TUNA CAKES
The quickest fish cake you will ever make! These come together very easily and can be dressed up with chipotle mayo, tartar sauce, Russian dressing, Tapatio, or just a bit of mayo and lemon. If you want to be sure your patties do not fall apart, try shaping the patties as directed and then letting them sit in the refrigerator for an hour. (I did not find this necessary). This recipe is adapted from the Kraft website.

Steps:
- Combine all ingredients.
- Cover and refrigerate 10 minutes.
- Heat a large nonstick skillet sprayed with cooking spray on medium heat.
- For each tuna cake, shape 1/3 cup lightly packed tuna mixture into patty.
- Add patties to skillet in batches.
- Cook 3 minute on each side or until golden brown on both sides, turning over carefully.

SUPER SIMPLE TUNA CAKES & TARTER SAUCE
this recipe will feed an elegant crowd or a hungry family. The idea to use stuffing came from a magazine article a few years ago, I kept tweaking it around and got this. I love it as a quick go-to dish when I have forgotten to thaw something for dinner, it's very pantry-friendly!

Steps:
- 1. Mix all tuna cake ingredients together in a large bowl. Refrigerate for 10 minutes.
- 2. While that's cooling, mix together all tarter sauce ingredients in a small bowl.
- 3. Heat large nonstick pan to medium heat, or your electric skillet to 275 degrees. Add a dash of cooking oil or spray, if desired.
- 4. Shape mixture into patties, will make 8 good sized patties or 10 medium patties.
- 5. Cook each patty 3 minutes on each side or until golden brown (see photo).
- 6. Cool and pat on paper plate or napkin, top with tarter sauce and enjoy!
MINI CRAB CAKES WITH CURRIED TARTAR SAUCE
My family loves these. You don't need to use the curried tartar--you can use regular, but the curried tartar is what sets this recipe apart. I ask you to give it a try before deciding against it!

- Mix mayonnaise, relish, mustard, hot sauce, garam masala, and cilantro for tartar sauce in a bowl until well blended. Cover and chill in the refrigerator until flavors have blended, about 1 hour.
- Melt butter in a frying pan. Add celery, onion, and bell peppers; saute until soft, about 5 minutes. Transfer to a bowl and set aside to cool.
- Place bread crumbs and crabmeat in a large bowl. Add cooled vegetables, eggs, seafood seasoning, pepper, and cayenne; mix until well blended and moist. Form crab mixture into 1 1/2- to 2-inch balls.
- Heat oil in a frying pan over medium or medium-low heat. Add crab balls and flatten the tops with a spatula. Fry to a golden brown, about 5 minutes. Carefully flip and repeat to brown the other side. Drain on a wire rack.
- Serve with curried tartar sauce.

Steps:
- Remember to drain your tuna before mixing all your ingredients.
- In a medium mixing bowl, add all the ingredients and mix until combined.
- To form the tuna cakes, use a 1/4 measuring cup to get all of the cakes of the same size.
- Heat a medium nonstick skillet, place your cakes and cook for 2 minutes on each side or until golden brown. Try not to overcrowd your skillet, and cook them in batches of 3. Repeat until finished. Try not to move them too much to avoid them falling apart.
- Serve immediately with some mayonnaise or tartar sauce, and Enjoy!
