Mouthwatering, tender, juicy and delicious pork tenderloin made in an air fryer.

Pork tenderloin (1.25lbs - 1.75lbs)
2 tbs brown sugar
1 tbs smoked paprika
1.5 tsp salt
1 tsp ground mustard
1/2 tsp onion powder
1/2 tsp ground black pepper
1/4 tsp garlic powder
1/4 tsp cayenne powder (optional)
1/2 tbs olive oil

Steps:

  • Mix all dry ingredients in a bowl.
  • Trim the pork tenderloin of any excess fat/silver skin. Coat with a 1/2 tablespoon olive oil. Rub spice mixture on entire pork tenderloin.
  • Preheat air fryer to 400° F for 5 minutes. After 5 minutes, carefully place pork tenderloin into air fryer and air fry at 400° F for 20-22 minutes. Internal temp should be 145° - 160° F.
  • When air fryer cycle is complete, carefully remove pork tenderloin to a cutting board and let rest for 5 minutes before slicing. Save any juices to serve over sliced meat.

1 pork tenderloin (about one pound)
2 tbsp dijon mustard
1 tbsp brown sugar
3/4 tsp coarse sea salt
1/2 tsp coarse ground black pepper

Steps:

  • Mix dijon mustard, brown sugar, sea salt, and black pepper in a small mixing bowl. Pat the pork tenderloin dry and brush the marinade over the top using a basting brush - you will want a thick even layer of the marinade
  • Preheat your air fryer to 350F. Spray the air fryer basket with a spray oil and place the pork tenderloin in it. Cook the pork at 350F for 22-25 minutes. Check the internal temperture with an electronic thermometer and when it reaches 145F-150F the pork is done.
  • Remove the pork from the air fryer and allow the pork to rest on a cutting board for 5-10 minutes before slicing into rounds.

1/4 cup seasoned bread crumbs
Cooking spray
3 cups fresh broccoli florets
1/3 cup apricot preserves
2 tablespoons white wine or chicken broth
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
Dash pepper
2-2/3 cups hot cooked brown rice

Steps:

  • Preheat air fryer to 375°. Cut tenderloin crosswise into 8 slices. Place bread crumbs in a shallow bowl. Dip pork slices in crumbs, patting to help coating adhere. In batches, place pork on greased tray in air-fryer basket; spritz with cooking spray. Cook until a thermometer reads 145°, 4-5 minutes per side. Steps:

  • Slice pork tenderloin into 2" slices, about 8-10 pieces total depending on the length. Wrap a slice of bacon around each slice of pork tenderloin and secure with a toothpick.
  • Sprinkle each piece on both sides with rosemary, thyme, salt, and pepper.
