- Mix sour cream and taco seasoning. Chill for 30 minutes.
- Combine beans and salsa in sauce pan and heat on medium until evenly blended. Let cool.
- Spread beans and salsa in 11x13 inch pan. Spread sour cream / taco seasoning mixture over beans.
- Layer cheese, olives, lettuce, tomatoes, avocados and green onions over each ingredient. Serve with tortilla chips.

Found this recipe in magazine, but they used cake in the middle. We have people at work that are gluten intolerant so I used pudding layers instead of cake. Everyone was able to enjoy this for Cinco de Mayo!

Steps:
- 1. Make pudding in separate containers, according to directions on pkgs. Let set and chill.
- 2. Thaw whipping cream in refrigerator.
- 3. Crumble white chocolate into microwave safe dish. Microwave for 30 secs. Stir in 2 drops yellow and 1 drop red food coloring. Make it look like cheddar cheese. Stir until smooth, may need to microwave 10 secs. or longer. Pour in thin strips into parchment paper. Let set.
- 4. Put coconut flakes into resealable bag, and 2 drops green food coloring, seal and shake. Make it look like lettuce.
- 5. Put sliced cherries into resealable bag, add 2 drops blue food coloring, seal and shake. Make it look like black olives.
- 6. Layer into Trifle bowl as follows. Chocolate pudding, whipping cream, Pistachio pudding, Strawberry preserves, Coconut flakes, cheese colored chocolate, maraschino cherries. Cover and chill in refrigerator.

- Preheat oven to 350 degrees F (180 degrees C).
- Place butter in 13 x 9 inch pan and melt in oven. Swirl to coat bottom and sides with butter.
- Spread graham cracker crumbs evenly over bottom of pan. Layer chocolate chips, butterscotch chips, and nuts over crumbs. Pour condensed milk over nuts. Sprinkle coconut over condensed milk.
- Bake until edges are golden brown, about 25 minutes. Let cool before cutting into bars.

- In a high-speed blender, combine the ingredients for the chocolate mousse layer. Blend on high until smooth. Pour into a 9×9 baking dish. Transfer the dish to the fridge for 20 minutes to set.
- Once the mousse is set, sprinkle on the chopped almonds and chopped dates in an even layer.
- Rinse out the blender, and add in the date caramel ingredients. Blend on high, scraping down the sides, or using the tamper, as needed, until a smooth caramel sauce forms. Add in 1-2 more tablespoons almond milk if needed to get the blender moving. Pour the caramel sauce into the pan and smooth it into an even layer.
- Add the solid cream from the chilled can of coconut milk to a bowl. Use a hand mixer to whip the cream into soft peaks. Add in the maple syrup, if desired, and mix again. Spread the coconut whipped cream in an even layer on top of the dip.
