"Years ago, my mom converted a stuffed pepper recipe into this easy pita sandwich that calls for leftover rice," relates Becky Floyd of Riverside, California. "I've loved it since I was a kid, and now it's one of my husband's favorites, too." TIP: "For added convenience, use frozen diced green pepper and onions," advised Becky.

1 pound ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 cup cooked long grain rice
1 can (8 ounces) tomato sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese
8 pita pocket halves

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the rice, tomato sauce, Worcestershire sauce, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes. , Stir in cheese; cover and cook 2-3 minutes longer or until cheese is melted. Spoon mixture into pita pockets.

2 hard-boiled eggs, chopped fine
1/4 cup mayonnaise
2 green onions, sliced
2 tablespoons fresh dill, chopped
1 teaspoon lemon zest
fresh ground black pepper
2 pita bread rounds
1 large roma tomato, sliced thin
3 -4 leaves romaine lettuce
12 slices seedless cucumber (thin slices)

Steps:

  • In a small bowl, mix together the eggs, mayonnaise, green onions, dill and lemon zest.
  • Cut pita rounds in half and divide the salmon-egg mixture evenly between the 4 pockets.
  • Stuff with lettuce leaves, tomatoes and cucumber.

1 salmon fillet (1 pound)
1/4 cup chopped celery
1/4 cup chopped seeded peeled cucumber
1/4 cup reduced-fat sour cream
1/4 cup fat-free mayonnaise
1 tablespoon minced chives
1 tablespoon minced fresh dill
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/8 teaspoon white pepper
4 romaine leaves
4 whole wheat pita pocket halves

Steps:

  • Place 2 in. of water in a large skillet; bring to a boil. Reduce heat; carefully add salmon. Poach, uncovered, for 6-12 minutes or until fish is firm and flakes easily with a fork. Remove salmon with a slotted spatula. Cool., In a large bowl, combine the celery, cucumber, sour cream, mayonnaise and seasonings. Flake the salmon; stir into salad mixture.
