CHERRY COCONUT BARS
Cherry Coconut Bars are the perfect dessert bars with a buttery graham cracker crust, and coconut, vanilla, almond extract, and maraschino cherry topping.

Steps:
- Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
- To a large mixing bowl add the butter, graham cracker crumbs, and brown sugar.
- Stir until well combined, then add in the flour, baking powder, and salt until just combined.
- Press mixture into the bottom of the baking dish.
- To the mixing bowl add the coconut, condensed milk, vanilla, and almond extract and mix well.
- Chop the maraschino cherries and pat dry with paper towels.
- Mix gently into coconut topping and spread mixture over graham cracker crust.
- Bake for 30-40 minutes until slightly browned.
- Cool completely then refrigerate for at least 3 hours before serving.

- In a small bowl, combine the graham cracker crumbs, sugar and butter. Press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for 8-10 minutes or until lightly browned. , Combine coconut and milk; spread over warm crust. Bake for 12-15 minutes or until edges are lightly browned. Cool on a wire rack. , In a large saucepan, combine the brown sugar, cream and butter. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute. Remove from the heat; stir in chocolate chips until melted. Spread over coconut layer. Cool before cutting.

- Preheat oven to 350 degrees. Line a baking sheet with waxed paper; set aside. On a rimmed baking sheet, toast coconut until golden, 6 to 8 minutes.
- Meanwhile, place chocolate in a medium bowl set over (not in) a saucepan of simmering water; stir frequently until almost melted. Remove from heat, and stir until completely melted.
- One at a time, dip one short end of each cracker into chocolate, coating about half of cracker. Place on prepared baking sheet; sprinkle chocolate with coconut. Refrigerate until chocolate has hardened, about 10 minutes.
