Celery Root and Apple Soup image

Number Of Ingredients 8

1/4 cup unsalted butter ((1/2 stick))
1 1/4 pounds celery root ((peeled should yield about 4 cups of 1/2-inch cubes))
2 medium Granny Smith apples ((peeled and cored yields about 3 cups of 1/2-inch cubes))
1 large onion ((about 1 1/2 cups chopped))
4 cups low-sodium chicken broth ((or more as needed))
Salt and pepper to taste
1/2 cup chopped chives
1/2 cup grapeseed oil

Steps:

  • Melt butter in a large, heavy pot over medium heat. Add chopped celery root, apples and onion. Cook until apples and some of the celery root are translucent (not brown), stirring often, about 15 minutes.
  • Add 4 cups broth. Cover and bring to a simmer. Reduce heat to medium-low and simmer covered until celery root and apples are soft, stirring occasionally, about 25 minutes.
  • Remove from heat and cool slightly. Working in batches, puree soup in blender until smooth, adding more broth by 1/4 cupfuls to thin to desired consistency.
  • Return soup to pot. Season to taste with salt and pepper.
  • Puree chives, grapeseed oil, and a pinch of salt in the blender until smooth.
  • Divide soup among bowls. Drizzle each bowl with chive oil before serving.

1 small onion peeled and chopped
2 tbsp olive oil
2 cloves garlic peeled and chopped
1 large head celery roughly chopped
1 large potato peeled and chopped
1 medium apple peeled and chopped
1 tsp chopped fresh thyme
1 lt vegetable or chicken stock
salt and pepper to taste
4 tbsp yogurt to serve (optional)
4 tsp bacon or pancetta to serve (optional)

Steps:

  • Toss the onion into a large pan with the olive oil and cook on medium heat for about 5 minutes till translucent but do not brown.
  • Add the garlic and cook for one more minute.
  • Add the celery, apple, thyme and potato and the stock and seasoning.
  • Cover and simmer for 20 minutes.
  • Using an immersion blender puree the soup in the pan or carefully transfer to a blender.
  • Serve with a spoonful of Greek yogurt or cream and a few pieces of grilled and crumbled bacon or pancetta and a few celery leaves.

2 medium potatoes, chopped
2 cups chicken broth or 2 cups vegetable broth
1 cup buttermilk or 1 cup kefir

1/2 teaspoon white pepper

Steps:

  • in a large dutch oven, saute onion til translucent.
  • add garlic and saute just a couple minutes.
  • add the rest of the ingredients and cook 20 minutes or until potatoes are soft.
  • puree ingredients with a stick blender
  • add water or milk to thin (or cream if you wish!).

2 lbs carrots, finely diced
1 medium onion, chopped
3 celery ribs, diced (reserve the leaves)
4 cups vegetable stock or 4 cups broth
3 medium apples
2 tablespoons tomato paste
1 bay leaf
2 teaspoons sugar (super fine)
1/4 large lemon
salt
pepper

Steps:

  • Place the carrots, onion and celery in a lare pan and add the vegetable stock.
  • Bring to a boil, reduce heat, cover, and let simmer for 10 minutes.
  • Meanwhile, peel, core, and dice 2 of the apples.
  • Add the diced apples, tomato paste, bay leaf, and sugar to the pan and bring to a boil over medium heat.
  • Reduce the heat, partially cover the pan, and let simmer for 20 minutes.
  • Remove and discard the bay leaf.
  • Meanwhile, wash, core, and cut the remaining apple into thin slices, without peeling.
  • Place the apple slices in a small pan and squeeze the lemon juice over apple slices.
  • Heat the apple slices gently and let simmer for 1-2 minutes, or until the apple is tender.
  • Drain the apple slices and set aside until required.
  • Place the carrot and apple mixture in a blender or food processor until smooth.
  • Gently reheat the soup if necessary and season to taste with salt and pepper.
  • Ladle the soup into 4 warmed bowls, top with the reserved apple slices and shredded celery leaves.
  • Serve immediately.

No need for cream in this soup. Some fresh seasoning from sage, and the sweetness of the apples make this an amazing easy quick soup. One of the things I like best about this soup, is that it has a very clean fresh flavor. This to me, makes an amazing starter for a dinner party, soup for lunch or served with sandwiches or salad for a great light dinner. And the best part ... this is just as good served chilled, as it is hot. I love to serve this with my Sweet Savory Bread Sticks.

