When I lived in Elko, Nevada, I dined at the local Basque houses quite regularly. The meals are served "family style" and every meal begins with soda bread, cabbage soup, and a green salad. I got this recipe from a former co-worker who use to work at one of the Basque houses, so it's a pretty authentic recipe. It is simple, but has a lot of flavor, especially if you like garlic! This salad is best served with chicken or steak.

1 tablespoon olive oil
2 garlic cloves, crushed
3 tablespoons apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/2 cup mayonnaise
1 hard-boiled egg, finely chopped
salad greens (the Basque houses use only head luttuce, but you can use whatever salad greens you like)

Steps:

  • Mix all of the ingredients together.
  • Chill until ready to serve.
  • Lightly drizzle the dressing over fresh salad greens and toss until evenly coated.
  • It is a very strong and flavorful dressing, so you may want to play around with the amount of dressing you add to suit your personal taste.
  • Caution: Do not mix the salad dressing with the salad greens until you are ready to eat or the greens will wilt.

This is a nice tangy dressing that has been handed down from generation to generation. It does have to sit for a few days to meld.

2/3 red wine vinegar
1/3 vegetable oil
garlic clove, minced
mayonnaise

Steps:

  • Mix red wine vinegar, oil and garlic in a bowl or cup with lid.
  • Shake.
  • Let sit in refrigerator for 2 days.
  • Whisk in mayonnaise to taste.
  • Serve.

BASQUE GARLIC SALAD DRESSING

1 Tablespoon olive oil 4 cloves of garlic, minced 3 Tablespoons apple cider vinegar 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/2 cup mayonnaise 1 medium head of iceberg lettuce

Steps:

  • Whisk the first six ingredients together and let sit in the fridge overnight to let the flavors meld.
  • Cut the lettuce into small squares and toss with the dressing.
  • That's it-Boom. Dead Simple.

BASQUE TOSSED SALAD

5 ripe tomatoes, coarsely chopped
1 large red bell pepper, stemmed, seeded, and diced
3 medium cucumbers, peeled, seeded, and diced
1 medium Spanish or red onion, diced
1/2 teaspoon dried oregano, crumbled
3 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup Spanish olive oil
2 large hard-boiled eggs, whites diced and yolks pushed through a sieve
6 large red radishes, trimmed and thinly sliced
1/3 cup slivered almonds, toasted (see Note)

Steps:

  • In a large bowl, combine the tomatoes, bell pepper, cucumbers, onion, and oregano. In a separate bowl, whisk together the lemon juice, salt, and pepper and drizzle in the olive oil, whisking until emulsified. Pour the dressing over the salad and toss again. Mound the salad onto a large platter and garnish with the egg whites, radishes, and almonds. Scatter the sieved egg yolk over the top and serve immediately.

This is a traditional Basque salad dressing. So tasty on a green salad with just a touch of garlic salt - but then all Basque's can't get enough garlic.

2 hard-boiled eggs, grated fine
1 teaspoon minced garlic
1/4 cup olive oil
1 1/2 cups mayonnaise
1/4 cup cider vinegar
salt, to taste
pepper, to taste

Steps:

  • Grate eggs and refrigerate them in a sealed container. Combine mayo and spices in a 1 1/2 quart bowl. Usinga wire whip to distribute the spices evenly. Whip in oil and then vinegar. Adjust the seasonings to taste. Refrigerate for at least 2 hours so the flavors can blend. Add dressing to your favorite salad greens. Sprinkle the eggs over the dressing.

1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
3 medium fresh tomatoes - cored, quartered, and sliced as thin as possible
1 large cucumber - peeled, seeded, and thinly sliced
1 Spanish onion - peeled, cut in half, and thinly sliced
⅓ cup red wine vinegar
¾ cup extra-virgin olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 teaspoon white sugar
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon dried marjoram
chopped fresh parsley

Steps:

  • In a large bowl, toss together the green, red, and yellow peppers with the tomatoes, cucumber, and onion.
  • In a medium bowl, whisk together the vinegar and olive oil. Season with salt, pepper, and sugar. Whisk in oregano, basil, and marjoram. Continue whisking until ingredients are well blended and the oil and vinegar are emulsified.
  • Pour dressing over vegetables, and toss gently with a wooden spoon. Cover, and marinate at room temperature for 1 to 2 hours, stirring frequently. Refrigerate until 1 hour before serving; then remove from the refrigerator, and let sit at room temperature. Garnish with chopped parsley.

This salad dressing has survived the times and has been passed around to many people. It was a Bon Appetit original, but I have changed it so drastically that I can now claim it my own creation!! I am very particular about my Caesar salads...the lettuce can't sit in the dressing too long and get soggy.....the lettuce has to be well washed and dried...it has to have enough dressing to coat the lettuce, but not simming in sauce...lettuce torn in "bite size pieces", not so big that you have to use a knife and fork to get it into your mouth!!! These crutons are devine! Make enough so that you have enough for sticky fingers who keep finching the finished product.

1 head romaine lettuce, trimmed and torn into bite size pieces
3 cups French bread
1/4 cup olive oil
2 tablespoons parmesan cheese, grated finely
good pinch salt
good pinch pepper
4 large garlic, minced
3 -6 anchovies, rinsed, patted dry, and chopped (depending on preference)
2 tablespoons fresh lemon juice
1 teaspoon capers (with a bit of the juice)
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
2 tablespoons water
1/4 cup parmesan cheese
1/4 cup mayonnaise
1 pinch curry powder
more water or milk, to thin it out if necessary

Steps:

  • Lettuce: I use a knife to cut the lettuce into strips, then tear the strips into bite size pieces. The lettuce is well washed, spun dry, then wrapped in a large, clean dish towel then placed in the fridge. I do this hours before serving so whatever moisture is still in the lettuce has been absorbed by the towel.
  • Crutons: In a non stick pan, heat the oil until hot. Add the french bread and toast (carefully) until golden. Place hot crutons into a bowl and add the finely grated parmesan cheese, salt and pepper.
  • Toss in the bowl until the parmesan cheese is distributed around. Set aside Note: the finer the grate with the parmesan the better it adhears to the hot cubes. I also use a non stick skillet as it saves in the clean up -- just make sure that the temperature is not too high. You might need to adjust on the oil -- if they look dry, add a bit more olive oil.
  • Dressing: In a blender, add the garlic and anchovies and blend first. Add the lemon juice, capers, worcestershire sauce, Dijon mustard, salt, pepper olive oil, water, parmesan cheese, mayonnaise and the pinch of curry powder. Blend and adjust seasonings if necessary. Note: I like my dressing to be a certain consistency, so thin it out with water, milk or cream if necessary. There is enough dressing for 2 meals.
  • To serve: In a large bowl add the romain lettuce and crutons. Add enough dressing to coat the salad.
