Falafel is a popular street food eaten throughout the Middle East. It is inexpensive and super high in protein. Falafels are deep-fried patties made from smashed chickpeas, herbs, and spices. This healthy Air Fryer Falafel recipe is so crispy you will not believe that it is not deep-fried!

1 can Chickpeas (rinsed and drained)
1/4 cup Fresh parsley
1/4 cup Cilantro
2 clove Garlic
1 Large shallot (chopped)
3 tbsp All-purpose flour
2 tbsp Sesame seeds
2 tsp Ground cumin
1 tsp Paprika
1/2 Lemon (juice only)
1 tsp Salt
Spray olive oil (for cooking)
1/2 cup Tahini
1/4 cup Greek yogurt
1/2 Lemon (juice only)
2 tbsp Olive oil
1/2 cup Hot water

Steps:

  • In a food processor, add the chickpeas, parsley, cilantro, garlic, shallot, flour, sesame seeds, cumin, paprika, lemon, and salt.
  • Blend until it comes together in a rough paste. It shouldn't be completely smooth.
  • Place the mixture in a bowl and keep it in the refrigerator for 2 hours.
  • Once the mixture is chilled, form the falafel into 12 balls.
  • Spray the air fryer basket with some nonstick olive oil.
  • Preheat the air fryer to 350 F.
  • Place the falafel balls into the air fryer basket. Spritz the falafel balls with olive oil spray.
  • Air fry the falafel for 15 minutes, turning halfway through until lightly browned.
  • Once cooked, serve the crispy Air Fryer Falafels with salad top with hummus or tahini sauce.
  • In a medium bowl, add the tahini, lemon juice, garlic, salt, and water together and whisk until they create a luscious, smooth sauce.
  • When you first add the water and lemon juice to the tahini, it will thicken up.
  • Continue whisking for a minute or so. Add some water to make it thinner when required.
  • Slowly add the water and continue whisking until it reaches your desired consistency.
  • f you prefer a brighter sauce, add more lemon. If it is too bitter, stir in 1/4 to 1/2 teaspoon maple syrup or honey. And if the flavor is too sharp, mellow it with 1/2 to 1 teaspoon olive oil.

Air-Fried Falafel image

Air-fried falafel is the closest thing to the deep-fried version. It's packed with herbaceous flavor, just as crispy and crunchy on the outside, but slightly less moist on the inside. The best part? Air-fried is completely oil-free. Just like any traditional falafel, it's also vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, and nut-free.

2 cups dried chickpeas (*)
1 cup parsley (, leaves and soft stems only)
1 cup cilantro (, leaves and soft stems only)
1 onion (, chopped)
3 cloves garlic (, minced)
2 Tbsp. chickpea flour
2 tsp. ground cumin
2 tsp. ground coriander
1/2 tsp. cayenne pepper ((optional))
sea salt (, to taste**)

Steps:

