These are crisp on the outside and soft and cakey on the inside, thier like a super soft snickerdoddle. HINT:You can sub. one 6-oz container of plain or vanilla yogurt for the buttermilk, I do it all the time because I rarely have buttermilk on hand.

3/4 cup(s) buttermilk
1 teaspoon(s) vanilla extract
2 cup(s) flour
1/2 teaspoon(s) baking soda

CINNAMON SUGAR
1/2 cup(s) sugar
1 teaspoon(s) cinnamon

Steps:

  • Preheat oven to 400.
  • Cream shortening and sugar together, add egg mix well, add buttermilk and vanilla.
  • Sift togehter flour, baking soda, and salt.
  • Add dry ingredients to the wet ingredients in three additions until just combine.
  • Chill dough 1-2 hours.
  • Drop rounded tspns. of dough into cinnamon sugar mixture, place 2 inches apart on a lightly greased cookie sheet, bake until set but not brown, 8-10 minutes.

1 teaspoon baking soda
1 teaspoon salt
1 cup butter
2 cups sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups buttermilk
1/2 cup sugar
2 teaspoons cinnamon

Steps:

  • Stir flour, baking soda and salt; set aside.
  • In a medium bowl, cream together the butter and sugar.
  • Beat in the eggs, one at time.
  • Stir in the vanilla and buttermilk alternately with the dry ingredients.
  • Cover dough and chill several hours.
  • Preheat oven to 400 degrees F.
  • Grease cookie sheets.
  • Drop dough by teaspoonfuls onto cookie sheets, about 2 inches apart.
  • Combine the Cinnamon and sugar, sprinkle onto each cookie.
  • Bake for 8 to 10 minutes until golden brown.
  • Remove from baking sheets to cool on wire racks.
