The easiest chicken "enchiladas" you'll ever make! No mess, easy prep & delicious. Please note: this recipe calls for THAWED flour taquitos. I've never made this using frozen taquitos, so I don't have any idea how to adjust for the frozen cooking time.

16-18 ct pkg thawed flour chicken taquitos or thawed flour chicken & cheese taquitos
10 oz green enchilada sauce, your favorite brand and heat level
4-8 oz sour cream (depending on how much you like sour cream - we just use what's left in the container)
1 c shredded cheese (cheddar or mexican blend)

Steps:

  • 1. Preheat oven to 450°.
  • 2. Stir together green enchilada sauce & sour cream until well combined.
  • 3. Coat the bottom of a 9x9 OR 9x13 baking dish (depending on the number of taquitos you're using) with the sauce; arrange the THAWED taquitos side-by-side in the baking dish in ONE layer.
  • 4. Evenly pour the remaining sauce over the taquitos.
  • 5. Bake for 20-25 minutes or until the sauce is bubbling around the edges of the dish; sprinkle with cheese and bake another 3-5 minutes (or until melted).

These 20-minute lazy enchiladas only take 3 ingredients and 5 minutes of prep work. Perfect for a busy day or a lazy one. You're going to love these taquito enchiladas!

1 box 20 count frozen taquitos, beef or chicken (($4.98))
1 small can enchilada sauce, red or green (($1.68))
8 ounces shredded cheese, Mexican blend, cheddar, or Monterey Jack (($1.98))

Steps:

  • Preheat your oven to 350 degrees F.
  • Grease the inside of a 9x13 baking dish.
  • Lay your frozen taquitos down in the pan so that they all fit in a single layer.
  • Spray the tops of the taquitos with cooking spray.
  • Bake for 10 minutes and remove from oven.
  • Top with the sauce, spreading it evenly over the tops of the taquitos, and then sprinkle the cheese on top.
  • Bake in the oven for an additional 10 min.
  • Serve topped with shredded lettuce, diced tomato, sour cream, cilantro, etc.

1 (14.5 ounce) can mild red enchilada sauce
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Arrange taquitos in the prepared baking dish.
  • Blend enchilada sauce and cream of mushroom soup together in a blender until smooth; pour over taquitos. Sprinkle Cheddar cheese over sauce layer.
  • Place dish on the middle rack in the preheated oven; cook until heated through, about 45 minutes. Cool for 15 minutes before serving.

It was a lazy day and I didn't feel like going to the store, but the family wanted enchiladas. I didn't have any tortillas nor any chicken defrosted so I started looking in my freezer and fridge to see what I could come up with.. That is when I saw the taquitos and a Star was born!

1 can(s) 14.5 oz mild red enchilada sauce
1 can(s) 10.75 oz cream of mushroom soup
8 oz shredded cheddar cheese

Steps:

  • 1. Preheat oven to 375 degrees F (190 degrees C).
  • 2. Grease a 9x13-inch baking dish.
  • 3. Arrange taquitos in the prepared baking dish.
  • 4. Blend enchilada sauce and cream of mushroom soup together smooth; Pour over taquitos
  • 5. Sprinkle Cheddar cheese over sauce layer.
  • 6. Place dish on the middle rack in the preheated oven; cook until heated through, about 45 minutes. Cool for 15 minutes before serving.

1/4 cup all-purpose flour
2-1/2 cups chicken broth
1 teaspoon dried coriander
1 can (4 ounces) chopped green chiles, divided
2 cups cubed cooked chicken
1 cup shredded Monterey Jack cheese
8 flour tortillas (8 inches), warmed
1 cup shredded cheddar cheese

Steps:

  • Melt butter in a large saucepan. Stir in flour until smooth. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in coriander and half of the chiles. In a large bowl, combine the chicken, Monterey Jack cheese and remaining chilies., Spoon 1/3 cup chicken mixture onto each tortilla; roll up. Place seam side down in an ungreased 13x9-in. baking dish. Pour sauce over enchiladas. Sprinkle with cheddar cheese. , Bake, uncovered, at 375° for 15-18 minutes or until heated through and cheese is melted.

1 (10 ounce) can chicken chunks, drained
¼ cup shredded Cheddar cheese
5 drops hot pepper sauce (such as Tabasco®)
12 corn tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Combine the chicken and cheese in a bowl; stir in the hot pepper sauce. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.
  • Spread about 1 heaping tablespoon of the chicken over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven.

My daughter, Jessica, discovered this dish when she had to make and take a Mexican dish to her Spanish class. We tried it out and found that the whole family enjoyed it. We like to serve it with refried beans and cheese. It's a quick and easy school night meal.

12 ounces chicken taquitos
1 (19 ounce) can red enchilada sauce
1 (12 ounce) can evaporated milk or 12 ounces cream
1 1/2 cups sour cream
2 cups monterey jack cheese

Steps:

  • Heat up the taquitos according to the instructions on the package and keep warm.
  • Combine enchilada sauce and milk in a heavy bottom sauce pan and bring to a simmer.
  • Stir in sour cream and keep warm.
  • In a casserole dish pour enough sauce on bottom to just cover the bottom of the casserole dish.
  • Arrange taquitos on top of sauce.
  • Pour remaining sauce over the taquitos.
  • Sprinkle cheese over each taquito and melt in a preheated 375 degree oven for 1-2 minutes.
  • Optional-Garnish each serving with a teaspoon of sour cream, an avocado slice, chopped green onions, fresh diced tomatoes, and black olives.
  • Note-We like to use El Monterey Mexican Grill Chicken Taquitos.

  • Place a few spoonfuls of the enchilada sauce in the bottom of an 8x8-inch baking dish and spread to evenly cover the bottom of the dish. Lay 2 tortillas over the sauce, cutting them in half as needed to make them fit evenly.
  • Put ⅓ of the chicken on top of the tortillas, followed by ¼ of the cheese and ¼ of the remaining enchilada sauce. Repeat the layers twice more: tortillas, chicken, cheese, sauce. For the top layer, use the last 2 tortillas, the rest of the sauce, and finally the remaining cheese on top.
