CLASSIC OLIVE TAPENADE

For a true taste of Provence, this classic tapenade recipe, a mildly seasoned olive spread, is the easiest and most versatile dish to make.

For the Tepanade:
1 1/2 cups pitted black olives
1/3 cup olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon fresh lemon zest
1 tablespoon drained capers
2 garlic cloves
3 anchovy fillets , from oil-packed can
1 teaspoon fresh thyme, or 1/2 teaspoon dried thyme
1/8 teaspoon coarsely ground black pepper
For Serving:
1 medium baguette, sliced; or vegetable crudités

Steps:

  • Gather the ingredients.
  • Place the olives, olive oil, lemon juice, lemon zest, drained capers, garlic, anchovies, thyme, and black pepper in a food processor.
  • Process until all the ingredients are finely chopped, but not completely pureed.
  • Serve the olive spread on baguette slices or with fresh crudités.
  • Enjoy!

An easy and great tasting appetizer. You can not just have one.... You will have garlic breathe when you are finished, but it's worth it.

Number Of Ingredients 5

1/2 cup green olives, drained
1/2 cup black olives, drained
1 tablespoon capers, drained
1 -2 clove garlic, mashed (to your taste)
1/4 cup olive oil

Steps:

  • Put all ingredients, except olive oil in the food processor and pulse until chopped.
  • Turn processor on low setting and gradually add olive oil until you get a grainy texture.
  • I stop and start and scrape down the sides as I am going.
  • I try to add as little oil as possible, but enough to hold the mixture together so it will spread nicely.
  • Serve with slices of grainy baguette.
  • This is wonderful and easy.

  • In the bowl of your food processor, combine all of the ingredients (pitted olives, parsley, capers, olive oil, garlic and lemon juice). Pulse briefly about 10 times, then scrape down the sides of the jar.
  • Pulse 5 to 10 more times until well chopped, but not pureed, or until you reach your desired texture. Serve as desired. Store leftovers in the refrigerator for up to 2 weeks.
