SWEET AND SPICY MEATLOAF

2 tablespoons olive oil
2 green bell peppers, diced small
2 red bell peppers, diced small
1 large yellow onion, diced small
3/4 cup panko breadcrumbs
1/2 cup whole milk
2 heads garlic, roasted and mashed into a paste

1/4 cup steak sauce
1/4 cup sriracha
1/4 cup maple syrup
1 tablespoon Montreal steak seasoning
2 pounds 80/20 ground beef
1 pound sweet Italian sausage, casings removed
3 eggs, beaten
1 bunch fresh Italian parsley, chopped
Kosher salt and freshly ground black pepper

Mashed potatoes, for serving

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
  • Preheat the oven to 350 degrees F.
  • Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
  • In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
  • In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
  • When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

I just love A1 sauce and wanted a meatloaf with a good kick. The cheez-its add a nice cheesy taste without using cheese.

1 1/2 lbs lean ground beef
1 egg
1/2 cup ketchup
1/4 A.1. Original Sauce
2 -3 tablespoons steak seasoning
3/4 Cheez-It crackers
3/4 cup ketchup, use for topping
1/4 A.1. Original Sauce, use for topping

Steps:

  • Pre-heat oven to 350 degrees. Mix all ingredient in a med bowl. Place in an ungreased 13X9 baking dish. Cover and place in oven for 1 hour (internal temp 155-160 degrees).
  • Topping
  • Mix ketchup and A1 in small mixing bowl. Spoon on top of hot meatloaf and place back in oven for 15 minutes. Let meatloaf rest atleast 10 minutes before serving.

  • Preheat the oven to 375°. In a large skillet, heat the oil. Add the onion, ginger, garlic and lemongrass and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Scrape into a large bowl. Add the chuck, pork, panko, scallions, eggs, 1/2 cup of water, the salt, pepper, 3/4 cup of the ketchup and 2 tablespoons of the Sriracha and knead until combined.
  • Press the meat mixture evenly into a 10-inch Bundt pan. Bake for about 50 minutes, until firm. Let rest for 15 minutes, then invert onto a large rimmed baking sheet.
  • Preheat the broiler. In a medium bowl, mix the remaining 1 cup of ketchup and 3 tablespoons of Sriracha. Spoon the glaze over the meatloaf and down the side. Broil the meatloaf 8 inches from the heat until glazed, about 2 minutes; rotate the baking sheet occasionally during broiling. Cut the meatloaf into wedges and serve.
