HEARTY AND DELICIOUS BEEFY CHILI SOUP



Hearty and Delicious Beefy Chili Soup image

I find that this soup works best with only the chili macaroni flavor Hambuger Helper. This is a hearty soup that should be served as a main meal, with recipe#105726 or crusty buns on the side! Adust the chili powder and chili flakes to suit taste.

1 lb ground beef
1 medium onion, chopped
2 tablespoons minced fresh garlic (or to taste)
1 small green bell pepper, seeded and finely chopped
2 tablespoons chili (or to taste)
2 -4 teaspoons dryed chili flakes (or to taste)
1 -2 teaspoon cumin (or to taste)
1 jalapeno pepper (seeded and finly chopped) (optional)
5 cups chicken broth (or use 3 cups broth and 2 cups water, or use all water)
1 (220 g) package Hamburger Helper mix for beef pasta (use Chili-Macaroni flavor for this)
1 (28 ounce) can diced tomatoes (undrained)
1 (8 ounce) can corn niblets (undrained)
1/3 cup sliced and black olives (or to taste)
salt and black pepper
sour cream (optional)

Steps:

  • In a pot cook the macaroni from the Hambuger Helper package in boiling water until just al dente; drain and set aside.
  • In a large pot cook the ground beef with onion, garlic and bell pepper until no longer pink; drain fat.
  • Add in chili powder, cumin, dryed chili flakes and jalapeno pepper (if using) cook stirring for about 3-4 minutes.
  • Add in broth powdered sauce mix from the Hamburger Helper and tomatoes with juice; cook uncovered over medium-low heat stirring occasionally for about 45 minutes (can simmer longer if desired the longer you simmer the soup uncovered the richer it will be!).
  • Add in the cooked macaroni, undrained corn and olives, season with salt and pepper and simmer another 10 minutes or until heated through.
  • Ladle into bowls and dollup with sour cream if desired.

This is a fantastic soup! It's easy and it's a one pan meal. I like to switch types of beans, kidney, black, pinto, even black eyed. You can make it hotter, or use less pepper sauce for milder. I like to use the hot pepper flakes when I make mine. I hope you will enjoy this chili soup, and that you make it often.

1 (7 ounce) can ortega diced green chilies

  • Combine all ingredients in a large saucepan and bring to a boil.

1 medium onion, chopped
1 (14 1/2 ounce) can diced tomatoes, undrained
1 1/2 cups water
1 (16 ounce) can kidney beans, undrained
1 (8 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 teaspoon chili powder

Steps:

  • In a soup pot, brown ground beef and onion over medium heat 5 to 7 minutes. Add remaining ingredients; mix thoroughly.
  • Reduce heat to low and simmer, uncovered, for 30 minutes, or until thoroughly heated.

1 tbsp olive oil
1 large onion, finely chopped
1 garlic clove, crushed
1 tbsp tomato purée
1 tsp mild chilli powder
½ tsp ground cumin
400g can chopped tomatoes
500ml vegetable stock
400g can mixed beans, drained and rinsed
1 red pepper, cut into chunky dice
tortilla chips, to serve
4 limes wedges, to serve

Steps:

  • Heat the oil in a deep saucepan and fry the chopped onion over a medium heat until tender. Add the garlic and tomato purée, stirring for 1-2 mins until combined. Sprinkle in the spices and cook for another 1 min.
  • Tip in the chopped tomatoes, half fill the can with water, and add to the pan. Pour in the stock and simmer on a medium heat for 10-15 mins, uncovered. Season, then whizz using a hand blender until smooth. Add the beans and red pepper, and cook for another 15 mins until the pepper is tender.
  • Serve in bowls topped with a small pile of tortilla chips and a lime wedge.

1/2 lb ground round
1 cup chopped onion
1 cup chopped celery
1/2 cup chopped carrot
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon red pepper flakes
1 large garlic clove, minced
1/4 teaspoon salt
2 (14 ounce) cans beef broth
1 (4 1/2 ounce) can chopped green chilies, undrained
1 1/4 cups elbow macaroni

Steps:

  • Zaar will not let me enter the Green Chilis amount! Please note, it is 1 can (4,5 oz.) chopped gtreen chilis, undrained. :-).
  • Heat a large Dutch-oven over meduim-high heat.Add beef and cook until browned, stirring to crumble.Remove beefand set aside.Add veggies to pan and cook until tender.Add spices and garlic.Cook 1 minute to combine.Return beef to pan.Ad broth and Chilis.Bring to a boil. Add maccaroni and reduce heat to simmer. Cook about 8 more minutes until noodles are done.
  • Yield 6 1cup servings.
  • HINT: I boil my noodles separately and add them to each serving! That way leftover soup when reheated does not have gummy/loppy noodles in it! :-).

1 ½ cups chopped onion
2 potatoes, cubed
4 (15 ounce) cans kidney beans
4 (10.75 ounce) cans condensed tomato soup
8 cups tomato juice
3 teaspoons chili powder
8 cups water
salt to taste

Steps:

  • In a large pot over medium heat, combine the ground beef and onions. Saute for 5 minutes, or until meat is browned. Drain excess fat and add the potatoes, beans, tomato soup, tomato juice, chili powder, water and salt to taste. Bring just to a boil and reduce heat to low. Simmer for 1 hour and serve.

ADDITIONAL INGREDIENTS
2 pounds ground beef
6 cups water
3 (14-ounce) cans tomato juice

Steps:

  • 1. Place the kidney, navy, and black beans in a medium-sized bowl or pot. Cover with 6 cups boiling water, cover, and soak 8 hours or overnight. 2. Coat a medium-sized pot or Dutch oven with cooking spray, and preheat over medium-high heat. Add the beef, and cook, stirring constantly for 4 minutes, or until no pink remains. Remove any excess fat, and set aside. 3. Drain and rinse the soaked beans, and add them to the pot along with 6 cups fresh water and all of the jar ingredients. Bring to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the beans are tender. Stir the soup occasionally as it simmers.4. Add the tomato juice and return to a boil.
