of the two baking dishes with butter, and put the remaining butter in the saucepan with milk sugar.
  • Place over medium heat, stirring occasionally, until the butter is melted.
  • Whisk eggs in mixing bowl and add hot milk slowly while whisking constantly.
  • Stir in vanilla and salt.
  • Place bread cubes in buttered baking dish, and sprinkle with raisins.
  • Pour milk over bread cubes and stir slightly.
  • Sprinkle with cinnamon if you like.
  • Place the smaller baking dish in the larger one.
  • Pour hot water in the larger dish until it goes 1/2 way up the smaller dish.
  • Carefully set both dishes in preheated oven.
  • Bake til set- about one hour.
  • Serve with light cream or milk if desired.

2 cups chopped pitted dates
1 1/2 teaspoons bicarbonate of soda
1 teaspoon grated fresh ginger
90 g butter
1 cup caster sugar
3 eggs
1 1/2 cups self-raising flour
1/4 teaspoon ground cloves
1/2 teaspoon mixed spice
creme fraiche or whipped cream, for serving
100 g butter
1 cup soft brown sugar
1/3 cup golden syrup
3/4 cup thickened cream

Steps:

  • Preheat oven to 180oC.
  • Grease and line the base of 23cm deep round cake tin.
  • Put the dates in a pan with 1 3/4 cups water, bring to the boil then remove from the heat.
  • Add the bicarbonate of soda and ginger and leave to stand for 5 minutes.
  • Coarsley mash with a potato masher.
  • Cream together the butter, sugar and 1 egg.
  • Beat in the remaining eggs one at a time.
  • Once the eggs are well beaten, gently fold in the sifted flour and spices, add the date mixture and stir until well combined.
  • Pour into the tin and bake for 55-60 minutes, or until a skewer comes out clean when inserted into the middle.
  • Cover with foil if over browning during cooking.
  • Leave to stand for 5 minutes before turning out onto a serving plate.
  • To make Caramel Sauce: Put all the ingredients in a pan and stir over low heat until the sugar has dissolved.
  • Simmer uncovered, for about 3 minutes, or until thickened slightly.
  • Brush some sauce over the top and sides of the pudding until well glazed.
  • Serve immediately with the sauce and a dollop of cream.
