SPICE-POACHED APPLES OR PEARS

Spice-Poached Apples or Pears image

Cooked fruits and simmered compotes are among the simplest of French family sweets. While they're usually served with little more than heavy cream, crème fraîche, or plain yogurt, they can also be paired with rice pudding or French toast, moistening the pudding or toast with the poaching syrup and then spooning over the fruit.

Time 30m

Yield 6 servings

Number Of Ingredients 9

1/2 cup honey
1/3 cup sugar
3 cups water
Zest and juice of 1/2 orange, zest removed with a vegetable peeler cut in wide strips
Zest and juice of 1/2 lemon, zest removed with a vegetable peeler cut in wide strips
2 pieces star anise
1 piece thin cinnamon stick (about 1½ inches long)
1 piece vanilla bean (about 2 inches long), split, seeds removed with a paring knife, seeds and bean reserved and scraped
3 medium apples or pears, peeled, halved, and cored

Steps:

  • Put all the ingredients except the fruit in a large saucepan, turn the heat to medium-high, and bring to a boil. As soon as the liquid boils, reduce the heat to medium-low and simmer the syrup for 5 minutes.
  • Carefully drop the apples or pears into the pan and bring the syrup back to a simmer. Cover the pan and cook until the fruit can be pierced easily with a thin knife, 10 to 15 minutes, depending on the fruit; check early and often. Using a slotted spoon, transfer the apples or pears to a bowl.
  • Turn up the heat and boil the syrup for another 10 minutes, at which point you'll have about 1¼ cups. Pour the syrup over the fruit, cover, and let cool until slightly warm or at room temperature.

POACHED APPLES WITH JUNIPER BERRIES & SPICES

POACHED APPLES WITH JUNIPER BERRIES & SPICES image

An easy, elegant dessert that can cook slowly alongside your pozole, these poached apples with juniper berries and spices make for a simple, healthy and spicy winter dessert. We've incorporated juniper berries used hundreds of years ago by Native Americans, plus cloves, allspice, cinnamon and orange zest for a spiced glaze that will permeate through these poached apples. Valued by Native Americans, juniper berries were used medicinally for arthritis and rheumatism and for detoxification as a diuretic, with antiseptic properties. While we're not sure about the medicinal properties, we do know that poaching these apples with juniper berries and these spices makes the room smell incredible

Categories     Vegetable

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 5

5 apples, we like Fuji, Pink Lady
2/3 cup sugar (or sweetener of your choice- honey, agave or stevia)
3 cups fruity red wine
1 tablespoon lemon juice
2/3 cup water

Steps:

  • Peel and core the apples and cut into quarters; set aside.
  • Combine wine, sugar, lemon juice, RawSpiceBar's juniper berries and spices pouch, and 2 cups water in a large heavy saucepan over medium heat. Bring to a boil, stirring until sugar is dissolved. 3. Add apples; reduce heat to low and simmer, occasionally rotating apples, until tender when pierced with a sharp knife, 25-30 minutes. 4. Remove apples from pot, transfer to a plate and set aside.
  • Strain out the spices from the poaching liquid and discard.
  • Add the liquid back to the pot and bring to a slow simmer over medium-high heat, stirring occasionally, until poaching liquid reduces by roughly 3/4, about 15-25 minutes minutes (syrup will also thicken as it cools).

Posted for the Zaar World Tour 2006-Turkey. From the "International Vegetarian" cookbook. I haven't had the chance to try this recipe yet. This is a typical dessert of Turkey in which apples are cooked in a spiced sugar syrup and served with yogurt and almonds.

POACHED APPLES IN CALVADOS

Poached Apples in Calvados image

From *The Carnival Experience* by Peter Leypold ( Exec Chef of Carnival Cruise Lines), here's another French recipe using the humble apple to create an amazingly low-cal & low-fat, but elegant finish for an otherwise heavy meal. My sweet-tooth DH would want a scoop of vanilla ice cream or frozen yogurt w/this, so feel free to indulge that request as desired. (Times have been estimated) *Enjoy* !
