Houston's hugely popular spinach-and-artichoke appetizer wasn't always such a crowd pleaser. It started as a lowly side dish in the mid '80s, after Houston's first opened in Nashville, and it came dangerously close to disappearing from the menu altogether until chefs at the restaurant's Chicago outpost noticed customers ordering it with chips and eating it like a dip. The chefs tweaked founder George Biel's recipe and gave it a snappy name, Chicago- Style Spinach Dip, and it became an instant hit. Some fans, like Isabel Mondejo from Orlando, FL, can't get enough of it and wrote to us asking for the recipe. The company wouldn't divulge its secrets, so the chefs in Food Network Kitchens created this perfect imitation.

2 10-ounce bags spinach, stems removed
1 tablespoon unsalted butter
2 tablespoons minced onion
1 clove garlic, minced
2 teaspoons all-purpose flour
1 1/4 cups whole milk
1/2 teaspoon fresh lemon juice
1 teaspoon Worcestershire sauce
1 1/4 cups grated Parmesan cheese
1/4 cup sour cream, plus more for serving
1/2 cup shredded white sharp cheddar cheese
1/2 cup frozen artichoke hearts, thawed, squeezed dry and roughly chopped
Tortilla chips and salsa, for serving

Steps:

  • Bring a large pot of salted water to a boil. Stir in the spinach and cook until bright green, about 30 seconds. Drain and rinse under cold water; squeeze out the excess moisture, then finely chop.
  • Melt the butter in a large saucepan over medium heat. Add the onion, garlic and 1/2 teaspoon salt and cook until the onion is soft, about 2 minutes. Add the flour and cook, stirring, until lightly toasted, about 1 minute. Whisk in the milk and cook, whisking constantly, until thickened, about 1 minute. Remove from the heat. Stir in the lemon juice, Worcestershire sauce, Parmesan and sour cream.
  • Return the pot to medium heat. Add the spinach, cheddar and artichokes and stir until the cheese melts and the dip is heated through. Serve warm with tortilla chips, salsa and sour cream.

Spinach artichoke dip has a way of inciting controversy. Should it be served cold or hot? Is it lowbrow or classic? Should it be served in a bread bowl or with tortilla chips? Well, the good news is that there are no wrong answers here, only delicious, creamy dip. This particular one is best served hot (or at least room temperature), but it is also acceptable to spread it on crackers after being chilled. And with the inclusion of fresh spinach, it could almost be described as classy. Use canned artichoke hearts; they've got a tangier flavor and better texture than the frozen ones. If you want to go a step further, transfer it to a skillet and run it under the broiler after cooking, which gives you bubbling dip with a golden top.

2 tablespoons olive oil
1 large garlic clove, finely chopped
1 12-ounce bunch fresh spinach, finely chopped (or 1 10-ounce package frozen spinach, defrosted, drained and finely chopped)
Pinch of red-pepper flakes (optional)
Kosher salt and black pepper
1 (14-ounce) can quartered artichoke hearts, drained and coarsely chopped
8 ounces cream cheese, cut into 1-inch pieces
4 ounces fresh mozzarella, torn or shredded
4 ounces sour cream or full-fat Greek yogurt
1/4 cup Pecorino Romano or Parmesan, finely grated

Steps:

  • Heat olive oil in a medium pot over medium heat. Add garlic and cook, stirring until it's softened and fragrant, about 30 seconds.
  • Add spinach to pot one handful at a time, letting each handful completely wilt before adding the next. Add crushed red pepper, if using, and season with salt and pepper. Continue to cook, stirring frequently, until most of the liquid from the spinach has evaporated (no need to drain), about 3 minutes. Add artichokes and season with salt and pepper. Cook for a few minutes, just to take the raw edge off the artichokes.
  • Reduce heat to low and add cream cheese and mozzarella. Using a wooden spoon or spatula, stir until all the cheese has melted, about 3 minutes. Stir in sour cream and pecorino, and season with more salt and pepper. You can certainly eat this dip straight from the pot (or transferred to a serving bowl), but running it under the broiler for a crispy top is also an excellent option. To do so, transfer dip to a small ovenproof skillet (6 to 8 inches). Place in oven and broil until the top is golden and the dip is bubbling, 5 to 8 minutes. Let sit a minute or two before serving.

