SRI LANKAN ALA BADUN ( POTATOES AND ONIONS)
This is a simple and straightforward recipe. It is non the less authentic. Serve with curried meat and boiled rice. For a real taste of Ceylon put some chutney and poppads on the table also some sliced bananas in lime juice. Wonderful.

Steps:
- Cut the potatoes into bite sized pieces.
- In a bowl mix the potato with the salt, turmeric, chilli powder, and the paprika powder.
- Heat the oil in a heavy pan and fry the curry leaves for a few seconds, now add the onions, ground mustard seeds and the cinnamon, fry till the onions are golden.
- Add the potato, and keep stirring till the onions are also golden and heated through.
- Discard the cinnmon stick and sprinkle the curry with the lime juice.

Steps:
- Boil potatoes.
- Peel and cut into bite-size pieces.
- Slice onion.
- Put potato into bowl, adding salt, turmeric, chili powder and paprika powder.
- Heat oil and when hot, add curry leaves, onion, mustard seed and cinnamon stick.
- Fry until onions are golden brown, add potato and keep tossing with onion.
- Discard cinnamon and sprinkle lime juice on top prior to serving.

Steps:
- Heat oven to 350 degrees.
- Wash potatoes thoroughly with a stiff brush and cold running water.
- Dry, then using a standard fork poke 8 to 12 deep holes all over the potatoes.
- Place in a bowl and coat lightly with oil.
- Sprinkle with salt
- Place potatoes directly on top rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
- Bake 1 hour or until skin feels crisp and inside feels soft.
- NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.
