- Preheat oven to 375°. Place chicken in a greased 13x9-in. baking dish. In a small bowl, mix ketchup, soup, green pepper, vinegar, brown sugar and mustard; stir in pineapple. Pour over chicken., Bake, uncovered, 25-35 minutes or until a thermometer reads 165°. Serve with rice. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.

HAWAIIAN CHICKEN RECIPE
This Hawaiian Chicken is a quick and easy stir fry recipe made with chicken, red bell pepper, pineapple and delicious sweet and sour sauce! The best part it takes only 30 minutes to make the whole dinner.

- In a mixing bowl, add pineapple juice from the can (about 1 cup), 1/3 cup chicken broth, ¼ cup soy sauce, 2 tbsp brown sugar, 1 clove minced garlic, and 1 teaspoon grated ginger. If you like your food a bit spicy, you can add ¼ tsp red pepper flakes. Mix it together and set aside.
- Preheat a large skillet over medium heat and add 2 teaspoons olive oil.
- Add 1 pound chicken breasts cut into 1-inch pieces and season them with salt and pepper. Sear it for about 8 minutes, stirring occasionally, until the chicken is almost cooked through.
- Add diced red bell pepper and cook for 2-3 minutes until it's softened.
- Add pineapple chunks and cook for another 3-4 minutes.
- Add the sauce mixture to the pan, stir everything and let it simmer for about 5 minutes.
- Mix 1 tbsp cornstarch with 2 tbsp water. Add the slurry gradually to the pan, until the sauce thickens to the desired consistency. Cook for a couple of more minutes.
- Sprinkle with sesame seeds and chopped green onion before serving.

DUMP-AND-BAKE ALOHA CHICKEN AND RICE
This Dump-and-Bake Aloha Chicken and Rice is an entire dinner that cooks in one dish -- with just 10 minutes of prep!

- Preheat oven to 425°F (220°C). Grease a 9 x 13-inch baking dish.
- In the prepared dish (or in a separate bowl), whisk together brown sugar, soy sauce, garlic, and chicken broth. Add uncooked rice, onion, bell pepper, and pineapple (with its juice).
- Cover the dish tightly with foil. Bake for 50-55 minutes. Uncover the dish and use a fork to fluff the rice. At this point, the rice should be almost tender and most of the liquid in the dish should be absorbed. If the rice is still very firm, or if there's still a lot of sauce in the dish, cover and return it to the oven for 5-10 more minutes, or until the rice is just about done.
- Stir in the cooked chicken. Sprinkle the cooked, chopped bacon on top.
- Return the dish to the oven, uncovered, and bake for an additional 5-10 minutes, or until the chicken is warmed through, the rice is completely tender, and the bacon is crispy.
- Garnish with chopped green onions, chives, or herbs, if desired.

- Preheat oven to 425 degrees F. Spray a baking dish with cooking spray. I used an 11 x 7-inch dish.
- In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
- Add uncooked rice, onion, bell pepper, pineapple and it's juices and chicken. Cover the baking dish tightly with foil. Bake for 50 minutes. Once cooking is done, uncover and stir ingredients.
- Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until chicken is cooked through and rice is tender.
- Let stand 5 minutes before serving. Top with diced bacon and cilantro.

- Whisk pineapple with its juice and honey in a bowl until combined.
- Season chicken cubes with salt and pepper and place in a plastic bag covered with 2/3 of the pineapple sauce.
- Refrigerate for at least an hour.
- Place chicken on baking pan lined with foil and broil on middle rack for 6-8 minutes per side, or until cooked through.
- For dipping sauce: While chicken is broiling, put the remaining sauce in a saucepan and cook over medium heat for 1 minute or until thickened.

- Flatten the chicken to 1/4 inch thickness. Place flour in a large resealable plastic bag; add chicken and shake to coat.
- In a skillet over medium heat, brown chicken in oil for 3 to 5 minutes on each side or until juices run clear and chicken is cooked thoroughly. Remove and keep warm.
- Drain pineapple, reserving 1/4 cup juice. In a small bowl, combine juice and cornstarch until smooth. Add to skillet.
- Stir in honey, soy sauce, and pepper. Boil for 30 seconds or until thickened. Add pineapple and chicken; heat through.
- Serve over rice.