14 ounces can artichoke hearts, drained very well and chopped (packed in water)

4 ounces can water chestnuts, drained and chopped
1/4 cup nonfat sour cream
1/4 cup fat-free mayonnaise
1/4 cup reduced-fat grated parmesan cheese, divided
3 tablespoons minced shallots
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • If you want to serve this dish hot, preheat oven to 350 degrees.
  • In a large bowl, combine cream cheese, sour cream, mayo, and 3 tablespoons of the parm-style topping. Add the salt and cayenne pepper, and then stir until smooth.
  • In a pan sprayed with nonstick spray, cook the shallots and garlic over medium heat until soft (1 - 2 minutes). Set aside.
  • To the large bowl, add spinach, artichoke hearts, water chestnuts and garlic/shallot mixture. Stir well.
  • If serving dip cold, top with the remaining tablespoons of parm-style topping. If you want to serve the dip hot, transfer to a casserole dish, top with the remaining parm, and then bake for 30 minutes (or until bubbly).

This is also considered by my sister to be one giant heart attack waiting to happen, but well worth it. Serve with tortilla chips and be prepared to take home an empty bowl. Enjoy!

2 (14 ounce) cans canned artichoke bottoms in water
2 (8 ounce) bricks of softened cream cheese
2 (4 ounce) cans diced green chilies
1 cup mayonnaise
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 roma tomatoes, chopped (for garnish) (optional)
4 green onions, sliced (for garnish) (optional)
tortilla chips

Steps:

  • Heat oven to 400.
  • Drain and chop artichoke bottoms.
  • Combine first 6 ingredients in oven proof dish. I use a stoneware dish.
  • Bake for 15 minutes.
  • After 15 minutes, stir to combine melting ingredients.
  • Bake another 15 minutes.
  • Meanwhile chop fresh roma tomatoes in a large dice. Set aside.
  • Thinly slice green onions. Set aside.
  • Check dip to make sure all ingredients are thoroughly incorporated and bubbling.
  • Garnish with tomatoes and green onions.
  • Special note: this can be made in the crockpot as well, and even in the microwave with good results. I do prefer the oven method. What matters most is that it is bubbling hot.

1 onion, chopped fine

3 tablespoons vegan mayonnaise
1 1/2 cups vegetable broth
1 tablespoon salt
1 tablespoon ground pepper
1 teaspoon dried basil
1 dash cayenne

Steps:

  • 1. Preheat oven to 350.
  • 2. Sautee finely chopped onion and garlic for 3 minutes until starting to brown. Add in spinach, and artichokes and sautee for about 6 minutes or until well combined and tender (You may want to food process this depending on your desired texture).
  • 3. In a food processor or blender add white beans, veganaise, vegetable broth, nutritional yeast, ACV, and spices until creamy.
  • 4. Combine all ingredients in a baking dish and bake for 20 minutes until hot.
  • Add extra vegetable broth during cooking to give it a silky, bubbling texture.
  • (this batch is for a large party, make 1/2 if under 10 people).

1/4 cup butter
2 tablespoons minced garlic
1/2 cup minced onion

1 pint heavy whipping cream
1/4 cup chicken stock
2 teaspoons fresh lemon juice
1/2 teaspoon hot sauce
1/4 teaspoon ground cayenne pepper
1 teaspoon salt
2/3 cup grated fresh pecorino romano cheese
1/4 cup sour cream
1 cup shredded white cheddar cheese
1 (12 ounce) jar marinated artichoke hearts, drained and coarsely chopped.

Steps:

  • Preheat oven to 350 degrees.
  • Squeeze all of the moisture out of the thawed spinach (I use a potato ricer- it does a great job) and set aside.
  • In heavy saucepan over medium heat, saute garlic and onion in butter until soft, about 15 or 20 minutes.
  • Add flour and cook for 3 minutes.
  • Slowly whisk in cream and stock and bring to a boil, stirring constantly.
  • Once it starts boiling add lemon juice, hot sauce, salt, cayenne pepper and Romano Cheese, stirring until the cheese had melted.
  • Remove from heat and add sour cream and then fold in spinach and artichoke hearts.
  • Transfer to a baking dish and sprinkle cheddar on top.
  • Bake until cheese has melted or if your baking dish is broiler proof broil until cheese had melted and is slightly browned on top.
