1 tablespoon olive oil
1 teaspoon honey
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
1 pound tri-colored baby carrots
1 tablespoon balsamic glaze
1 tablespoon butter
2 teaspoons chopped fresh chives

Steps:

  • Brush an air fryer basket with olive oil.
  • Whisk together 1 tablespoon olive oil, honey, salt, and pepper in a large bowl. Add carrots and toss to coat. Place carrots in the air fryer basket in a single layer, in batches, if needed.
  • Cook in the air fryer at 390 degrees F (200 degrees C), stirring once, until tender, about 10 minutes. Transfer warm cooked carrots to a large bowl, add balsamic glaze and butter, and toss to coat. Sprinkle with chives and serve.

Carrots air fried to perfection in a blend of olive oil, balsamic vinegar, garlic powder, salt, and pepper.

1 lb Carrots, halved and cut into 3" pieces
1 Tbsp (16g) Olive Oil
1 Tbsp (15g) Balsamic Vinegar
1 tsp Garlic Powder
1/4 tsp Kosher Salt
1/4 tsp Black Pepper

Steps:

  • Wash and dry the carrots before removing the stems, cutting them in half crosswise, then cutting each in half again lengthwise. For larger carrots, you may want to quarter the top half for even pieces.
  • Toss the carrots in the olive oil and balsamic vinegar before adding to an air fryer basket. Use tongs or a rubber spatula to transfer the carrots to the basket, keeping any remaining oil and vinegar in the bowl. Air fry at 400ºF for 12 minutes.
  • Transfer the carrots back to the mixing bowl and toss with any remaining oil and vinegar. Add the garlic powder, salt, and pepper, tossing to evenly coat.
  • Add the carrots back to the basket and air fry an additional 10-12 minutes, shaking halfway through, until the carrots are fork tender and slightly charred around the edges.
  • Toss the finished carrots with fresh parsley or parsley flakes and serve.

0.25 teaspoon kosher salt
0.25 teaspoon black pepper
1 pound tri-color baby carrots, or full sized carrots peeled and cut into 2-inch pieces, halve any large pieces lengthwise
1 tablespoon purchased balsamic glaze
1 tablespoon butter
2 teaspoon chopped fresh chives

Steps:

  • Preheat air fryer to 390°F. Coat fryer basket with cooking spray. In a large bowl whisk together olive oil, honey, salt and pepper. Add carrots and toss to coat. Place carrots in air fryer basket in a single layer, in batches, if needed. Cook 10 minutes or until tender, stirring once.
  • Transfer cooked carrots to a large bowl while still warm. Add balsamic glaze and butter, toss to coat. Sprinkle with chives before serving.

5 -6 tablespoons sugar (or to taste)
1/3 cup balsamic vinegar
1/4 cup chopped fresh parsley or 1/4 cup cilantro

Steps:

  • Melt butter in heavy large pot over medium heat.
  • Add carrots and sauté 5 minutes.
  • Cover and cook until carrots are crisp-tender, stirring occasionally, about 7 minutes.
  • Stir in sugar and vinegar.
  • Cook uncovered until carrots are tender and glazed, stirring frequently, about 12 minutes longer.
  • Season to taste with salt and pepper.
  • Add parsley or cilantro and toss to blend.
  • Transfer to bowl and serve.

1 pound brussels sprouts, trimmed and halved through the stems (cut larger ones in quarters)
3 tablespoons extra-virgin olive oil
1/4 teaspoon kosher salt
2 garlic cloves, thinly sliced
1/4 cup balsamic vinegar
1 teaspoon fresh lime juice, plus more for serving
1/2 teaspoon soy sauce

Steps:

  • Heat air fryer to 400 degrees, if preheating is necessary.
  • Place brussels sprouts in the air fryer basket; drizzle with 1 tablespoon oil and the salt. Fry for 15 minutes, shaking basket or stirring the sprouts halfway through.
  • Sprinkle sprouts with garlic. Continue to fry until the garlic is golden brown, another 2 to 4 minutes.
