These taquitos are air fried, which makes them healthier than deep fried ones. Using shredded rotisserie chicken provides a quick prep but you can always use home-cooked chicken. Serve with sides of sour cream, Mexican tomato sauce, and guacamole, or your choice of sides.

- Heat oil in a skillet. Add onion and cook until soft and translucent, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add green chiles and Mexican tomato sauce; stir to combine. Add chicken, Neufchatel cheese, and Mexican cheese blend. Cook and stir until cheeses have melted and mixture is completely warmed, about 3 minutes. Season with salt and pepper.
- Heat tortillas in a skillet or directly on the grates of a gas stove until soft and pliable. Place 3 tablespoons of chicken mixture down the center of each tortilla. Fold over and roll into taquitos.
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place taquitos in the air fryer basket, making sure they are not touching, and mist with avocado oil. Cook in batches if necessary. Cook until golden brown and crispy, 6 to 9 minutes. Turn taquitos over, mist with avocado oil, and air fry for an additional 3 to 5 minutes.

- In a medium sized bowl, add the chicken, cheddar cheese, and cream cheese.
- Mix to combine.
- Add the ranch dressing, buffalo sauce, and blue cheese crumbles. Mix thoroughly.
- Assemble the taquitos by laying a tortilla on a flat surface.
- Spoon 2-3 tablespoons chicken mixture onto the tortilla, making a line of filling down the middle of each disc.
- Fold over one side and tuck it close to filling. Continue rolling tightly until finished.
- Roll the remaining taquitos and melt the butter.

There's several things which affect how the frozen taquitos cook. They all vary in size, thickness, type of filling, thickness & type of tortilla so you'll have to adjust timing. For best and even cooking, don't overcrowd the basket. Fill just an even single layer. Cook in batches if needed.All air fryers are different and some cook much hotter than others. AIR FRYER TAQUITOS AND CHARRED SALSA
Taquitos are the ultimate finger food-mini rolled tacos that are warm, cheesy and super crunchy! An air fryer makes this crowd-pleasing snack (or appetizer) surprisingly easy to cook up at home. We fill them with chunks of chicken and melty Colby Jack, but you can customize the ingredients to please even the pickiest of eaters with different proteins and cheeses. And while you have the air fryer fired up you can make a delicious charred salsa to serve alongside.

- For the salsa: Preheat a 6-quart air fryer to 350 degrees F (see Cook's Note).
- Combine the tomatoes, onion, chile, garlic and oil in a large bowl and toss to coat. Transfer to the basket of the air fryer and cook until the skin of the tomatoes and the chile are wrinkled and the onion and garlic are charred, about 10 minutes. Cool slightly.
- When cool enough to handle, peel the skins from the tomatoes and discard. Remove the stem, seeds and skin from the chile and discard. Place the tomatoes, chile, garlic, onion and 1/4 teaspoon salt in a blender. Pulse until smooth. Set aside until ready to serve.
- For the taquitos: Combine the chicken, cheese, pimientos, oregano, cumin, paprika, chili powder and 1/4 teaspoon salt in a large bowl and toss.
- Working in batches, quickly run 4 tortillas under running water. Shake off excess water and place in the air fryer basket. Fry until softened and pliable, 15 to 30 seconds. Fill them while they are still warm: Spread 2 teaspoons refried beans over a tortilla, reserving a bit of bean to dab on the seal. Spread 1 1/2 tablespoons of the chicken filling over the beans. Roll the tortilla over the filling and seal tightly with a little refried bean. Repeat with the remaining tortillas, beans and chicken.
- Spray all sides of the taquitos generously with cooking spray. Place in the air fryer basket (work in batches if needed) and fry until golden brown and crispy, about 8 minutes. Serve warm topped with some of the salsa and sour cream and shredded lettuce.
AIR FRYER BEEF TAQUITOS
The flavored ground beef mixture that fills each of these perfectly air fried crunchy taquitos is sure to make your mouth water!

- Heat olive oil in a large frying pan over medium heat, and sauté onions together with the green peppers, stirring until the onions sweated and turned slightly brown and the green peppers softened.
- Add ground beef, stirring and breaking down any large pieces. Sauté until the meat turned slightly brown
- Add garlic powder and paprika and continue to sauté until the ground beef are fully cooked and slightly crispy
- Take the pan off the heat, season with salt and pepper to taste
- Transfer the ground beef mixture into a bowl, stirring continuously to let the mixture cools.
- Whisk 2 eggs in a small bowl
- Once the ground beef mixture is cool (about 5-10 minutes), add eggs and mix well
- On a clean work surface or a plate, lay down one corn husk strip (or kitchen string) sideways (in horizontal position). Place a soft corn tortilla on top of the strip
- Put 1 tablespoon of shredded cheese on the tortilla, forming a line from top to bottom (vertically). Add 1-1/2 tablespoon of ground beef mixture on top of the cheese
- Roll the tortilla. Start by taking the right side and bring it over to the left, covering the cheese and meat mixture. Tuck the edge under the filling mixture, then slowly and as tight as possible, roll the tortilla. Tie the corn husk strip/kitchen string securely around the middle of the roll. Push any filling that might have come out of the ends back into roll and cut off excess length of the strip/string
- Repeat the process for the remainder of the tortillas
- Spray the base and sides of your air-fryer basket with avocado oil spray, including the extra rack (if available).
- Place as many taquitos in the basket and rack as you can without crowding them and spray the top with avocado oil spray.
- If using the extra rack, set the heat to 375°F and timer to 8 minutes. Check the taquitos on the extra rack after 8 minutes, leave the ones on the basket below. Once the top surface is brown and crispy, flip them over so the bottom side can get crispy as well. Fry for another 4 minutes and check again, adding another 2 minutes of cooking time if necessary. Once they are brown and crispy, remove the taquitos on the top layer along with the rack. Flip the remaining taquitos over so the bottom side can get crispy, and fry for another 4 minutes.
- If using only one basket, set the heat to 375°F and timer to 6 minutes. Check the taquitos and once the top surface is brown and crispy, flip them over so the bottom side can get crispy as well. Fry for another 3 minutes. Once top and bottom side are golden brown and crispy, take the taquitos out of the fryer. Add 2 minutes of additional time if the taquitos are not yet crispy.
- Repeat the process for the remainder of the taquitos.

- Add garlic powder and paprika and stir to thoroughly coat. Take the pan off the heat, and season with salt and pepper to taste.

- Whisk 2 eggs in a small bowl. Once the ground beef mixture is cool (about 5-10 minutes), add eggs and mix well.

- Wrap 16 tortillas in a damp paper towel, then microwave for 30 seconds. Flip, then microwave for an additional 20 seconds. If you’d prefer to use the stovetop, you can add about 1 tablespoon of water to a small skillet over medium heat, then place 8 tortillas in the skillet and cover the skillet with a lid.