  • Soak the chickpeas. Add the chickpeas into a large bowl and cover with water. (The chickpeas will double or triple in volume, so use more water than you think you will need). Soak the chickpeas for 24 hours at room temperature. Then drain the chickpeas, rinse under cold running water, and use as instructed.
  • Preheat the air fryer. Set the air fryer temperature to 370°F/187°C and let the air fryer heat for 3-5 minutes.
  • Process all the ingredients. Add the soaked chickpeas, parsley, cilantro, onion, garlic, chickpea flour, cumin, coriander, black pepper, and salt into a food processor with an S blade and process until well combined. The texture of the chickpeas should be uneven and coarse, with some slightly larger pieces still visible. The mixture should hold together when you press it between your fingers, but it shouldn't be completely puréed. If the mixture is too wet, add a little bit more chickpea flour, 1 Tbsp./5.7 g at a time. If it's too dry and crumbly, pulse it a little bit more.
  • Season. Taste and adjust the flavor as needed, adding more salt for saltiness, garlic for pungency, cumin for earthiness, coriander for a citrusy-nutty flavor, and cayenne pepper for heat.
  • Refrigerate the falafel mixture. Transfer the falafel mixture into a bowl, cover, and refrigerate for at least 30 minutes.
  • Form the falafel mixture into balls. Scoop out 1-2 tablespoons of the mixture and roll it gently between your hands into balls, 1.5 inch/3.8 cm in diameter. Avoid packing the balls too tightly or they will come out tough and dense. Repeat until all the falafel mixture is used up.
  • Air-fry. Arrange about 9 falafel balls in a single layer in an air fryer basket and air-fry until crispy and golden brown, for 13-15 minutes.
  • Serve immediately, while still warm and crispy over greens or in a warmed pita bread with hummus, tomatoes, and shredded lettuce.
  • Store. Leftover falafel keeps well in an airtight container in the refrigerator for up to 5 days, though best when fresh. For longer term storage, freeze uncooked pre-shaped falafel in a single layer. Once firm, transfer the falafel into a freezer-safe bag or a container and place it back into the freezer for up to 3 months. (You can freeze cooked falafel as well, but it's never quite as good).
  • Reheat in a 370ºF/187ºC air fryer until heated through and crispy again, for 3-4 minutes. If reheating frozen (uncooked) falafel, transfer the falafel into the refrigerator 24 hours before baking to thaw. Once thawed, follow the instructions for air frying above.

  • Form the falafel mixture into 12 balls; if mixture is too sticky add some flour to your hands and your work surface.

1 white onion (roughly chopped)
4 cloves garlic
1 cup cilantro

Steps:

  • Start by soaking dried chickpeas (not canned) in a large bowl covered by about 3 inches of water. The chickpeas will absorb most of the water while soaking. Soak for 24 hours, or a minimum of 6 hours.
  • After your chickpeas are throughly soaked, drain the remaining water and add them to the food processor.
  • Also in the food processor, add onion, garlic, herbs, lemon juice, olive oil, baking powder, and spices (the rest of the ingredients). Pulse until throughly blended.
  • Once processed, use your hands to gently form into 1 inch balls or patties. Spray with non-stick olive oil spray. Place in the air-fryer or on an air-fryer sheet and cook for 5-8 minutes at 400 degrees F.
  • Once finished, they should be crispy and golden brown on the outside and green on the inside. Serve with hummus, in a pita, on a salad, and more!

The egg white and chickpea flour help bind the herbs and chickpeas, and the baking powder keeps the falafel from getting too dense. For the best consistency, be sure not to overprocess your mix; it should be chunkier rather than smooth. And keep in mind that since these are air fried, they will not get the same dark crust as traditional falafel.

Steps:

  • For the falafel: Drain the chickpeas well and spread them out on a towel-lined baking sheet to dry completely.
  • Pulse the parsley, cilantro, mint, garlic and scallions in a food processor until roughly chopped and combined. Add the chickpeas, flour, cumin, coriander, cayenne, lemon juice, egg white, 2 teaspoons salt and a few grinds of black pepper and pulse until the mixture is a well-combined coarse meal but not smooth or mushy. Refrigerate 15 minutes, then stir in the baking powder.
  • Spray your hands with olive oil cooking spray. Scoop the chickpea mixture into 18 balls (about 2 tablespoons each), flattening the balls slightly with your hands to create thick patties. Spray both sides of the patties with olive oil spray. Arrange the patties in a single layer in the basket of a 6-quart air fryer, in batches if necessary, and cook at 400 degrees F, flipping halfway, until golden and crisp, 12 to 15 minutes (see Cook's Note).
  • For the tahini sauce: Whisk together the tahini, paprika, garlic, lemon juice, 1 teaspoon salt, a few grinds of black pepper and 1/3 cup water. Adjust with additional water, if needed, for desired consistently.
  • For serving: Cook the pitas in the air fryer at 300 degrees F until warmed through, about 5 minutes. Slice each pita in half and gently open up the pockets.
  • Fill the pita halves with 3 falafel balls each, lettuce, tomato, cucumber, tahini sauce and a drizzle of harissa, if using.
