Cream Cheese Pinwheels are easy to make and are perfect for that football tailgate or holiday party.

Steps:
- Mix all of the ingredients (except tortillas) together in a large bowl.
- Spread the mixture thinly and evenly over each tortilla.
- Roll up each tortilla tightly and wrap in plastic wrap.
- Chill in the refrigerator for several hours or overnight.
- Cut the tortillas about an inch thick and place them on a serving tray.

TRIPLE-CHEESE SPIRALS

Steps:
- Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Unroll crescent roll dough on the prepared baking sheet. Spread butter over dough and sprinkle with Cheddar cheese and green onion. Season with garlic powder.
- Roll dough back to its original shape. Cut dough with a sharp knife into 8 even slices. Arrange slices cut-side up on the baking sheet about 1 inch apart.

Steps:
- Take off crusts from white bread.
- Take 2 slices, and lay one above (not on top) the other overlapping the edge by about half an inch.
- Roll out well with a rolling pin to seal and flatten.
- You should have a long piece now.
- Spread with flavoured cream cheese right to the edges, and lay on a spinach/shard leaf Roll up tightly and leave in the fridge overnight.
- Remove from fridge- Cut the roll into inch slices, push a pick through (optional) and lay decoratively on a platter.
MEXICAN SPIRALS

Steps:
- In a large bowl, combine cream cheese, chicken, monterey jack, coriander, jalapeno peppers, and cumin.
- Spread mixture evenly over tortillas.
- Roll up each tortilla tightly around chicken mixture.
- Wrap tightly in plastic wrap and refrigerate for at least 2 hours.
- Just before serving, cut each tortilla roll into 1/2 inch slices.
- Arrange on greased baking sheet, brush with oil, bake in 350 degree oven for 12 to 15 minutes or until lightly browned.
- Serve hot with salsa and sour cream.
DEVIL'S FOOD VANILLA CREAM SPIRALS
Steps:
- Preheat oven to 375 degrees F. Spray one 9 by 17-inch sheet tray with vegetable spray, line with parchment paper and spray again. In a mixer, using the whip attachment, whip the egg yolks and the sugar until doubled in volume and pale yellow; add vanilla extract. Sift together the flour, cocoa powder, and baking powder and powdered sugar twice. Slowly add the dry ingredients to the mixing bowl, running at slow speed, until fully incorporated.
- In a clean and greaseless bowl, whip the egg whites until firm but not dry. Incorporate a fifth of the whipped egg whites into the cocoa mixture and mix until well incorporated. Fold the remaining egg whites into the cocoa mixture in 3 batches and immediately spread onto a large baking sheet using an offset spatula, being careful not to overwork the dough. Bake for 6 to 8 minutes.
- Immediately run the tip of a knife around the edge of the cake to loosen it from the sides of the sheet tray then slide it (with the parchment paper) onto a cool surface. Trim dry edges of the cake.
- Vanilla Cream Filling: With an electric mixer, beat together the butter and the vegetable shortening until blended. Turn the mixer down to its lowest setting and gradually add the confectioners' sugar. Turn the mixer back up and beat at high speed until light and fluffy, about 5 minutes. Gradually beat in the vanilla and corn syrup until the filling is the consistency of sour cream, about 2 minutes more.
- Using a sharp knife, cut the cake in half lengthwise. Using an offset spatula, spread a 1/8-inch thick layer of vanilla cream filling over half of the cake and cut into 5 equal sections per half. Roll up each section tightly (peeling off parchment paper as you roll) and place in the freezer for 30 minutes.
- Melt the bittersweet chocolate in the top of a double boiler and add cocoa butter or vegetable oil. Place the rolls 1 at a time directly in the double boiler of melted chocolate. Coat each roll completely in the chocolate. Using two forks, carefully transfer the rolls to a parchment-lined tray, allowing any excess chocolate to drip back into the double boiler. Continue with the remaining rolls, pouring more of the chocolate onto the plate as needed.

