Crunchy cabbage coleslaw in a sweet and tangy vinegar dressing.

6 cups cabbage, grated
1 medium yellow or red onion, very thinly sliced
1 medium carrot, grated
1/4 cup apple cider vinegar
2 tablespoons light olive oil
2 tablespoons granulated sugar
1/2 teaspoon ground mustard
1/2 teaspoon celery
salt and pepper to taste

Steps:

  • In a large bowl, toss together the cabbage, onion, and carrot. In a small saucepan, combine the vinegar, celery seed, sugar, ground mustard, and oil. Bring to a boil, and cook for 3 minutes. Pour the vinegar mixture over the cabbage mixture and stir well to combine. Cover and refrigerate overnight for best flavor before serving.

This salad will stay crisp in your fridge for up to 7 days. It is low cal and very tasty. It gets better as the days go by.

6 cups cabbage, shredded
1 medium onion, finely chopped
1 medium carrot, grated
1/4 cup vinegar
2 teaspoons lite olive oil
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon horseradish cream
pepper
10 teaspoons artificial sweetener, approximate to taste (Splenda, Sugar twin)

Steps:

  • Combine the cabbage, onion and carrot.
  • Combine remaining ingredients in a sauce pan (do not add all of the sweetener taste as you go) Heat to boiling.
  • Pour the hot dressing over the veggies.
  • Cover and refrigerate for at least an hour.

2 tablespoons light mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon grated lemon, rind of
1/2 teaspoon celery seed
4 cups thinly shredded green cabbage (from about ½ large head)
1 large carrot, peeled and coarsely grated
1/4 cup chopped red onion
2 tablespoons chopped fresh parsley

Steps:

  • Whisk yogurt, mayonnaise, lemon juice, lemon peel, and celery seeds in large bowl to blend.
  • Add remaining ingredients; toss to coat.
  • Season to taste with salt and pepper (Can be made 2 hours ahead).
  • Cover; chill.
  • Toss before serving.

6 tbsp plain yogurt
½ tsp Dijon mustard
2 tbsp mayonnaise
1⁄2 white cabbage
2 carrots
1⁄2 onion

Steps:

  • Mix the yogurt, mustard and mayonnaise together in a bowl. Then, use a grater attachment on a food processor, or a box grater, to grate the cabbage and carrots. Either grate the onion or chop as finely as you can. Tip all of the vegetables into the bowl and stir through the dressing.
  • Will keep in the fridge for up to 3 days.
