3 tablespoons vegetable oil
1 large onion, sliced
1 pound beef liver
½ cup all-purpose flour
1 teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
1 (8 ounce) can tomato sauce
¼ cup water
½ teaspoon dried oregano

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Saute onions until soft, but not browned. Remove from pan using a slotted spoon, and set aside. Slice the liver into serving size pieces, and remove any membrane.
  • In a shallow dish, mix together the flour, salt and pepper. Dredge the liver in the flour mixture, and place into the hot skillet. Brown the liver quickly on each side. Place reserved onions on top of liver pieces. Pour the tomato sauce and water over everything in the pan, lifting the liver pieces to let the tomato sauce coat the bottom of the pan.
  • Sprinkle the oregano over everything, and simmer over low heat for 8 to 10 minutes, stirring occasionally. Adjust salt and pepper to taste. Be careful not to overcook, or liver will be tough. I serve this with mashed potatoes and green beans.

1 ½ tablespoons olive oil
2 teaspoons lemon juice
½ teaspoon salt, or to taste
6 cloves garlic, minced

Steps:

  • Heat a skillet over medium heat. Cook and stir livers in the hot skillet until cooked through, 3 to 5 minutes. Add olive oil, lemon juice, and salt to livers; gently stir until mixed. Remove skillet from heat and sprinkle garlic over livers.

2 tablespoons oyster sauce
1/2 teaspoon soy sauce
2 teaspoons Shaoxing rice wine
1 teaspoon cornstarch
3 tablespoons vegetable, canola, or peanut oil
10 ounces liver (poultry or pork), cut roughly into 2-inch segments
2 scallions, cut into 1-inch segments
One 1-inch piece ginger, thinly sliced
1 medium onion, thinly sliced

Steps:

  • Combine oyster sauce, soy sauce, wine, and cornstarch in a small bowl and whisk with a fork to combine. Set aside.
  • Heat the oil in a wok over high heat until smoking. Add the liver and stir-fry until the firm but interior is still very pink, 60 to 90 seconds. Remove the liver with a slotted spoon and transfer to a paper towel-lined plate. Set aside.
  • Return wok to high heat. Add the scallions and ginger, and stir-fry until fragrant, about 30 seconds. Add the onions reduce heat to medium, and continue to stir-fry until the onions are soft and slightly caramelized, 5 to 7 minutes.
  • Return liver to wok and add sauce mixture. Stir-fry rapidly to prevent the cornstarch from clumping. Stir-fry the liver until the interior is still pink but no longer rare, about 20 seconds longer. Remove from heat and serve immediately.

1/4 cup canola oil
2 onions, sliced
1 red pepper, sliced
1 lb beef liver or 1 lb calf liver
1/2 cup whole wheat flour
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Remove all visible membranes from liver.
  • Slice liver into thin strips.
  • Set aside.
  • In a heavy frying pan, heat one tbsp of the oil on medium, saute onions and red pepper for about 5 minutes.
  • Remove from pan and keep warm.
  • Combine flour and herbs.
  • Dredge liver in flour mixture.
  • Heat remaining oil in same frying pan on medium-high.
  • Saute liver slices quickly for about 3 minutes or until brown on the outside but still pink inside.

1 lb chicken liver, cut in half & washed & patted dry
3 tablespoons butter or 3 tablespoons margarine
1/2 lb fresh mushrooms, sliced thin
3/4 cup onion, thinly sliced
1/4 cup celery, finely chopped (optional)
1/8 cup flour
3 tablespoons flour
1 cup vegetable broth or 1 cup beef broth
1/2 teaspoon salt
fresh coarse ground black pepper, to taste
1/2 cup sherry wine, good quality
2 teaspoons fresh parsley, chopped
1/2 teaspoon Worcestershire sauce
chopped fresh parsley leaves, garnish
cooked bacon (crispy & crumbled)
basmati rice (sprinkled with parsley) or buttered broad egg noodle (with peas)

Steps:

  • Season livers with 3 Tablespoons of the flour and salt and pepper, to taste.
  • Saute chicken livers in 2 Tablespoons butter, 5 minutes or until brown but still pink inside.
  • Remove livers, and drain on paper towels, reserving drippings in skillet.
  • Add other tablespoon butter, if necessary.
  • Saute mushrooms, onions and celery in drippings until golden brown.
  • Stir in flour(I guessed at the amount - use little by little) salt & pepper with broth.
  • Add Sherry, parsley and wocesterhsire sauce; bring to a boil.
  • Add more flour if necessary, but remember to mix it with some liquid first, so that there won't be any lumps.
  • Reduce heat to a simmer and cook for 5 minutes, stirring often.
  • Add chicken livers, simmer 3-5 additional minutes.
  • Serve over fluffy white rice (sprinkled with bacon) or.
  • Basmatti rice, sprinkled with chopped parsley (sprinkled with bacon) or.
  • Buttered broad noodles with peas*.
  • *Broad buttered noodles: boil noodles according to package instructions, drain and coat with butter, salt & pepper and combine with 1/4 cup frozen peas (defrosted).

3/4 lb beef liver (substitute pork livers)
2 tablespoons soy sauce
1 tablespoon sake
1 tablespoon grated ginger
3 tablespoons peanut oil
6 tablespoons tapioca starch (substitute corn starch)
3/4 cup chinese garlic chives (wash, cut up into 1 inch pieces)
salt and pepper (to taste)

Steps:

  • Cut up the beef liver into small bite size pieces and then pat dry with paper towels.
  • In a bowl add the soy sauce, sake, grated ginger and then add the beef livers (mix with the liquids) and let marinate for about 15 or more minutes, set aside.
  • Add to a wok 2 tablespoons peanut oil until hot.
  • Then remove the livers from the bowl (retaining the marinade), dredge in the tapioca starch and place into the heated wok. Cook and turn the pieces until almost fully cooked and then remove to a plate.
  • Add 1 tablespoon peanut oil to the wok and add the Chinese chives, sauté for about 1 minute.
  • Then add back into the wok the livers, the retained marinade and stir-fry briefly... add salt and pepper to taste.
  • Enjoy.
  • NOTE.:.
  • If you use a micro wave to re-heat some leftovers the next day (dish covered in plastic wrap), it will dry out the chives to much and they become to hard for an otherwise nice meal.
