This soup is known in my house as my daughter's favorite. It's Mom's favorite "five-minute" soup as well, which takes five minutes to put together. READ MORE

Number Of Ingredients 8

Ingredients

1 to 2 tablespoons oil
2 large leeks, sliced
4 to 5 large carrots, peeled and cut into chunks
2 cups frozen peas
1 stalk celery (optional)
1/2 cup quick-cooking oats (use gluten-free oats, if needed)
salt and pepper, to taste
1 cup milk (low-fat is fine)

Steps:

In a large pot, heat oil. Add the leeks and carrots and sauté slowly to let them caramelize. (If you're in a rush, you can skip this step.)
Add water to cover. Season with salt and pepper, add peas, and let cook for about 20 minutes more.
Add oats, let cook for five more minutes, season again, and use an immersion blender to break up any big pieces that remain.
Stir in milk and reheat gently to serve.

4 cups commercial low-sodium chicken broth, heated
1/2 medium cucumbers or 1 medium zucchini, sliced very thin
4 fresh mushrooms, sliced
2 cups lettuce or 2 cups cabbage, shredded
1 medium tomatoes, cubed
1/2 cup chicken or 1/2 cup lean meat, cooked, shredded

Steps:

Put all of the ingredients in a large saucepan.
Bring to a boil over medium-high heat. Reduce heat and simmer for 5 minutes.

1 can(s) carrots, no salt added
1 can(s) diced tomatoes, no salt added
1 can(s) green beans, no salt added
1 can(s) canellini beans, low sodium
1/3 c corn, no salt added
1/4 tsp chopped garlic
1 pinch ground black pepper (optional)
1 pinch sea salt (optional)

Steps:

1. Open all cans and add to large soup pot. DO NOT DRAIN FIRST. THE LIQUID MAKES THE STOCK. Add chopped garlic and a pinch of black pepper and sea salt to taste. Heat and eat!
