Easy Lime Agave Salad Dressing image

Use agave nectar (also called agave syrup) to make a simple homemade salad dressing. This agave nectar and lime salad dressing is a healthy vegan alternative to highly processed store-bought salad dressings.

2 tablespoons lime zest (zest from two limes)
1/3 cup lime juice
1/4 cup agave nectar
1/4 cup olive oil
1/4 tsp salt
1/8 tsp black pepper

Steps:

  • Gather the ingredients.
  • In a small bowl, combine the lime zest, lime juice, agave nectar, and olive oil and use a fork or a small whisk to whisk everything together until fully emulsified.
  • Add salt and pepper to taste, and whisk vigorously again to combine. Instead of using a small bowl and a whisk, I also sometimes like to just place everything together in a mason jar, cover, and then shake it all up until fully emulsified. It's kind of fun! 3 tablespoons balsamic vinegar
2 tablespoons maple syrup
1 teaspoon Dijon mustard
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup canola oil
1/4 cup apple juice

Steps:

  • Whisk together first 5 ingredients.
  • Gradually add oil, whisking until well mixed.
  • To thin consistency, add apple juice until desired texture is achieved.
  • This dressing can be store up to 5 days in the refrigerator.

There's a reason this dressing is everywhere-it's addictively delicious. There is always a little container of this in my fridge, and if you're wise you will follow my lead! As with all cashew-based dressings, if you've got the time, soak the cashews in water for at least an hour. Then drain them and use as directed. This makes blending easier and smoother.' NOTE: Prep time does NOT include soaking time for the cashews

2 tablespoons chopped shallots
1/2 cup water
1/4 cup balsamic vinegar
2 teaspoons Dijon mustard
1 teaspoon agave nectar
3/4 teaspoon salt
