4-INGREDIENT BUCKEYES
So-called because of the candy's resemblance of the nut of a Buckeye tree, which was thought to look like a buck's eye (deer's eye). Buckeyes are poisonous nuts, so these peanut butter and chocolate treats are a better choice for eating!

Steps:
- Line 2-3 large cookie pans with wax paper.
- Beat the peanut butter and butter in a large bowl until creamy.
- Stir in powdered sugar and then beat until smooth.
- Shape into 1" balls and place on the wax paper-lined pans.
- Freeze for at least one hour.
- Melt dipping chocolate/chocolate bark, per package instructions.
- Use a toothpick to dip the peanut butter balls into chocolate.
- Return to wax paper-lined pans and smooth out the top to remove the toothpick hole.
- Refrigerate until set.

Steps:
- 1. In a large bowl, combine the peanut butter, coconut flour, rice malt syrup and optional pinch of salt. Use a spoon to stir everything together until a thick "dough" forms. (*Note: You may need a dash more syrup or peanut butter if there a still dry flour lumps)
- 2. Divide the dough it 8 equal portions and roll into a truffle ball shape. Freeze for 30 minutes
- 3. Melt the chocolate and dip the truffles in the chocolate, leaving the top bare like a buckeye candy. (This can be a bit difficult so you can even use a skewer to hold the truffle)
- *Storage tips: in an airtight container in the fridge for up to 2 weeks, or in the freezer for months

- In a large bowl, mix together the peanut butter, coconut flour, and maple syrup until it becomes a thick batter. If you need an extra sprinkle of coconut flour, add it in until the dough becomes thick enough to roll into balls.
- Use a cookie scoop or your hands to form 1-tbsp sized peanut butter balls and place them onto a parchment lined cookie sheet.
- When ready to dip the peanut butter balls into chocolate, melt the chocolate in a microwave safe bowl before removing the peanut butter balls from the freezer.
