2 tablespoons extra virgin olive oil
1 tablespoon maple syrup
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon ground chipotle chili pepper

Steps:

  • In a large bowl, add the squash cubes along with the other ingredients. Toss until the cubes are well coated.
  • Arrange the cubes in a single layer in the air fryer basket and air fry on 400F for 15-20 minutes, or until the squash is fork tender and a little crispy on the outside. Shake or stir the cubes at the mid-way point.
  • Carefully remove from the air fryer and serve immediately.

Steps:

  • Pre-heat oven to 425 degrees.
  • Peel and de-seed your butternut squash. Slice squash in half.
  • Cut it up into french fry shapes.
  • Place on a cookie sheet sprayed with non-stick spray. Cover lightly with kosher salt.
  • Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process.
  • Fries are done when they are starting to brown on the edges and get crispy.
