EASY AIR FRYER BREAKFAST FRITTATA
Quick and easy breakfast air fryer frittata. Made with eggs, cheese and fresh veggies, it cooks to perfection in under 15 minutes.

Steps:
- In a medium bowl, beat eggs with half and half.
- Stir in cheese, spinach, scallions, salt and pepper.
- Spray a 6″ cake pan with cooking spray (very important). Pour mixture into pan.
- Air fry at 350 degrees (F) for 10-14 minutes. A toothpick inserted will come out clean when done.
- Let cool for 5 minutes before removing from pan and serving.

Steps:
- Start by using olive oil and greasing the muffin pan/tin.
- Then in a small bowl, crack the eggs, and put them into the bowl. Add the milk, salt, pepper, and shredded cheese, and mix well.
- Pour the mixture into the muffin tin/pan.
- Set the pan into the air fryer basket, and set the temperature to 350 degrees F (air fryer setting) for 5 minutes.
- Plate, serve and enjoy!

INSTANT POT MINI FRITTATAS

- Add the bacon to the Instant Pot® and turn the pot on the high saute setting (See Cook's Note). Cook the bacon, stirring occasionally, until golden brown and crisp, 10 to 12 minutes. Remove from the pot and set aside on a paper towel.
- Add the mushrooms to the pot along with the thyme leaves and a pinch of salt. Cook, stirring occasionally, until the mushrooms have reduced to half their size and are golden brown, 6 to 8 minutes. Remove the mushrooms from the pot and divide the mushrooms among the cups of a silicone egg bites mold. Divide the spinach among the cups, along with the bacon and cheese.
- Gently whisk the eggs together with the cream, nutmeg and 1/2 teaspoon salt and a few grinds of pepper in a medium bowl until well combined (gently to avoid creating foam). Pour the custard over the fillings in each of the cups.
- Wipe out excess bacon grease in the bottom of the pot. Add 1 cup water to the bottom of the pot. Place the egg cups on the rack and cover tightly with the silicone lid or foil. Lower into the pot using the rack handles and follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on low for 6 minutes.
- After the pressure cycle is complete, let the pressure release naturally for 10 minutes, then follow the manufacturer's guide for quick release of the remaining pressure. Be careful of any remaining steam and unlock and remove the lid. Carefully remove the tray and let stand 5 minutes before popping the mini frittatas out of the pan. The frittatas can be eaten right away or stored in the trays in the refrigerator or freezer; reheat in the microwave for 30 seconds to 1 minute.
AIR FRYER FRITTATA
This frittata is ready in less than 20 minutes. Take a little bit of leftover breakfast sausage, a few chopped veggies, some shredded cheese, and some eggs, and create a hot breakfast! Make it a meal with some whole wheat toast and juice, or just wrap it up in a napkin and eat as you run! If there is any left, it reheats well.

- Preheat a 5.8-quart or larger air fryer to 350 degrees F (175 degrees C) according to manufacturer's instructions.
- Spray cooking spray on the bottom and sides of a small metal container, designed to be an inner pot, about 6 inches round and 4 inches high.
- Add butter for flavor, insert inner pot into the air fryer, and melt butter for 45 seconds. Add bell pepper and onion and fry for 2 minutes.
- Carefully remove the inner pot and stir in sausage crumbles. Sprinkle with Colby Jack cheese and set aside.
- Crack eggs into a bowl and stir until yolks and whites are well combined. Season with salt, pepper, and hot sauce; stir to combine. Pour egg mixture over the other ingredients in the inner pot and lightly mix everything together.
- Return inner pot to the basket of the air fryer and cook until the top of the frittata is lightly brown and a toothpick inserted in the center comes out clean, about 12 minutes. Continue air frying in 30-second intervals until frittata has set. Serve warm or at room temperature with salsa.
