Tools: Kitchen scale, two mixing bowls, spatula, measuring cups and spoons, 12-cup muffin pan, cooling rack.

70 g corn meal
70 g millet flour
70 g white rice flour
70 g sweet rice flour
70 g potato starch
1½ cup cooked acorn squash puree
½ cup unsweetened applesauce
¼ tsp pure stevia extract powder
6 tbs olive oil
1/8 tsp salt
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon powder
Optional 1/8 tsp nutmeg
2 tbs flaxseed meal (ground flaxseed)
3 tbs lukewarm water
1 small chopped apple (any kind, peeled and cored)
Optional 2 tbs squash seed kernels

Steps:

  • Preheat the oven to 375 °F. Lightly spray the muffin cups with vegetable oil spray.
  • In a large mixing bowl, sift together the flour, baking soda, baking powder, salt, cinnamon powder, nutmeg, and stevia. Set aside.
  • In another mixing bowl, combine together the flaxseed meal and lukewarm water to make the flaxseed egg. Set aside for 5 minutes and then add oil, squash puree, and applesauce into the flaxseed egg.
  • Mix dry ingredients into the wet ingredients until just combined. Add chopped apple, then gently Spoon the batter into the prepared muffin cups. Sprinkle squash seed kernels on top. Bake for 20 minutes until the muffins are springy. Let cool in the pan for 5 minutes, then transfer to a wire cooling rack. Serve warm.

2 acorn squash, cut lengthwise in half, seeded
1-1/4 cups water
2 Tbsp. butter
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup chopped peeled apples
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Cut each squash piece lengthwise in half; place, cut sides down, on microwaveable plate. Microwave on HIGH 12 to15 min. or until tender.
  • Meanwhile, bring water and butter to boil in medium saucepan. Add stuffing mix and apples; stir. Cover. Remove from heat. Let stand 5 min.; stir in cheese.
  • Turn squash over; fill with stuffing. Microwave 2 min. or until heated through.

1/8 teaspoon ground cinnamon

Steps:

  • Cut squash in half; discard seeds. Place squash cut side down in a microwave-safe baking dish. Add 1/2 in. of water. Microwave, uncovered, on high for 10-13 minutes or until almost tender; drain., Combine the apple, raisins, cinnamon and nutmeg; spoon into squash cavities. Dot with butter. Microwave, uncovered, on high for 6-8 minutes or until squash and apples are tender. Let stand for 5 minutes before serving.

1 acorn squash
2 apples, cored and sliced
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon finely chopped walnuts
½ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • To easily peel the acorn squash without losing a lot of vegetable, gently drop the squash in a large pot of boiling water, and boil for 15 minutes. Pour off the boiling water and fill with cold water and let sit 5 minutes to cool. When cool enough to handle, use a knife to slice off the peel on the ridges and use a teaspoon to dig out the peel in the valleys. Slice the squash in half and remove the seeds and stem. Then slice the halves into sections and finally cut into 1 inch chunks.
  • Place the squash chunks into a large microwave-safe bowl along with the apples. Dot with pieces of butter. Sprinkle the brown sugar, walnuts, salt and cinnamon over the top. Cover with plastic wrap, and poke a few holes in it for ventilation.
  • Cook in the microwave for 7 1/2 minutes on full power. Remove, uncover, and stir. Return to the microwave, and cook for another 7 1/2 minutes on full power, until tender. Serve hot.

1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 1/2 teaspoons pumpkin pie spice ((see notes for a homemade mix))
4 ounces unsalted butter, (room temperature)
1/2 cup granulated sugar
1/4 cup light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup pureed acorn squash, (approximately 1 small squash, see notes)
1/4 cup buttermilk
1 tart apple, (peeled, cored and chopped)

Steps:

  • Position the oven rack in the center and preheat the oven to 400 degrees F. Grease a standard 12 muffin pan or line it with paper cups.
  • Whisk/sift together the all purpose flour, whole wheat flour, baking soda, sea salt and pumpkin pie spice.
  • In a stand mixer with the paddle attachment (or using a hand mixer), cream the butter and sugars together on high speed until light and fluffy. Turn the speed down to low and add the eggs, one at a time, allowing each to incorporate completely for about 30 seconds.
  • By hand, stir in the the vanilla, acorn squash and buttermilk. Do not over-mix or the batter might break (the muffins will still be fine if it does, you'll just want to move more quickly).
  • Once the wet ingredients are combined, stir in the flour mixture by hand, followed by the chopped apples.
  • Use a muffin scoop to evenly distribute the batter into the prepared muffin pan. Bake for 20 minutes. Allow to cool before serving.

1 cup canola oil

This recipe is posted in response to a request for ways to use acorn squash. I've never tried it, but it looks excellent! I got it from Jackie Manni at The Post Punk Kitchen (a website of vegan recipes). I'm sorry the amounts aren't more specific, but this is what she posted!

1 acorn squash
1 little water
2 apples, cored and sliced thin
canola oil
maple syrup
pumpkin pie spice

Steps:

  • Preheat oven to 350.
  • Cut the acorn squash and scoop out the seeds and strings.
  • Put a little water in a baking pan; place the halves face down and bake for 1/2 hour.
  • Then, take it out and put the sliced apples in the middle (some will fall over the sides, it's okay); drizzle with canola oil and maple syrup, and sprinkle with pumpkin pie spice.
  • Bake for another 1/2 hour to 40 minutes (until the apples are soft and browning).
  • Put your acorn squash halves in individual plates; scoop up the stray apples and stray maple syrup and spoon over the squash.

3 acorn squash, halved and seeded
2 tablespoons stick margarine
1 cup chopped onions
3 cups peeled, seeded, and chopped Granny Smith apples
½ cup golden raisins
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place the squash onto a baking sheet cut side down. Fill the baking sheet with 1/2 inch of water.
  • Bake the squash in the preheated oven for 40 minutes. Drain off any water remaining in the baking sheet.
  • While the squash is baking, melt the margarine in a large skillet over medium heat. Cook the onion and apple in the margarine until the onion has softened and turned translucent, 10 to 15 minutes. Scrape the mixture into a bowl to cool until the squash has finished baking.
  • Once the squash is done, stir the raisins, brown sugar, cinnamon, and Cheddar cheese into the apple mixture. Turn the squash cut side up on the baking sheet and fill with the apple mixture. Return the squash to the oven; bake until the filling is hot and the cheese has melted, about 15 minutes.
