5 ½ cups all-purpose flour
1 ½ teaspoons lemon zest
1 ½ cups white sugar
1 ½ teaspoons baking powder
1 ½ cups shortening
3 eggs
3 tablespoons milk
3 tablespoons caraway seed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets or line them with parchment paper.
  • In a large bowl, combine the flour, sugar, and baking powder. Cut in the shortening until the mixture resembles coarse crumbs.
  • In another bowl, beat the eggs, milk, seeds and lemon zest until blended well. Add to the dry ingredients and blend until smooth. If the dough seems a bit stiff, add extra milk, one tablespoon at a time.
  • On a floured surface, roll dough out 1/4 inch thick and cut using a 2-inch round cutter. lace cookies 2 inches apart on prepared baking sheet.
  • Bake in preheated oven until edges are lightly browned, 7 to 10 minutes. Cool on wire rack.

These "cookies" (as Americans would call them) are named after a Dr. Abernethy who suggested the addition of caraway seeds and sugar to plain biscuits.

Yield 1 yummy batch of biscuits

Number Of Ingredients 7

8 ounces plain flour
3 ounces caster sugar (but granulated will do)
3 ounces butter
1/2 teaspoon baking powder
1/2 teaspoon caraway seed
1 tablespoon milk
1 egg

Steps:

  • Sift the flour and baking powder and rub in the butter until it is thoroughly mixed.
  • Mix in the sugar and caraway seeds and then add the egg and milk to make a stiff dough.
  • Roll the mixture on a floured surface until it is the thickness required for a biscuit/cookie.
  • Cut out with a three-inch cookie cutter, rolling the trimmings to make more, as required.
  • Prick the top of the biscuits with a fork and place on greased baking trays and bake in a pre-heated oven at 375F for 10 minutes until golden brown.
  • After they have cooled, store in an airtight tin (unless you can't resist eating them all immediately!).

2 1/4 c flour
1/2 t baking soda
2 t baking powder
1 t salt
6 T cold butter, cut into pieces
1 c milk

Steps:

  • Preheat oven to 450 degrees.
  • Place flour, salt, baking soda, and baking powder into the bowl of food processor. Pulse until well mixed.
  • Cut butter into pieces, then add to flour. Pulse until you see pea size pieces.
  • Add milk to dry ingredients, then pulse again five to ten times, just until it comes together.
  • Liberally flour a surface and knead dough on it briefly. Add flour as needed to keep it from sticking to you or the counter.
  • Pat dough into a rectangle about an inch thick. Cut into nine squares or rounds.
  • Place biscuits onto baking sheet with a silpat about 1/2 inch apart. Bake 10-12 minutes until golden.
