OUR FAVORITE MEATLOAF

Our Favorite Meatloaf image

This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Yield 8 servings

Number Of Ingredients 13

1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
  • Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
  • Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
  • Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.
  • Do Ahead
  • Meatloaf can be made 3 days ahead; wrap in foil and chill, or freeze for up to 3 months.

  • Tunnel Of Fudge. Given its name, there's no confusion about what it is. The only confusion is as to why we stopped making this. Image Source: Pinterest (left), Flickr (right)
  • Beef Wellington. A somewhat simple dish of beef tenderloin wrapped in puff pastry. Perhaps that simplicity and universality has something to do with the fact that no one can truly pinpoint its origins.
  • Cheesecake Cookies. It's simple. Cheesecake is good. Cookies are good. Therefore, cheesecake cookies are good. Image Source: Vintage Recipe Cards (left), Pinterest (right)
  • Chicken Kiev. Despite its name, this herbed, buttered, and breaded chicken is just one example of French haute cuisine that took hold near mid-century. Image Source: Flickr (left), Flickr (right)
  • Waldorf Salad. This apple, celery, and walnut salad (with many other variations and additions) was invented at New York's famed Waldorf-Astoria Hotel. Image Source: WordPress (left), Wikimedia Commons (right)
  • Fondue. This Alpine classic of melted cheese (sometimes chocolate) accompanied by various dipping items took hold in America after its appearance at the 1964 World's Fair.
  • Baked Alaska. Supposedly invented at the venerated Delmonico's Restaurant in New York, this seemingly improbably dessert houses ice cream within a browned meringue shell.
  • Chicken Croquettes. These spiced, breaded, and fried rolls come in endless variations beyond chicken and have countless permutations across the globe. Image Source: Flickr (left), Pexels (right)
  • Apple Cake. Although America is culinarily synonymous with apple pie, the Betty Crocker classic, apple cake, has somehow been all but forgotten. Image Source: Vintage Recipe Cards (left), Flickr (right)
  • Chicken Marengo. Chicken served with tomatoes and seafood, this is yet another mid-century classic brought over from France. And yet another French standby whose origins are--probably apocryphally--linked with Napoleon.

From soyummy.com
Estimated Reading Time 5 mins
  • Bunburgers. A bunburger is like an open-faced sandwich, except it’s a hamburger… cooked right inside the bun. We’re not entirely sure about bunburgers.
  • Roll-In-One Meatloaf. This was very similar to classic meatloaf. In fact, it came with all of the typical casserole fixings. What was inside? There was Campbell’s tomato soup, ground beef, bread crumbs, onion, parsley, and egg.
  • Tuna-Berry Sandwich. This recipe almost ended us immediately. For the most part, the tuna-berry sandwich that Instagram user retrofoodghoul recreated was basically a tuna melt.
  • Ham Basted with 7-Up. “Gash fat” on your ham of choice and douse with 7-Up. Baste with additional 7-Up if necessary. And the fun keeps going. This recipe also recommends one try the 7-Up marinating method with fowl — especially wild duck.
  • Wieneroni Casserole. The only thing worse than the name of this 1966 dish is the actual recipe. To make the Wieneroni Casserole, fry up a half-pound of bacon with onions.
  • Deviled Rice. To whip up this dish, one must first sauté peppers, onions, currant jelly, sour cream, pimentos, mustards, and Worcestershire sauce. And wait until it starts to smell “FUNKY.”
  • Party Sandwich Loaf. This 1964 recipe is basically a layer cake that has Italian bread and “filling.” And what exactly is this filling? Well, first there’s ham and celery.
  • Under-The-Sea Salad. Oh, you thought we left the Jell-O craze in the 1950s? Think again. Jell-O was alive and thriving throughout the 1960s. It’s like a 1963 under-the-sea salad.
  • Breaded Spam. Add a little crunch to your classic spam by slicing up the loaf and dunking each slice into beaten eggs. There needed to be some texture, though.
  • Cream of Peanut Soup. This certainly didn’t sound good, and according to retrofoodghoul, it tasted “extremely not good.” Noted. This 1968 recipe started with combining peanut butter and milk.
