We always choose this family recipe for July Fourth or any picnic because it's a meaty twist on everyday baked beans and it has a nice sweetness. -Wendy Hodorowski, Bellaire, Ohio

1/2 pound ground beef
1 large onion, finely chopped
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup ketchup
1/2 cup barbecue sauce
2 tablespoons yellow mustard
2 tablespoons molasses
1/2 teaspoon chili powder
2 cans (13.7 ounces each) beans with tomato sauce
1/2 pound bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Stir in sugars, ketchup, barbecue sauce, mustard, molasses and chili powder. Add beans and bacon., Transfer to a greased 13x9-in. baking dish. Bake, covered, 45 minutes. Bake, uncovered, 10-15 minutes longer or until heated through.

1/2 lb bacon, diced
1/2 lb ground beef
1 cup onion, chopped
1 (28 ounce) can pork and beans
1 (17 ounce) can lima beans, rinsed and drained
1 (16 ounce) can kidney beans, rinsed and drained
1/2 cup barbecue sauce
1/2 cup ketchup
1/2 cup sugar
1/2 cup packed brown sugar
2 tablespoons prepared mustard
2 tablespoons molasses
1 teaspoon salt
1/2 teaspoon chili powder

Steps:

  • Preheat oven to 350*.
  • In a skillet over medium-high heat, cook bacon, beef and onion until meat is brown and onion is tender. Remove from heat and drain.
  • Place in a greased casserole dish. Add beans and mix well.
  • In a separate bowl, combine barbecue sauce, ketchup, sugars, mustard, molasses, salt, and chili powder and stir into beef mixture.
  • Cover and bake for 45 minutes.
  • Uncover and bake for 15 minutes longer, or until browned and bubbly.
  • NOTE: If serving this savory baked casserole as a main course, offer hot corn bread and a green salad to make a full meal. Will serve 12 as a side dish, 4-6 as a main course.

I have to say this is my favorite baked bean recipe so far. I didn't add the extra sugar or packed brown sugar or the molasses because I thought it was too sweet already. I threw in some spicy mustard to give it more of a kick, but I will post as written. The beef and bacon make plain pork and beans so much better.

1/2 lb bacon, strips diced
1/2 lb ground beef
1 cup chopped onion
28 ounces pork and beans
16 ounces kidney beans, rinsed and drained
15 1/4 ounces lima beans, rinsed and drained
1/2 cup barbecue sauce
1/2 cup ketchup
1/2 cup sugar (I skipped this ingredient)
1/2 cup packed brown sugar (I skipped this ingredient)
2 tablespoons prepared mustard (I added some extra spicy mustard)
2 tablespoons molasses (I skipped this ingredient)
1 teaspoon salt (I skipped this ingredient)
1/2 teaspoon chili powder (I skipped this ingredient)

Steps:

  • In a large skillet over medium heat, cook bacon, beef, and onion until meat is no longer pink and drain.
  • Transfer to a greased 2 1/2 quart baking dish and add all of the beans and mix well. In a small bowl combine the remaining ingredients and stir into beef and bean mixture.
  • Cover and bake at 350 for 45 minutes. Uncover and bake 15 minutes longer.

Can substitute ground turkey or veal for the ground beef. For serving, use a clear, ovenproof dish to show off the layers of the vegetables, beef, and macaroni. This casserole can be assembled a day ahead and kept, covered with plastic wrap, in the refrigerator until ready to bake.

2 tablespoons unsalted butter
1 medium leek, trimmed, rinsed, and cut in 1/4-inch slices (white and some green part)
1 medium green bell pepper, cored, seeded, and cut into 1/2-inch pieces (about 3/4 cup)
2 medium zucchini, trimmed and cut into 1/2-inch pieces (2 cups)
1 (10 ounce) package frozen leaf spinach, thawed and drained
1/8 teaspoon salt (to taste)
1/8 teaspoon fresh coarse ground black pepper
1 tablespoon extra virgin olive oil
1 medium yellow onion, chopped (about 1 cup)
1 stalk celery, chopped (about 1/2 cup)
1 lb lean ground beef
1/2 cup beef stock
1/4 cup tomato paste
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/8 teaspoon salt (to taste)
1/8 teaspoon fresh coarse ground black pepper
6 ounces elbow macaroni (about 2-1/2 cups)
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/4 cups milk
6 ounces shredded sharp cheddar cheese (about 1-1/2 cups)
1/8 teaspoon white pepper

Steps:

  • To make the Vegetable Layer: In a large skillet over moderate heat, melt the 2 tablespoons of butter. Add the leek and saute for 2 to 3 minutes, or until softened. Add the bell pepper and suate for 3 minutes more. Add the zucchini and spinach and saute for 3 minutes more. Season to taste with 1/8 teaspoons each of the salt and pepper. Using a slotted spoon, transfer the mixture to a 2-1/2 quart casserole and set aside.
  • To make the Meat Layer: In a large skillet, heat the oil over moderate heat for 1 minute. Add the onion and celery and saute for 5 minutes, or until the onion is translucent. Add the beef and cook, stirring continuously, for 5 minutes, or until no pink color remains. Stir in the stock, tomato paste, oregano, thyme, and basil. Cook, uncovered, stirring occasionally, for 5 minutes. Season to taste with the 1/8 teaspoon each of the salt and pepper. Remove the pan from the heat. Spoon the meat mixture evenly over the Vegetable Layer.
  • To make the Macaroni-Cheese Layer: Bring a large saucepan of water to a boil over high heat. Cook the macaroni in the boiling water, or until al dente. Drain well, rinse under cold running water, and drain again.
  • Preheat the oven to 350*F. IN a medium-size saucepan over moderate heat, melt the 2 tablespoons of butter. Slowly add the flour and cook, stirring continuously, for 2 minutes, or until a pale straw color. Gradually add the milk, stirring continuously, until the sauce is smooth. Bring to a boil, reduce the heat to low, and simmer, uncovered, for 2 minutes, or until thickened slightly.
  • Remove the pan from the heat and stir in 1-1/4 cups of the cheese. Season to taste with the white pepper. Stir in the macaroni. Spoon the macaroni mixture over the Meat Layer. Sprinkle with the remaining 1/4 cup of cheese.
  • Bake for 25 to 30 minutes, or until the top is golden and the layers are heated through. Remove the casserole from the oven and serve immediately.