8 large apples, peeled and rough chopped (I used McIntosh, you can use whatever, you just don't want a tart apple)
2 cups celery, rough chopped
4 cups chicken broth
4 tablespoons butter
1 medium onion, rough chopped
1 tablespoon fresh sage, very fine chopped
1 pinch clove
ground black pepper
1 1/2 cups mascarpone
2 ounces brandy

Steps:

  • Base -- In a medium sauce pan, melt the butter over medium heat and add the celery, onion and cook 3-4 minutes. Add in the apples and broth and cook until tender. It will take about 20 minutes on a medium low simmer, uncovered.
  • Puree -- I used my immersion blender, but you can you can transfer it to a standard blender and puree until smooth.
  • Season -- Add in the the sage, and a very small pinch of cloves, go easy ad season with black pepper. Cook another 10 minutes.
  • Mascarpone -- Mix the mascarpone with the brandy, and return to the refrigerator. I mixed mine right in the container, save on those dirty dishes.
  • Serve -- I like to serve with a fresh small sprig of sage and a dollop of the Brandied Mascarpone cheese. You can serve this hot, which I prefer, or chilled is also very good. And don't forget my Sweet Savory Bread Sticks.

3 tablespoons EVOO
1 large celeriac (celery root), 1 1/4 pounds, peeled and chopped
2 parsnips, peeled and chopped
1 Idaho potato, peeled and chopped
1 onion, chopped
Kosher salt and freshly ground pepper
1 bay leaf
2 tablespoons chopped fresh thyme
3 large Gala or other crispy, sweet apples, 2 peeled and chopped, 1 sliced
1/2 lemon, juiced
1/2 cup Calvados apple liquor or 1/2 cup Sauterne (citrusy) wine
4 cups chicken stock, homemade or store-bought
1 cup heavy cream or creme fraiche
1 stick butter, softened
8 slices, 1/2-inch thick, good quality white bread
1/2 cup apple butter
1/3 cup honey
1/4 cup grainy Dijon mustard
3/4 pound super sharp white Cheddar, sliced
12 slices good quality smoky bacon

Steps:

  • For the soup, heat the EVOO, 3 turns of the pan, in a soup pot or large Dutch oven. Add the chopped celeriac, parsnips, potato, onion, bay and thyme. Season with salt and pepper and cook, partially covered, to soften, 10 to 12 minutes, stirring occasionally. Add the apples and lemon juice and cook 5 minutes more. Then deglaze the pan with the Calvados or Sauterne and add the chicken stock. Simmer over medium-low heat, 20 to 25 minutes more. Then remove the bay leaf and puree the soup. If too thick, add 1 cup water to puree. Add the cream or creme fraiche, turn off the heat, cool and store for a make-ahead meal.
  • Butter one side of each slice of bread. Combine the apple butter, honey and mustard and spread over opposite sides of the bread. With the buttered-side facing out, build the cheese sandwiches and individually wrap for make-ahead.
  • To serve, preheat the oven to 375 degrees F. Heat the soup up over medium heat, stirring occasionally. Arrange the bacon on a slotted pan and bake until crisp, about 15 minutes. Place the bacon and sliced apples in the prepared sandwiches. Heat a griddle pan over medium heat and make the grilled cheeses, cooking until deeply golden and crisp on both sides.

Steps:

  • SOUP: Melt butter in a large pot; cook onion& apple until softened.

  • Stir in the spinach, simmer for a minute & puree in a blender.
  • Season to taste & set aside.
  • CROUTONS: Preheat oven to 400F.
  • Combine bread cubes & oil in a large bowl; mix well.
  • Place on a baking sheet & bake for approximately 6 minutes.
  • Remove from oven & set aside.
  • CHEESE: Mix all ingredients in a small bowl.
  • SERVE: Reheat soup & pour into dishes.
  • Add 5 croutons to each bowl - top with about 1 tbsp of goat cheese.

2 large granny smith apples, peeled and cored
2 stalks celery
2 brown onions
2 tablespoons curry powder
2 tablespoons plain white flour

1/2 cup plain yogurt (optional)

Steps:

  • 1. Finely chop apple, onion and celery.
