AIR FRYER TOSTONES
Tostones are made with green (unripe) plantains and are a very popular side dish in many Caribbean and South American countries. The traditional method is to twice-fry the plantains in oil, but this air-fried version of my Puerto Rican family's recipe is much lighter as it uses olive oil spray instead of deep-frying.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Slice tips off the plantain. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, still with the peel, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.
- Place the plantain chunks in your air fryer basket and spray them with olive oil spray. Air fry for 5 minutes. Meanwhile, prepare a bowl of salted water.
- Remove the plantain pieces from the air fryer with tongs. Smash to about 1/2-inch thickness using a tostonera (plantain smasher). Soak the smashed tostones in the bowl of salted water while smashing the rest.
- Remove the tostones from the salted water and pat dry with a paper towel.
- Return tostones to the air fryer in batches, filling the basket with a single layer each time. Spray the tops with olive oil spray and season with salt; air fry for 5 minutes. Flip with tongs and spray the other side with olive oil spray. Season with salt. Air fry until golden brown and crisp, 4 to 5 minutes more.

AIR FRYER TOSTONES (TWICE AIR FRIED PLANTAINS)
Steps:
- With a sharp knife cut a slit along the length of the plantain skin, this will make it easier to peel. Cut the plantain into 1 inch pieces, 8 total.
- In a small bowl combine the water with salt and garlic powder.
- Preheat the air fryer to 400F.
- When ready, spritz the plantain with olive oil and cook 6 minutes, you might have to do this in 2 batches.
- Remove from the air fryer and while they are hot mash them with a tostonera or the bottom of a jar or measuring cup to flatten.
- Dip them in the seasoned water and set aside.
- Preheat the air fryer to 400F once again and cook, in batches 5 minutes on each side, spraying both sides of the plantains with olive oil.
- When done, give them another spritz of oil and season with salt. Eat right away.

These plantains taste like they came from a restaurant. I parcooked them in the air fryer, then smashed them and returned them to the fryer to crisp them up.

Steps:
- Preheat a 6-quart air fryer to 350˚ F. Toss the plantains with the vegetable oil and 3/4 teaspoon kosher salt. Add to the air fryer basket in an even layer and cook until tender, 3 to 4 minutes per side.
- Transfer the plaintains to a large piece of parchment and cover with another piece of parchment; smash each plantain with the bottom of a glass. Increase the fryer temperature to 400˚ F. Return the plantains to the fryer in an even layer (it's OK if they overlap slightly) and continue cooking until crisp, about 4 more minutes per side. Sprinkle with sea salt. Serve with salsa verde.
AIR FRYER TOSTONES {CUBAN FRIED PLANTAINS}

Steps:
- Preheat your air fryer by running it at 350 F for 3-4 minutes while you peel the plantains and slice the fruit into 1-inch thick rounds.
- Spray both sides of each round and arrange in a single layer in your air fryer basket. Depending on the size of your air fryer, you'll need to work in batches.
- Fry the plantains for 5 minutes at 350 F.
- Remove the plantains from the air fryer and smash using a tostone press or - as seen in the video - a flat-bottom drinking glass.
- If you are not frying them immediately, dip them in water with a little lime juice, lemon juice, or salt mixed in. Pat dry before frying again. Skip this step if you're going straight to the second fry.
- Increase the air fryer temperature to 375 F. Spray the flattened plantain discs on both sides with oil.
- Working in batches, fry the tostones for 5 minutes, until light golden brown around the edges. Remove from the air fryer and salt.
- Serve immediately! Enjoy with a spritz of lime or your favorite dipping sauce, if desired.

- In a large bowl, combine garlic, garlic salt and onion powder. Add plantains; cover with cold water. Soak for 30 minutes. Drain plantains; place on paper towels and pat dry. , Preheat air fryer to 375°. In batches, place plantains in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until lightly browned, 10-12 minutes. Place plantain pieces between 2 sheets of aluminum foil. With the bottom of a glass, flatten to 1/2-in. thickness. Increase air fryer temperature to 400°. Return flattened plantains to air fryer; cook until golden brown, 2-3 minutes longer. Combine seasoning mix ingredients; sprinkle over tostones.
