- Brush filets with English mustard on all sides.
- In a small bowl or ramekin, combine salt, pepper, onion powder, minced onion, and paprika. Season top and bottom sides of the filets with the seasoning mix and let rest for 15 minutes.
- While the steak is resting, place toothpicks in a bowl of water to soak.
- Preheat the air fryer to 370* for 5 minutes.
- Wrap steaks with bacon. Use 1-2 slices depending on the thickness of the steak. Secure the ends of the bacon with a toothpick.
- Lightly spray the air fryer basket with non-stick cooking spray. Add the steak to the air fryer basket-Cook for 12 minutes total. Be sure to stop halfway through cooking and flip the steaks over. ***We cooked the steaks to medium-rare (145*) using these cooking times. Adjust cooking time for the desired temp. Add 1 minute for medium, 2 minutes for medium-well.
- Allow steak to rest on a wooden cutting board for 5-10 minutes before serving.
- Plate, serve, and enjoy!

- Preheat the oven to 450 degrees F.
- Generously salt and pepper both sides of the steak. Wrap the steak with the bacon and secure with a toothpick.
- Heat an ovenproof skillet over medium-high heat. Add the butter and olive oil. When melted, add the steak to the skillet and sear on both sides until a really nice color, about 1 minute per side.
- Remove the skillet from the stovetop and place into the oven to finish cooking. Cook until medium rare, 7 to 10 minutes. Remove from the oven and allow to rest for 5 minutes before serving.
BACON WRAPPED, FILET MIGNON
Using real thick and smokey bacon really gives this plenty of flavor. It's cooked slow, because of the bacon, and, as a result, the fillet comes out real moist. - 1. Remove any silver skin, and extra fat from the fillets. Wrap a piece of bacon around the outside, and either secure with a toothpick, or wrap with butcher's twine. Don't overlap the bacon by more than 1/4", you want to make sure that the bacon will cook. However, if your using thin bacon, you might want to use 2 pieces to get the extra thickness and flavor. Securing the bacon with toothpicks works, but by tieing the bacon, you're forming a more rounded piece of meat that will look nicer on the plate.
- 2. Oil the meat liberally, dust with the blacken. salt, and pepper, and rub it into both sides of the meat. Se the meat on a platter and place back in the refrigerator until you're ready to cook it. Don't be afraid to use a little more slat than you think you should, it's on the grill and won't end up as strong.
- 3. Cook over a medium hot grill for about 10 minutes per side. Ultimately you want the meat to reach an internal temperature of 110 degrees. If you cook on too hot a fire, the bacon will flame up and you'll end up with burned bacon, and burned meat. The oil on the outside helps the meat to sear (keeping in the juices), and helps keep the meat from sticking to the grill.
- 4. When testing the internal temperature of a thin pieces of meat, be sure to insert the thermometer in from the side.
AIR FRYER BACON-WRAPPED JALAPEñO POPPERS RECIPE BY TASTY

- Preheat the air fryer to 325°F (160°C).
- Wearing latex gloves, slice the jalapeños in half lengthwise. Carefully scoop out the seeds and membrane.
- In a medium bowl, mix together the cream cheese, cheddar cheese, salt, and pepper with a rubber spatula. Transfer the cheese mixture to a piping bag fitted with a medium round tip or a resealable plastic bag with a corner snipped off.
- Pipe the cream cheese filling into each jalapeño half.
- Wrap each jalapeno in 1 strip of bacon.
- Working in batches, place half of the poppers in the air fryer and fry for 8-10 minutes, until the bacon is crispy. Repeat with the remaining poppers.

RESTAURANT STYLE FILET MIGNON
Okay, so you've been cooking your steaks wrong all these years. Time for change! Adapted from What's Amuse Bouche blog. Note: make certain to use fresh herbs, not dried.

- Mix together 4 tablespoons (1/2 stick) softened butter with the minced garlic, the chopped herbs and the lemon zest. Form into a log and refrigerate.
- Generously season the filets with salt and pepper, approximately 1 teaspoon of seasoning per side.
- Preheat your oven to 400 degrees.
- Heat the remainder 4 tablespoons butter (1/2 stick) and the olive oil in a cast iron skillet to a screaming hot temperature (not burn you house down hot, though). Sear the filets in the hot pan for about 2-3 minutes per side or until a nice brown crust has formed. Once they're down, don't move them around.
- While the steak is searing, continue to spoon the residual butter in the pan on top of the meat while it's cooking. Once both sides are seared, carefully place the entire skillet with steak in the center of the preheated oven for about 6-8 minutes, depending upon how thick your steak is.
- In the last minute of cooking, take the log of compound butter and slice a thick piece to place on top; set aside.
- Your steak will be ready when it is approximately 135 degrees in the center, or when you push lightly on the top center of the steak and it gently and slowly bounces back. Watch carefully especially if your steaks are thinner. Top with reserved compound butter.

- Place bacon in a single layer in air-fryer basket. Cook at 350° until partially cooked but not crisp, 3-4 minutes. Remove to paper towels to drain., Preheat air fryer to 375°. Sprinkle steaks with salt and pepper; wrap a strip of bacon around the side of each steak and secure with toothpicks. Place steaks in a single layer on greased tray in air fryer basket.