- Add carrot, red pepper, onion, garlic and curry powder and cook until softened, about 3 to 5 minutes.
- Remove from heat.
- Stir in coriander, lemon juice and salt; let cool slightly.

- Stir in vegetable mixture and mix well.
- Lay tortillas out on a work surface.

HAM AND CHEESE SPIRALS
Steps:
- In a small bowl, whisk together the olive oil, garlic, and Italian seasoning.
- On a lightly floured surface, roll out the pizza dough into a 12-inch square. Brush the entire surface with the seasoned olive oil. Top with 1 cup of shredded cheese and an even layer of ham. (Reserve the extra cheese and ham for Round 2 Ham and Cheese Croquettes.)
- Starting from the bottom edge, tightly roll up the dough to form a log. Using a sharp serrated knife, slice the roll on the bias into 1-inch thick pieces. Arrange the rolls on their side on a nonstick or lightly oiled baking sheet. Cover loosely with plastic wrap and allow to sit at room temperature for 30 minutes to proof.
- Preheat the oven to 375 degrees F.
- In a small bowl, whisk together the egg with 2 tablespoons of water. Brush the tops and sides of the rolls with the egg wash. Bake until golden brown, about 30 to 35 minutes.
- Remove from the oven, transfer to a serving platter and serve.
BLUE CHEESE CRESCENT SPIRALS
I am always on the look-out for finger food for our many appetizer parties. This recipe came about from my love of Bleu Cheese and my desire to have a nibble that was easy to eat at a standing room only party. Add or reduce cream cheese to bleu cheese ratio to suit your tastes.

- Process pecans in a food processor until finely chopped.
- Add cheeses and process until very smooth. Add the milk, if necessary to blend smoothly.
- (Can prepare ahead to this point and then place in a covered dish and refrigerate until ready to proceed.).
- Unroll dough into 4 long rectangles.
- Firmly press diagonal perforations to seal.
- Spread the cream cheese/bleu cheese/nut mixture on each rectangle.
- Starting at the shortest side, roll up each rectangle, press and seal.

- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch pan with cooking spray and set aside. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

CREAM CHEESE AND TURKEY SPIRALS

- Place a tortilla on your cutting board. Spread a thin layer of cream cheese all over the tortilla. Sprinkle garlic powder or herb blend over cream cheese. Arrange turkey slices in one layer on top of the cream cheese. Roll tortilla tightly.
- At this point you can cut it into rounds or store it in the fridge until your party.
- If you want to store it, wrap plastic wrap around it tightly. Make sure you cover the ends so the tortilla doesn't dry out and get hard. When you are ready to use it, just unwrap and slice. They can sit in the fridge for about three days before they get soggy. Placing them (wrapped up) in an air-tight storage bag helps keep them fresh.

HAM AND CHEESE CRESCENT SPIRALS
This is one of my forgotten recipes that I just recalled when looking for appetizer recipes. These make great bite-size snacks or appetizers. Recipe can easily be cut in half.

- On a nonstick surface or wax paper, unroll each tube of crescent dough. Seperate each 8-oz tube into 2 large rectangles (you'll have 4 total).
- Seal the perforations very well and spread out dough just a bit.
- In a bowl, beat together the cream cheese sour cream and mustard. Stir in the scallions, ham, cheese and garlic powder; mix well.
- Spread each rectangle with one-fourth of the cream cheese mixture. Spread it thin and leave 1/2" on the sides.
- Roll up the rectangles jelly-roll style.
- Wrap each roll in wax paper and place in the freezer for 20-25 minutes.
- Preheat oven to 375°F.
- Unwrap rolls and cut into about 1/2" slices.
- Place slices on a nonstick or lightly greased cookie sheet and bake for about 12 minutes or until lightly golden.
- After baking, allow to cool for 3 minutes before removing from cookie sheet.
- Serve warm or cold.
