This classic macaroni salad side dish recipe features pickles and pickle juice for flavor, green onion, peas, corn, and bell pepper.

1 lb. elbow macaroni (or other pasta shape)
1/2 cup frozen corn ()
1/2 cup frozen peas ()
1 cup mayonnaise
2 tablespoons honey
1 tablespoon dijon mustard
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup dill pickle juice
1/2 cup chopped dill pickles
1 red bell pepper (diced into small pieces)
1/2 cup sliced green onions ((about 3-4 onions))

Steps:

  • Cook the macaroni in heavily salted boiling water according to directions. In the last 1 minute of cooking, add the frozen peas and frozen corn to the water.
  • Meanwhile, in a large bowl, make the dressing. Whisk together the mayonnaise (1 cup), the honey (2 tablespoons), dijon mustard (1 tablespoon), kosher salt (1 teaspoon), black pepper (1/2 teaspoon), and dill pickle juice (1/4 cup).
  • When the macaroni, peas, and corn are fully cooked, drain and rinse with cool water until the it has cooled off completely (check it so you can make sure it's cool to the touch). Shake off as much excess water as possible and add it to the bowl with the dressing.
  • Add the chopped dill pickles (1/2 cup), diced red bell pepper (1), and sliced green onions (1/2 cup) to the bowl and mix everything together. For best results, allow to sit for 1-2 hours in the fridge for all the flavors to marry.
  • Serve cold from the fridge or at room temperature.

2 cups uncooked elbow macaroni
1 cup fat-free mayonnaise
2 tablespoons sweet pickle relish
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped celery
1/3 cup chopped carrot
1/4 cup chopped onion
1 hard-boiled large egg, chopped
Dash paprika

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. , For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and toss gently to coat. , Refrigerate until serving. Garnish with egg and paprika.

I'm quickly getting my party groove on with all new backyard barbecue foods like A Tasty And Kid-friendly Pickle Relish Macaroni Salad.

1 pound elbow macaroni
2 cups mayonnaise
1 8 ounce jar deli-style sweet pickle relish (drained slightly, reserving pickle juice for adjusting taste )
1/2 cup sweet onion (chopped, soaked in warm water for 15 minutes)
4 tablespoons distilled white vinegar
1 tablespoon granulated sugar
pinch Kosher salt
pinch freshly cracked black pepper

Steps:

  • Boil macaroni according to package directions. Drain and rinse with cold water until pasta is completely cool.
  • Soak the onions in warm water for about 15 minutes. Drain on paper towels and set aside.
  • Whisk the vinegar and the granulated sugar, Kosher salt, and black pepper together until the sugar is dissolved.
  • Whisk the vinegar mixture together with the mayonnaise, in large bowl. TASTE for seasoning and add additional sugar or mayonnaise or vinegar as required.
  • Pour the dressing over the cooled macaroni. Add the jar of relish and the drained onion and toss well to coat. TASTE for seasoning and add additional reserved pickle juice from the relish if necessary. If using any add-ins, incorporate now.
  • Place into the refrigerator for at least 2 hours or overnight. Stir well before serving. Serve chilled or at room temperature.

My father made this recipe for me years ago and I absolutely loved it! I make it for my children and my younger siblings and they all love it too. This macaroni salad goes great with just about any type of meat whether it's grilled, baked, or fried. Also, makes a great snack when you have leftovers and don't feel like fixing anything.

1 lb elbow macaroni
4 -5 tablespoons dill pickles, minced
2 -3 tablespoons black olives, minced
2 -3 tablespoons green onions, chopped (to taste)
1 cup Hellmann's mayonnaise (add more to taste)
1/2 teaspoon yellow mustard (optional)
salt (to taste)
pepper (to taste)
1 -2 lb shredded cheddar cheese (to taste)

Steps:

  • Boil noodles like you normally would do. Until done. Drain the noodles. Put them in a large bowl and put in the fridge to cool. (Faster prep: Run them under cold water until cool then let sit so all of the water will drain).
  • Mince pickles and black olives. (Faster & easier prep: Buy dill pickle relish and already chopped black olives).
  • Chop green onions.
  • After noodles are cool add mayonnaise (more or less to taste) & mustard (optional) and mix together.
  • Add pickle, olives, & green onions and mix. (Can use more or less. I personally like a lot of pickles and little onion & olives).
  • Add salt and pepper to taste.
  • Put in the fridge to chill. (Sometimes you may need to add more mayo when ready to serve).
  • Add the cheese when you are serving. (I let everybody add as much as they want. Makes it fun for the kids).

Can be made ahead, kid friendly, quick and easy. I got this from a pasta website. Nice to make for a BBQ or summer side dish. It's a crowd pleaser! For a full 1 lb. (16 oz.)box of pasta, just double the recipe. I usually make this with regular mayo and milk since that's what I have in the house.

3 tablespoons low-fat milk

1 cup celery, sliced thin
1 cup green bell pepper, can use red if you like, chopped
1/4 cup onion, chopped

Steps:

  • Cook and drain pasta according to package directions; rinse with cold water to cool.
  • In large bowl combine mayonnaise, milk, vinegar, mustard, sugar, salt and pepper.
  • Add macaroni, celery, green pepper and onion; toss to coat.
  • Cover; chill to blend flavors.
