Vintage is in! Especially when it's a classic Betty Crocker recipe for crunchy oven-fried chicken with chopped almonds. The classics never go out of style.

1 cut-up whole chicken (2 to 3 lb), skin removed
1 cup Gold Medal™ all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons paprika
2 eggs
3 tablespoons milk
2/3 cup finely chopped blanched almonds
2 tablespoons butter
2 tablespoons vegetable shortening

Steps:

  • Heat oven to 400°F.
  • In medium bowl, stir together flour, salt, pepper and paprika. In separate small bowl, lightly beat eggs and milk. Place almonds in shallow dish or on sheet of waxed paper.
  • Coat chicken with flour mixture. Dip in egg mixture; roll in almonds. Let chicken stand 5 to 10 minutes.
  • In shallow baking pan, melt butter and shortening in heated oven. Place coated chicken in pan.
  • Bake 30 minutes. Turn chicken; bake 15 to 20 minutes longer or until juice of chicken is clear when thickest pieces are cut to bone (at least 165°F).

1 cup fresh processed breadcrumbs (2 slices bread)
1/4 cup grated parmesan cheese
1/4 cup almonds, finely chopped
2 tablespoons chopped fresh parsley
1 minced garlic clove
1/4 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
6 chicken breast halves, pounded to 1/2 inch thickness

Steps:

  • Preheat oven to 400°.
  • In flat pie plate, stir together bread crumbs, Parmesan cheese, almonds, parsley, garlic, thyme and salt and pepper.
  • Pour oil into another pie plate and dip chicken.
  • Place chicken in crumb mixture to coat, then place on cookie sheet that has been sprayed with non stick spray.
  • Bake for 20 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife.
  • Do not turn chicken over.

Spiced almond flour and cornstarch for a crispy, gluten-free coating for fried chicken.

1 cup almond flour
1 cup cornstarch
2 teaspoons granulated garlic
2 teaspoons sweet paprika
2 teaspoons chopped thyme
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1 cup buttermilk
4 skinless, bone-in chicken drumsticks
4 skinless, bone-in chicken thighs
2 cups peanut oil, for frying
1 lemon, cut into wedges

Steps:

  • Whisk together the almond flour, cornstarch, garlic, paprika, thyme, cayenne, 1 tablespoon salt and 1/2 teaspoon black pepper in a shallow dish. Pour the buttermilk into another dish. Dredge the chicken pieces in the almond flour mixture, dip in the buttermilk and then dredge again in the flour mixture. Place the chicken on a rimmed baking sheet and refrigerate for 5 to 10 minutes.
  • Heat the oil in a 12-inch cast-iron skillet over medium-high heat until some flour dropped in turns golden right away. Add the chicken, reduce the heat to medium-low and fry until deep golden brown and cooked through to an internal temperature of 165 degrees F, about 18 minutes, turning every few minutes. Remove the chicken to a cooling rack or paper towels to drain. Season with salt and pepper. Serve with lemon wedges.

1 lb chicken breast (2 breasts)
1/2 tablespoon light soy sauce
1 tablespoon dry sherry
1/2 teaspoon salt
1 dash white pepper
1 cup shredded lettuce
1/3 cup toasted almond, finely chopped
1 green onion, chopped
4 tablespoons cornstarch
3 tablespoons water
3 cups chicken broth
3 tablespoons butter
2 teaspoons soy sauce
3 tablespoons chicken bouillon
3 tablespoons cornstarch
3 tablespoons flour (Wondra works well)
1/2 teaspoon baking powder
1 egg, beaten
1 tablespoon water

Steps:

  • Boned chicken breasts are thicker on one side than on the other. To make them more uniform, slice horizontally through the thick part and lay the meat "open". Do not cut the thinned section from the rest of the breast meat. Pound both sides with back of cleaver. One side will be smoother than the other. Mix light soy, sherry, salt and white pepper together and mix in chicken meat. Set aside 20 minutes. Wash and drain lettuce. Shred. Finely chop toasted almonds. Make sauce: Mix 4 T. cornstarch and 3 T. water in saucepan until smooth. Gradually mix in broth, butter, soy sauce, and bouillon. Bring to a boil, stirring constantly. Let boil for about 1 minute; reduce heat and keep warm. Make batter: Beat together 3 T. cornstarch, flour, baking powder, egg, and water until smooth. Coat chicken with batter and cook 5-7 minutes in 375* oil until golden brown. Drain chicken on paper towels. Cut cooked chicken into strips, put on bed of shredded lettuce and sprinkle with finely chopped almonds and green onions. Spoon on sauce and serve with steamed or fried rice.

3/4 cup dry bread crumbs
Coarse salt and freshly ground pepper
2 large eggs
2 teaspoons water
2 whole boneless skinless chicken breasts (1 1/2 to 2 pounds), split
1 1/2 cups sliced almonds, broken into pieces
2 tablespoons unsalted butter
2 tablespoons canola oil

Steps:

  • Preheat oven to 400 degrees. In a medium bowl, season bread crumbs with salt and pepper. Place eggs in a small bowl with 2 teaspoons water, and beat lightly. Dip chicken in egg, wiping away excess with your fingers, and dip in bread-crumb mixture. Dredge until lightly coated. Dip in egg again, and coat thoroughly with almonds.
  • Heat butter and oil in a 12-inch ovenproof skillet over medium heat. Saute chicken until nicely browned, about 3 minutes, and turn over. Cook 1 minute more; then transfer pan to oven, and bake until chicken is cooked through, about 10 minutes.

Love one dish meals! This has lots of veggies and chicken. If you have everything lined up and ready to go in the wok, this comes together quickly. If you don't have a wok, you can use a really hot Dutch oven. I don't usually serve it over rice to save carbs, but I'm sure you can.

1 1/2 teaspoons soy sauce (I use reduced sodium)
1 teaspoon fresh gingerroot, minced
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon dry sherry
2 1/3 cups chicken breasts, diced (about 1 1/2 lbs)
2 1/2 tablespoons cornstarch
2 tablespoons vegetable oil, divided
1 cup celery, chopped
1/2 lb fresh snow pea, ends snipped
1 (8 ounce) can bamboo shoots, drained and chopped
1 (8 ounce) can water chestnuts, drained and chopped
4 ounces mushrooms, sliced
1/2 cup slivered almonds, toasted
2 green onions, cut into 1 1/4 inch pieces

Steps:

  • Combine the first five ingredients in a large bowl; add the chicken and stir well. Let stand 10 minutes. Sprinkle the cornstarch over the chicken mixture, stirring well. Set aside. (Use this time to chop vegetables).
  • Pour 1 tbsp oil around the top of a preheated wok, coating the sides; heat at medium-high (325 degrees) for 1 minute.
  • Add the celery and mushrooms and stir fry for 1 to 2 minutes. Add the snow peas, and stir fry 1 to 2 minutes. Add the bamboo shoots and water chestnuts, and stir-fry for 1 to 2 minutes. Remove the vegetables from the wok; set aside, and keep warm.
  • Pour the remaining 1 tbsp oil around the top of the wok, coating the sides; heat at medium high for 1 minute. Add the reserved chicken mixture; stir fry for 3 to 4 minutes. Add the vegetable mixture, almonds, and green onions, and stir fry 1 to 2 minutes or until thoroughly heated.
