AMARANTH "CREAM OF WHEAT"
A nutty, very satisfying "cream of wheat" style breakfast cereal, without the giving you any "gluten-baby" effects:) Super Grain is one of the very few grains that is a COMPLETE PROTEIN all by itself...also a good source of Iron, Calcium, Magnesium and Phosphorus, and a very good source of Manganese. You can get amaranth grains in the bulk section at Whole Foods, or order online from many natural ORGANIC foods retailers.

Steps:
- Rinse grains in cool water, and let soak for as long as you can (a few mins to 24hrs ok!). I soak mine overnight, this way it is not necessary to toast the grains first. Less heat=more nutrients!
- Toast grains (if not soaked) in coconut butter (yum) or oil (if you don't have this on hand use butter or grapeseed oil) lightly, until golden.
- Add 1 cup of boiling water. Simmer for 15-20mins, you will notice the grains become slightly translucent.
- Transfer to a bowl, add you favorite "nut" or oat milk, stevia or coconut nectar. You can also do a grits style version with butter and salt -- a thicker consistency will be polenta like.

- Drain and rinse amaranth. In a medium saucepan, combine the amaranth with 1/2 cup water and 1/2 cup coconut milk, a pinch of salt, and vanilla extract. Bring to a boil, once boiling, turn the heat down to low and reduce to a simmer.
- Cover and let simmer for 15 minutes. Remove from heat and let sit for 10 more minutes to thicken up a bit.
- Once the amaranth is cooked, divide it between two bowls. Drizzle a couple of tbsp of coconut milk on top, as well as a tbsp of maple syrup to each bowl. Top with the strawberries and sliced almonds.
