2 cup Wholesome Yum Blanched Almond Flour
1/4 cup Wholesome Yum Psyllium Husk Powder
1 tbsp Baking powder
1/2 tsp Sea salt
4 large Eggs ((beaten))
1/4 cup Coconut oil ((measured solid, then melted))
1/2 cup Warm water

Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line the bottom of an 8x4 in loaf pan with parchment paper.
  • In a large bowl, stir together the almond flour, psyllium husk powder, baking powder, and sea salt.
  • Stir in the eggs and melted coconut oil, then finally the warm water. Try to mix it well to create air bubbles.
  • Transfer the batter to the lined baking pan. Smooth/press the top evenly with your hands, forming a rounded top.
  • Bake for 55-70 minutes, until an inserted toothpick comes out clean and the top is very hard, like a bread crust. (Important: It will pass the toothpick test before it's completely done, so make sure the top is very crusty, too.) Cool completely before removing from the pan.

2-1/4 cups Unblanched Almond Flour
1/2 cup Vital Wheat Gluten
1/3 cup Psyllium Husk Powder
3/4 cup Ground Golden Flax Seed

6 large Eggs slightly beaten
1/3 cup Extra Virgin Olive Oil
1 tsp Sea Salt
2 tsp Coconut Palm Sugar

  • Add water first then the rest of ingredients in listed order into bread machine. Pile dry ingredients in center of machine. Pour remaining liquid ingredients on each side of dry ingredient pile. Cup dry ingredient pile and place sugar and yeast in the center. Start bread machine and use the Gluten free course, medium. (Zojirushi machines) Make sure to scrape down sides of bread machine pan while mixing/kneading. Manually reform loaf as required once the baking process begins.

If you're on a low-carb diet, it's worth your time to try your hand at this low-carb bread recipe. It's made with almond flour, eggs, and oil, and contains about a third of the carbs of regular bread. It's moist and dense and works perfectly as breakfast toast or for your lunch sandwich preparation.

Number Of Ingredients 8

6 egg yolks
6 egg whites
2 eggs
2 cups almond flour
⅓ cup oil
1 tablespoon baking powder
salt, to taste
¼ teaspoon cream of tartar

Steps:

  • Preheat oven to 375°F (190°C).
  • Carefully separate 6 eggs, placing the yolks in a large bowl and the the whites in a medium size bowl.
  • Place the 2 whole eggs in the large bowl with the yolks and add the oil. 4. Beat together with a fork or whisk until smooth.
  • Add the almond flour, baking powder, and a pinch of salt to the egg yolk mixture. Stir the mixture with a spatula until well incorporated and set aside.
  • Add the cream of tartar to the egg whites and beat with a hand mixer until stiff peaks form.
  • Use a rubber spatula to transfer ⅓ of the whipped egg whites to the almond mixture and gently fold the batter together.
  • Add the next ⅓ of the whites to the batter and fold in until smooth.
  • Gently fold in the remaining egg whites just until the batter is smooth and no white streaks remain.
  • Line the bottom of an ungreased loaf pan with parchment paper and pour in the batter.
  • Bake for 40 minutes, until the top has set and formed a golden crust.
  • Let the loaf cool for 10 minutes before running a thin knife along the inside of the pan to release the sides of the loaf. Gently unmold the loaf from the pan and remove the parchment paper on the bottom.
  • Let the cake cool at room temperature for 1 hour before slicing.
  • Enjoy!

I wanted a bread with some extra protein for breakfast, so I came up with this. This is an excellent very faintly sweet breakfast bread with an unusual but satisfyingly 'bread' texture. The crust has a great flaky/chewy consistency while remaining soft. It is dense but not heavy and the extra protein from the almond flour keeps the mid-morning munchies away. It is very good with a slice of cheese and some fruit on the side. This is not (nor was it intended to be) a gluten-free recipe; the addition of vital gluten is critical to maintain cell structure for the rise. The xanthan gum is only in there because I like the ability to slice my homemade bread and use it for sandwiches.

1/2 tsp baking soda
1/2 tsp salt
5 large eggs
1 1/2 tbsp honey
1 tbsp olive oil (extra virgin)
1 tbsp apple cider vinegar
Cooking spray (I use Misto)

Steps:

  • Preheat oven to 350 degrees F, line 9 x 5 loaf pan with parchment paper and spray with cooking spray. Set aside.
  • In a large mixing bowl, add almond flour, baking soda and salt. Whisk well and set aside.
  • In another small bowl, add eggs, honey, olive oil and vinegar. Whisk well, transfer to a bowl with flour and mix with spatula until thick batter forms.
  • Transfer batter into previously prepared loaf pan, level with spatula and bake on a middle rack for 30-35 minutes or until top is golden brown and a toothpick inserted in the middle comes out dry. If your bread starts to brown before it's ready, cover the top with foil.
  • Remove from the oven, holding onto parchment paper remove loaf from the pan and let cool for 30 minutes. Slice with serrated knife and enjoy like a sandwich bread.

This is a super moist, cholesterol and fat (except the small amount in the flour) free bread that you can just pop into your bread machine and let it bake! It's the best banana bread I've ever had, and ever made. I hope you'll enjoy it! Note: Recipe does not double well in the bread machine. Should be fine if you want to do it by hand and bake in the oven at 350 for 40-50 minutes.

  • Let it go!
  • You can use different nuts, add some raisins, whatever you want. I might also add a little cinnamon next time.
  • NOTE: Sucanat is dried cane sugar. You can also use half sucanat and half brown sugar.
  • In order to make this a clean recipe, choose organic. My flour is milled from grain I purchase from non-gmo sources, but organic works too.
